Here's a regional favorite I grew to love after moving to the South, pressure-cooker black-eyed peas. You'll never want to eat canned black-eyed peas again! 1 package (16 ounces) dried black-eyed peas
4 cups water
1 cup cubed fully cooked ham
1 medium onion, finely chopped
3 garlic cloves, minced
2 teaspoons seasoned salt
1 teaspoon pepper
Thinly sliced green onions, optional

Steps:

  • Rinse and sort black-eyed peas. Transfer to a 6-qt. electric pressure cooker. Stir in water, ham, onion, garlic, seasoned salt and pepper. Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 18 minutes. Let pressure release naturally for 10 minutes; quick-release any remaining pressure., Serve with a slotted spoon. If desired, sprinkle with green onions. , Freeze option: Freeze cooled pea mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little water if necessary.

2 pounds dried black-eyed peas, sorted and rinsed
1 large smoked turkey leg
1 onion, chopped
2 cloves garlic, chopped, or to taste
olive oil
1 teaspoon ground black pepper, or to taste

Steps:

  • Place peas and turkey leg into a pressure cooker. Stir in onion, garlic, olive oil, pepper, and water to cover. Bring to a simmer. Close and lock lid.
  • Adjust temperature until regulator is gently rocking. Cook at high pressure for 15 to 20 minutes. Let pressure release naturally according to manufacturer's instructions for at least 5 minutes; open lid and add more water if needed. Replace lid and cook until beans are tender, 5 to 15 minutes more. Let pressure cooker cool for about 5 minutes before opening. Remove turkey bone.

Southern Black-eyed Peas image

Classic recipe for Southern black-eyed peas made w/ smoked turkey. These are creamy, smoky, and well-seasoned like a pro & perfect for NYE or Sunday dinner.

1 pound dried black-eyed peas (fresh can be substituted)
2 tbsp olive oil
2 medium smoked turkey legs
1 large yellow onion (diced)
4 cloves garlic (diced)
3 celery stalks (diced)
1 tsp kosher salt
2 tsp smoked sweet paprika
1 tsp black pepper
1/4 tsp cayenne pepper
1 tsp garlic powder
1 tsp dried oregano
1 tsp dried thyme
4 cups chicken stock
2 bay leaves

Steps:

  • If using dried black-eyed peas, put them in a large pot and cover with about 4 inches of water. Soak the peas overnight, then drain the water (reserve 2 cups of the liquid for later) and rinse. If you're pressed for time, boil the peas for 2-3 minutes, remove pot from heat and let soak for an hour.
  • Pre-mix the dry spices together in a medium bowl.
  • Carve one of the turkey legs, removing as much of the meat from the bone as possible. Place turkey pieces into a food processor and pulse to a grind. Set aside.
  • Heat the oil in a large pot over medium heat. Add the whole smoked turkey leg and saute for 1-2 minutes per side. Remove the turkey and set aside.
  • Add onion, celery and garlic to the pot and cook, stirring, about 3 minutes. Add a pinch or two of the seasoning to the vegetables as you saute. Add in the ground turkey.
  • Add 1/2 the spices and cook until the entire mixture is coated with the spices, about 2 minutes. Add the peas and mix well.
  • Pour in the stock and reserved water if using, and drop in the bay leaves. Add the turkey leg back to the pot along with more seasoning and bay leaves.
  • Bring everything to a boil, then reduce to a simmer until the peas are very soft, about 1 to 1 1/2 hours.
  • Taste for seasonings, and add more if desired. Discard the bay leaves, then transfer the black-eyed peas to a serving bowl.

4 cups water
1 pound dried field peas ((or cow peas or black-eyed peas))
1 tablespoon minced garlic
1 medium onion ((chopped))
1 teaspoon celery salt
1/4 teaspoon red pepper flakes
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon granulated sugar
1 teaspoon dried thyme
4 cups turkey broth or chicken broth

Steps:

  • Place the frozen turkey legs and water into the instant pot and set the valve to seal.
  • Cook at pressure on high for 30 minutes, then use the quick release.
  • Add remaining ingredients to the instant pot with the turkey legs and water and set the valve to seal.
  • Cook at pressure on high for 45 minutes and use the natural release (let it depressurize without opening the valve).
  • Remove turkey meat from the bones and add back to the peas.

2 pounds collard greens (3 bundles)
1 turkey leg (pre-cooked/smoked (this ingredient is optional))
1 cup yellow onion (diced)
2 cups tomatoes (diced)
4 cups chicken stock (use vegetable stock to make vegan and vegetarian-friendly)
1 tablespoon apple cider vinegar
3 tablespoons Worcestershire sauce
2 tablespoons honey
1 tablespoon hot sauce (or sriracha sauce)
2 cloves garlic (minced)
½ teaspoon Old Bay seasoning (or Cajun or Creole seasoning)
1 teaspoon red pepper flakes
1 tablespoon salt
1 teaspoon black pepper

Steps:

  • Clean the collard greens and cut off the stems.
  • Then roughly chop the leaves in half through the midline and then into bite-sized pieces.
  • Open the Instant Pot lid and add the wet ingredients (chicken stock, vinegar, Worcestershire sauce, honey, and hot sauce to the stainless-steel inner pot.
  • Next, add the onion, tomatoes, garlic, Old Bay or Cajun seasoning, red pepper flakes, salt, pepper, and stir to combine the ingredients.
  • Finally, add the collard greens, followed by the cooked turkey leg.
  • Press down to sink the greens as much as you can into the liquid broth.
  • Close the Instant Pot lid (make sure the valve is up - in the position for sealing) and pressure cook on high for 15 minutes.
  • When the cooking time is finished, allow a natural pressure release for at least 15 minutes.
  • To open the Instant Pot lid, move the valve to 'venting' and manually release any remaining pressure, if applicable.
  • Serve Black folks' soul food collard greens right away and enjoy!
