EASY PROSCIUTTO-WRAPPED SHRIMP
This prosciutto-wrapped shrimp recipe is easy to make with just a few ingredients, and it works perfectly as an appetizer or as a topper for salads or pasta.

Steps:
- Preheat oven to 425°F.
- On a cutting board, slice the prosciutto into three long strips and then slice each of those strips in half. (You should have six long strips that are approximately 1-inch by 4-5 inches.) Wrap a piece of prosciutto around the body of a piece of shrimp, and lay it seam-side-down on a parchment-covered baking sheet. Repeat with the remaining shrimp and prosciutto.
- Brush the melted butter onto the top of each shrimp. Season with a few generous pinches of salt and pepper.
- Bake for 8-10 minutes, or until the shrimp are pink and opaque and the prosciutto is slightly crispy. Serve warm, with cocktail forks if desired.
- Whisk all ingredients together until combined. Season with extra salt and pepper if desired, and serve warm.
MELON WRAPPED IN PROSCIUTTO

- Peel and slice the gala melon into 1/2-inch semi-circle slices. Wrap a slice of prosciutto around each wedge and arrange on a platter.
PROSCIUTTO-WRAPPED CROSTINI WITH MELON SALSA CRUDO

- Preheat the oven to 375 degrees F.
- Cut the loaf of bread in half crosswise, then cut each half lengthwise into 1-inch thick slices. Lay the slices in a single layer on baking sheets. Generously drizzle the top side of each slice with olive oil and season with salt and pepper to taste. Sprinkle the Parmesan over the slices. Cook in the oven until golden brown, about 10 to 12 minutes. Set aside.
- Marinate the onions in the vinegar for 5 minutes. While the onion is marinating, peel, seed and dice the melon and place in a bowl. Add the diced melon to the onions, season with salt and stir to blend together. Add the minced parsley and stir to combine.
- Wrap the end of each crostini with a piece of prosciutto. Arrange on a platter and spoon a tablespoon of melon salsa on each and serve. Serve remaining salsa on the side.

- 1. Marinate the shrimp in 3 tablespoons of lime juice while you make the tropical mango salsa.
- 2. In a bowl combine the mango, papaya, jalepenos, onions,cilantro, red peppers, and lime juice
- 3. Take one slice of prosciutto, place a slice of melon in the middle, put a shrimp on top of that, put a teaspoon of cream cheese on top of shrimp.
- 4. Wrap each end of prosciutto over filling, cover and refridgerate until ready to serve.
- 5. Serve the prosciutto wrapped shrimp with the mango salsa.

- Heat a grill or grill pan to medium.
- Combine the EVOO, scallion whites, chile and lemon juice in a medium bowl and season with salt and pepper. Add the shrimp and toss to coat. Wrap each shrimp with a slice of prosciutto and thread onto a skewer.

- Combine oil, vinegar, basil and garlic in a bowl. Add the shrimp and marinate overnight in the refrigerator. Preheat broiler.
- Drain shrimp. Cut each piece of prosciutto in half, lengthwise and wrap around each shrimp, securing well with a toothpick.
- Saute the shrimp in a non-stick pan, that has been heated and lightly brushed with olive oil. Cook only to seal the prosciutto to shrimp. Place each piece on broiler pan and grill under broiler for 2 minutes on each side. Careful not to burn the prosciutto or overcook the shrimp.
