PASTA PRIMAVERA WITH PROCIUTTO, ASPARAGUS, AND CARROTS

Pasta Primavera With Prociutto, Asparagus, and Carrots image

Adapted from "In My Kitchen" by Ted Allen. Other vegetables could be added, and the prosciutto could be omitted. It's all about the sweet vegetables, rich cream, and mustard.

Provided by zeldaz51

Categories     Weeknight

Time 30m

Yield 8 serving(s)

Number Of Ingredients 11

kosher salt
1 lb penne or 1 lb farfalle pasta
1 lb medium asparagus spear, stems trimmed, cut into 1-1/2-inch lengths
1 large carrot, cut into matchsticks
1 tablespoon extra-virgin olive oil
8 ounces sliced prosciutto, cut into bite-size pieces
1 large shallot, sliced 1/8 inch thick
1 garlic clove, minced
1/2 teaspoon red pepper flakes
1 cup heavy cream
1 cup chicken stock, preferably homemade or 1 cup canned low sodium chicken broth

Steps:

  • Bring a pot of water to a boil, salt it generously, and start cooking the pasta. Three minutes before the pasta is done, add the asparagus and carrots and cook for 3 minutes (for example, for a 9 minute penne, add the veggies at the 6 minute mark, or for a 14 minute penne, add them at the 11 minute mark). Check the pasta and vegetables to make sure they're cooked through but still have texture, then drain.
  • While the pasta is cooking, heat the olive oil in a large sauté pan over medium heat, add the ham and shallot, and cook until lightly browned, 3 minutes or so. Add the garlic and pepper flakes and cook until fragrant, 1 minute. Add the cream, stock, and mustard, and simmer for a minute or two, scraping up any brown bits.
  • Add the pasta and vegetables to the pan. Toss and cook for another 2 minutes, until cooked through and the pasta is coated. Taste for seasoning, add salt if necessary, and serve immediately in warm bowls with grated Parmesan available.

Categories     Vegetable

Time 40m

Yield 4 serving(s)

Number Of Ingredients 17

1/2 lb asparagus
1/4 cup unsalted butter
1/2 lb button mushroom, sliced
1/4 cup prosciutto, slivered
1 medium carrot, peeled and thinly sliced
1 medium zucchini, diced
8 ounces fettuccine pasta, dried (or use your favorite fresh)
3 green onions, sliced (including tops)
1/2 cup frozen baby peas, thawed
1 teaspoon dried basil
1/2 teaspoon salt
1/8 teaspoon ground nutmeg
1/8 teaspoon white pepper
1 cup whipping cream
1/4 cup parmesan cheese, grated
fresh parsley, chopped (for garnish)
parmesan cheese, grated (for serving)

Steps:

  • Snap of tough ends of the asparagus. Cut spears diagonally into 1-inch lengths, leaving tips whole.
  • Bring a large pot of water to a boil and cook pasta according to package directions for al dente; drain well.
  • Meanwhile, in a large frying pan over medium high heat, melt butter.
  • Add mushrooms, prosciutto, asparagus, carrot and zucchini. Cook, stirring occasionally, for 3 minutes. Cover pan and cook for 1 more minute.
  • To the vegetable mix, add green onions, peas, basil, salt, nutmeg, white pepper and cream. Increase heat to high and cook until liquid boils and forms large, shiny bubbles.
  • Return drained pasta to pan it was cooked in and pour sauce over pasta; lift and mix gently so pasta is coated with sauce thoroughly. Add the 1/4 cup Parmesan and mix gently again.
  • Turn into a warm bowl or large, deep platter and serve at once, garnished with parsley and additional Parmesan.

PASTA PRIMAVERA WITH ASPARAGUS AND PEAS

Pasta Primavera With Asparagus and Peas image

This simple pasta primavera uses a combination of the earliest vegetables available in spring - asparagus, peas and spring onions - making it a true celebration of the season. The sauce works best with springy egg pasta, preferably homemade or a good purchased brand. Make sure not to overcook it; you need the chewy bite to stand up to the gently cooked vegetables. If you can't find good fresh English peas, you can substitute frozen peas, but don't add them until the last minute of cooking.

Time 20m

Yield 4 servings

Number Of Ingredients 13

1/4 pound sugar snap peas, stems trimmed
1/2 pound asparagus, ends snapped
2 tablespoons unsalted butter
3/4 cup fresh English peas
1/4 cup thinly sliced spring onion, white part only (or use shallot)
2 garlic cloves, finely chopped
1/2 teaspoon fine sea salt, more as needed
Black pepper, more as needed
12 ounces fettuccine or tagliatelle, preferably fresh (see recipe)
2/3 cup grated Parmigiano-Reggiano, at room temperature
1/2 cup crème fraîche or whole milk Greek yogurt, at room temperature
3 tablespoons finely chopped parsley
1 tablespoon finely chopped tarragon

Steps:

  • Bring a large pot of heavily salted water to a boil over medium-high heat.
  • While the water is coming to a boil, slice snap peas and asparagus stems into 1/4-inch-thick pieces; leave asparagus tips whole.
  • Melt butter in a large skillet over medium-high heat. Add snap peas, asparagus, English peas and onion. Cook until vegetables are barely tender (but not too soft or mushy), 3 to 4 minutes. Stir in garlic and cook 1 minute more. Season with salt and pepper; set aside.
  • Drop pasta into boiling water and cook until al dente (1 to 3 minutes for fresh pasta, more for dried pasta). Drain well and transfer pasta to a large bowl. Immediately toss pasta with vegetables, Parmigiano-Reggiano, crème fraîche and herbs. Season generously with salt and pepper, if needed.

  • Using a Y-shaped vegetable peeler, shave asparagus into very thin ribbons to equal 1 cup. Shave the purple carrots (from multicolored carrots) into very thin ribbons to equal 1/2 cup. Shave remaining carrots into very thin ribbons to equal 1/2 cup. (Reserve remaining asparagus and carrots for another use.) Set aside.
  • Cook pasta in a pot according to master technique (until very al dente, about 3 minutes shorter than package directions call for).
  • While pasta cooks, place purple carrot ribbons in a fine wire-mesh strainer. Lower strainer into boiling water with pasta, and cook carrots until tender, about 20 seconds. Remove strainer; drain carrots, and set aside. Melt 1 tablespoon butter in a large skillet over medium. Add garlic; cook, stirring often, until fragrant, about 1 minute. Add 1/4 cup water; let come to a simmer. Gradually whisk in 5 tablespoons butter, one piece at a time, waiting until butter is nearly melted before adding the next piece. Stir in salt.
  • Using tongs, lift cooked pasta from pot and transfer to skillet, reserving cooking liquid in pot. Increase heat under skillet to medium-high. Add snap peas, asparagus ribbons, uncooked carrot ribbons (do not add purple carrot ribbons), and remaining 6 tablespoons butter; cook, stirring and shaking skillet constantly, adding 1/4 cup reserved cooking liquid at a time, until a creamy sauce forms and clings to pasta, 2 to 3 minutes.
