SPRING-THYME CHICKEN STEW

Steps:
- Place potatoes, onion and carrots in a 3-qt. slow cooker. Sprinkle with flour, garlic, lemon zest, thyme, salt and pepper; toss to coat. Place chicken over top. Add broth and bay leaves., Cook, covered, on low 7-9 hours or until chicken and vegetables are tender. Remove bay leaves. Sprinkle servings with parsley.

- Place potatoes, onion and carrots in a 6-qt. electric pressure cooker. Top with garlic, lemon zest, thyme, salt and pepper. Place chicken over top. Add 1-3/4 cups broth and bay leaves., Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 5 minutes. Quick-release pressure. A thermometer inserted in chicken should read at least 170°. , Remove chicken; keep warm. Discard bay leaves. In a small bowl, mix flour and remaining 1/4 cup broth until smooth; stir into pressure cooker. Select saute setting and adjust for low heat. Simmer, stirring constantly, until slightly thickened, 1-2 minutes. Return chicken to pressure cooker; heat through. Sprinkle servings with parsley.

PRESSURE COOKER CREAMY PESTO CHICKEN STEW

- Combine Alfredo sauce and pesto in medium-sized bowl. Set aside., Select saute setting on a 6-qt. electric pressure cooker and adjust for medium heat; add oil. When oil is hot, add chicken; season with salt and pepper. Cook and stir until lightly browned, 3-4 minutes. Add onion; cook and stir until tender, 2-3 minutes. Press cancel., Layer mushrooms, broccoli, cauliflower and reserved sauce in pressure cooker. Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 10 minutes. Let pressure release naturally for 3 minutes; quick-release any remaining pressure., Stir to combine. If desired, top with Parmesan and basil leaves.

- Set pressure cooker to “brown/saute”, add olive oil and bacon. Cook until bacon is cooked and lightly crisp, about 4 minutes. Remove from pot and set aside.
- Season chicken with ½ tsp salt, sear chicken in batches, for 2 minutes per side, until lightly browned, a total of 4 minutes. Remove from pot and set aside, continue with the remaining chicken. You will likely have three batches to brown.
- Add onions, garlic and remaining salt. Cook for 3 minutes until lightly browned and golden. Stir in tomato paste, stir and caramelize tomato paste for about a minute until it is a deep red. - Season the chicken with 2 teaspoons salt. Heat 1 teaspoon of vegetable oil over medium-high heat in the pressure cooker pot until shimmering. Brown the chicken in 2 batches, three pieces in each batch. (Don’t crowd the pot, or the chicken will steam instead of browning.) Sear the chicken for 4 minutes per side, or until well browned, then remove to a bowl and sear the next batch. Once all the chicken is browned, pour off all but 1 tablespoon of the fat in the cooker. (The chicken skin will release a lot of oil into the pot.)
- Add the onion, celery, sliced carrots, tomato paste, and thyme to the pot. Sprinkle with 1/2 teaspoon salt. Sauté for five minutes, or until the onions are softened. Add the white wine to the pot, bring to a simmer, and scrape the bottom of the pot to loosen any browned bits. Simmer the wine until reduced by half – about 3 minutes.
- Stir in the chicken stock, then add the chicken thighs and any chicken juices from the bowl. Pour the tomatoes on top, but don’t stir. Put a steamer basket on top of everything in the pot – don’t worry if it’s a little submerged, it will be fine – and put the potatoes and carrots in the steamer basket.
- Lock the lid on the pressure cooker, bring it up to high pressure, and cook at high pressure for 30 minutes in an electric PC, 25 minutes in a stovetop PC. Let the pressure to come down naturally for 15 minutes, then quick release any pressure left in the pot.
