These crisp and chewy one-bowl oatmeal breakfast bars are packed with delicious ingredients, and are super easy to make. They're perfect for an easy meal on the go, or a filling afternoon snack!

Steps:
- Preheat the oven to 350.
- In a medium bowl, cream the butter and brown sugar until light and fluffy. Add the egg and mix until combined. Add the flour, oats, and salt, and mix until combined. Fold in the prunes, chocolate chips, and shredded coconut.
- Spread the mixture in a greased or parchment lined 9 x 9 baking dish. Bake 24-28 minutes, or until lightly browned on top. Let cool before slicing.

Steps:
- . Chop the prunes and then combine them with the 1cup sugar, 1teaspoon cinnamon and 1cup water. Cook until thickened, about 8 minutes on medium stirring constantly to prevent burning. Cool thoroughly.
- Cream the 1/2 cup softened butter and 1 cup brown sugar.
- Add the 1 3/4 cups flour, 1 1/2 cups oatmeal, 1 teaspoon salt and 1teaspoon of the cinnamon. Blend until crumbly.
- Put 1/2 the amount into a buttered 13 X 9 X 2 pan. Press down in pan.
- Spread the cooled filling over the bottom crust.
- Sprinkle the remaing crumb mixture over the filling, pressing down lightly.
- Bake for 27 minutes at 350* until light brown. Cut into squares when cooled. May be stored in the refrigerator . Let come to room temperature before serving.

Except for special occasions I like to try to serve my family healthy food, including desserts. This one is delicious and actually has some very good nutritional value.

Steps:
- Combine the prunes, sugar, lemon rind and lemon juice in a small pt.
- Cook, stirring over low heat until thick.
- Cool completely.
- blend remaining ingredients until crumbly.
- Pack half the oat mixture firmly into the bottom of a greased 8 inch square pan.
- Spread with prunes and then top with remaining oat mixture.
- Pat lightly into the pan.
- Bake at 350 for 35 minutes.
- Let cool before cutting.
APRICOT OAT BARS

- Put an oven rack in the center of the oven. Preheat the oven to 350 degrees F. Spray a 9 by 13 by 2-inch metal baking dish with vegetable oil cooking spray. Line the bottom and sides of the pan with parchment paper. Spray the parchment paper with vegetable oil cooking spray and set aside.
- Filling: In a small bowl, mix together the jam and the apricots. Set aside.
- Crust: In a large bowl, whisk together the flour, sugar, cinnamon, salt and baking soda. Stir in the oats and walnuts. Add the butter, egg and vanilla and stir until incorporated.
- Using a fork or clean fingers, lightly press half of the crust mixture onto the bottom of the prepared pan. Using a spatula, spread the filling over the crust leaving a 1/2-inch border around the edge of the pan. Cover the filling with the remaining crust mixture and gently press to flatten. Bake until light golden, about 30 to 35 minutes. Cool for 1 hour. Cut into bars and store in an airtight container for up to 3 days.

OATMEAL CREAM CHEESE BUTTERSCOTCH BARS

- Preheat the oven to 350 degrees F. Drape a 9 by 13-inch pan with overlapping pieces of aluminum foil, creating handles for easy removal. Butter the paper, and reserve.
- In a food processor add the flour, oats and brown sugar and pulse to combine. Add the 2 sticks of butter, the cinnamon and the butterscotch chips. Pulse, pulse, pulse until the mixture forms clumps when pressed between your fingers. Transfer the mixture to a large bowl. Press half of the mixture into the bottom of the prepared pan in an even layer, reserve the other half. Bake in the preheated oven just until slightly golden and set, about 12 to 15 minutes. Remove from the oven and cool completely.
- Beat together the cream cheese, condensed milk, lemon zest and juice and vanilla in an electric stand mixer fitted with a paddle, or with an electric hand mixer until no lumps of cream cheese remain. Spread evenly over the baked and cooled oatmeal mixture. Sprinkle the remaining half of the oatmeal mixture over the cream cheese. Bake until the top is golden, about 40 minutes.
- Cool and chill before cutting. Run a knife around the edge of the pan, and using the foil handles, transfer the bars to a cutting board. Cut into 2-inch squares with a sharp knife and serve.
- Call yourself a superstar!!!
- Cook's Note: For a delicious and healthy variation of this recipe, try replacing the butterscotch chips with tasty dried cranberries.

- Preheat oven to 350°. In a small saucepan, combine dates, water and sugar. Bring to a boil. Reduce heat; simmer, uncovered, until thickened and dates are tender, stirring constantly, 7-9 minutes.
