Steps:
- Thaw puff pastry.
- Mix cream cheese and egg yolks until smooth and creamy and fold in half of cheese. Season with salt and pepper.
- On a work surface, roll out puff pastry into two rectangles, each about 10 x 80 cm (approximately 4 x 30 inches). Cut one rectangle into strips, each about 3 x 10 cm (approximately 1 x 4 inches). Brush strips with beaten egg and place evenly on top of remaining sheet of puff pastry and carefully press into place. Spread filling on top and roll up into a cylinder. Cut into about 6 rolls and place on a baking sheet lined with parchment paper. Brush with remaining egg and bake in preheated oven at 200°C (approximately 400°F) for about 25 minutes until golden brown. Remove from oven and dip ends in remaining cheese and allow to cool. To serve, arrange on plate.

- Heat the oven to 400°F.
- Sprinkle the flour on the work surface. Unfold the pastry sheet on the work surface. Roll the pastry sheet into a 10-inch square. Cut into 4 (5-inch) squares.
- Heat the oil in a 10-inch skillet over medium heat. Add the onion and cook until tender, stirring occasionally. Remove the onion from the skillet.
- Increase the heat to medium-high. Add the sandwich steaks to the skillet and cook for 3 minutes or until cooked through, stirring occasionally.
- Spoon one-fourth of the onion and one-fourth of the sandwich steaks on the bottom third of each pastry square. Top each with 1 slice cheese. Fold 2 opposite sides over the filling. Roll up like a jelly roll. Brush the pastries with the egg. Place the pastries onto a baking sheet.
- Bake for 20 minutes or until the pastries are golden brown. Let the pastries cool on the baking sheet on a wire rack for 10 minutes. Cut the pastries in half diagonally to serve.

Steps:
- Position knife blade in food processor. Add flour and butter and pulse 4 or 5 timestil mixture resembles coarse crumbs.
- Add sour cream and egg.
- Process til dough forms a ball and leaves sides of bowl.
- Divide in half, wrap with plastic wrap, and chill 6-8 hours.
- Roll out each ball of pastry on a lightly floured surface to an 1/8" thickness.
- Cut pastry into 3" squares.
- Gently press each square into a 1 3/4" muffin pan leaving corners extending beyond edge.
- Spoon 1 teaspoons filling into each prepared shell.
- Fold corners over filling and pinch together at the top.
- Chill 30 minutes.
- Bake at 375º for 20-25 minutes.
- Remove from pan and cool on wire rack.
- Sprinkle with powdered sugar.
- Cheese filling:.
- To make the cheesecake-like filling, beat all ingredients at medium speed til smooth and fluffy.

- To make the pastry, sift the flour into a large bowl, then stir in the mustard powder, cayenne and 1 tsp salt. Grate the butter into the flour, dipping the end of the block in flour from time to time to prevent it from clumping. Stir the flour and butter together using a table knife, then pour in 120ml ice cold water, mix and bring together to form a dough. Flatten the dough into a disc, wrap in cling film and chill in the fridge for 1 hour.
- Meanwhile, make the filling. Cook the potatoes in a pan of salted water until tender, then drain and steam dry for a few mins before mashing and leaving to cool. Melt the butter in a frying pan until foaming. Add the onions and a pinch of salt, and cook, stirring occasionally, over a medium heat until they're completely soft and starting to caramelise. Add to a bowl with the potato. Once cool, stir in the thyme leaves, mustard, cheese and gherkins or pickled onions, and season to taste. Set aside.
- Line a baking tray with baking parchment. On a lightly floured surface, roll the pastry out into a large rectangle around 3mm thick. Cut the pastry into eight rectangles, then divide the filling equally between them, squashing it into a sausage shape down the long length of one side of each rectangle, leaving a 5cm gap at each end. Brush the exposed pastry with a little egg, then fold in the short sides of the rectangle and roll the empty half of pastry over the filling so that it is completely encased. Press the edge to seal it, then crimp the two shorter ends with a fork. Repeat with each roll, then transfer to the lined baking tray and chill in the fridge for 20 mins. Can be frozen at this point.
- Heat oven to 200C/180C fan/gas 6. Take the rolls out of the fridge, brush all over with the beaten egg, then scatter with the nigella seeds. Bake on the top shelf of the oven for 40 mins or until deeply golden and crisp. Serve hot or cold with your choice of sauce.
