THAI LIME SHRIMP & NOODLES

1 cup minced fresh basil
3 tablespoons lime juice
4 teaspoons Thai red chili paste
1 garlic clove, minced
1 teaspoon minced fresh gingerroot
1-1/2 pounds uncooked shrimp (26-30 per pound), peeled and deveined
12 ounces uncooked angel hair pasta
4 teaspoons olive oil, divided
1 can (14-1/2 ounces) chicken broth
1 can (13.66 ounces) coconut milk
1 teaspoon salt
1 tablespoon cornstarch
2 tablespoons cold water
2 tablespoons grated lime zest

Steps:

  • Place the first five ingredients in a blender; cover and process until blended. Remove 1 tablespoon mixture; toss with shrimp., Cook pasta according to package directions. Meanwhile, in a large nonstick skillet, heat 2 teaspoons oil over medium-high heat. Add half of the shrimp mixture; stir-fry 2-4 minutes or until shrimp turn pink. Remove from pan; keep warm. Repeat with remaining oil and shrimp mixture., Add broth, coconut milk, salt and remaining basil mixture to same pan. In a small bowl, mix cornstarch and water until smooth. Stir into broth mixture. Bring to a boil; cook and stir 1-2 minutes or until slightly thickened. Stir in lime zest., Drain pasta; add pasta and shrimp to sauce, tossing to coat.

These spicy Lime Shrimp Dragon Noodles are a fast, easy, and inexpensive alternative to take out. This version features tender shrimp and fresh lime.

1/2 lb frozen peeled & deveined shrimp (51/70 size) ($3.00)
2 packs (3 oz. each) ramen noodles ($0.50)
2 Tbsp sriracha ( $0.18)
2 Tbsp soy sauce ($0.10)
2 Tbsp brown sugar ($0.08)
1 lime ($0.50)
2 Tbsp butter ($0.18)
2 cloves garlic ($0.16)
2 green onions ($0.17)
Handful fresh cilantro ($0.10)

Steps:

  • Place the shrimp in a colander and rinse with cool water until thawed. Let the shrimp drain until ready to use.
  • In a small bowl stir together the sriracha, soy sauce, brown sugar, and about 1 Tbsp juice from the lime. Set the sauce aside.
  • Fill a medium sauce pot with water, place a lid on top, and bring to a boil over high heat. Once boiling, add the ramen noodles (without the flavoring packet) and continue to boil until the noodles are tender. Drain the noodles in a colander (if using the same colander for the shrimp, make sure to wash it with soap and water first).
  • While waiting for the water to boil, mince two cloves of garlic. Add the butter and garlic to a large skillet and sauté over medium heat until the garlic is soft (about one minute). Add the shrimp and continue to sauté until the shrimp turn pink and opaque (about 3-5 minutes). Remove the skillet from the heat.
  • Once the noodles have drained, add them to the skillet with the shrimp, then pour the prepared sauce over top. Toss the noodles in the sauce until everything is coated in sauce. Top the dragon noodles with sliced green onion, fresh cilantro leaves, and a squeeze of lime.

200g dried egg noodles
2 tsp vegetable oil
25g ginger , finely chopped or grated
3 garlic cloves , finely chopped
2 red chillies , finely chopped
200g frozen peas
300g peeled raw king prawns
2 eggs , lightly beaten
2 tbsp reduced-salt soy sauce
2 limes , 1 juiced, 1 cut into wedges
6 spring onions , sliced
handful chopped coriander , to serve

Steps:

  • Cook the noodles following pack instructions, drain, run under cold water and set aside.
  • Heat the oil in a wok or large pan. Add the ginger, garlic and chilli, and cook for 2-3 mins. Add the peas and prawns, and cook for 3 mins until the prawns are pink and cooked through. Pour in the eggs, stirring all the time to scrape the cooked egg from the bottom of the pan.
  • Add the noodles and cook until hot. Stir through the soy, lime juice and spring onions, sprinkle with coriander and serve with the lime wedges.

2nests wholewheat noodles
3 garlic cloves , finely grated
1 tbsp finely grated ginger
handful coriander , leaves and stalks chopped but kept separate
½ - 1 red chilli , thinly sliced and deseeded if you don't like it too hot
1 tbsp tamari
4 spring onions , sliced at an angle
125g sugar snap peas
160g beansprouts , well rinsed
100g cooked prawns
1 lime , zested and juiced
small pack mint leaves (optional)
sesame oil , to serve (optional)

Steps:

  • Put the noodles in a bowl, pour over enough boiling water to cover, set aside to soak for 5 mins, then drain.
  • Meanwhile, pour 450ml water into a wok or wide pan and add the garlic, ginger, coriander stalks, chilli, tamari, spring onions and sugar snaps. Bring to the boil and simmer for 3 mins, then add the noodles and beansprouts to heat through.
  • Stir in the prawns, lime zest and juice, coriander leaves and the mint, if using. Return to the boil until steaming hot and serve in deep bowls, drizzled with a dash of sesame oil, if you like.

200g rice noodles
1 tbsp vegetable oil
1 leek , sliced
200g fine green beans
300g beansprouts
1 garlic clove , crushed
300g peeled raw king prawns
1-2 tbsp soy sauce
2 tsp toasted sesame seeds
pickled ginger

Steps:

  • Pour boiling water over the rice noodles in a large heatproof bowl and leave for 3-5 mins to soften. Meanwhile, in a large wok or frying pan, heat the oil, add the leek and stir-fry over a high heat until starting to soften. Add the green beans and beansprouts, then cook for another 3 mins. Add the garlic and prawns, and cook until the prawns are starting to turn pink. Splash in the soy sauce and heat until everything is cooked through.
  • Tip the contents of the wok onto a large serving dish, drain the rice noodles, add to the serving dish, then toss everything together. Top with the toasted sesame seeds and pickled ginger to serve.

2 nests thin vermicelli rice noodles
1 tbsp light soy sauce
1 tbsp oyster sauce
2 tsp mild curry powder
1 tbsp sesame oil
1 garlic clove , chopped
1 red chilli , thinly sliced (deseeded if you don't like it too hot)
thumb-sized piece ginger , grated
1 medium onion , sliced
1 red pepper or yellow pepper, cut into thin batons
4 spring onions , cut in half lengthways then into batons
8 raw king prawns
1 large egg , beaten
coriander leaves, to serve

Steps:

  • Soak the rice noodles in warm water for 5 mins until softened but still al dente. Drain and set aside.
  • In a small bowl, mix together the soy, oyster sauce and curry powder.
  • In a large wok, add half the oil and fry the garlic, chilli and ginger until golden, about 2 mins. Add the remaining oil, onion, pepper, spring onions, prawns and noodles and stir-fry for a few mins. Push everything to one side, add the egg and scramble. Add the soy sauce mixture, toss again for a few more mins, then remove from the heat. Sprinkle over the coriander leaves before serving.

1 garlic clove , crushed
1 spring onion , finely chopped
2 tsp finely chopped fresh root ginger
1 green chilli , deseeded and finely chopped
juice from ½ lime
100g raw prawns , any size
165ml can coconut milk
100ml chicken or vegetable stock
100g dried egg noodles
chopped coriander , to serve

Steps:

  • Heat the oil in a large pan or wok. When hot, throw in the garlic, spring onion, ginger and green chilli. Cook on a medium heat for 3-4 mins, then squeeze in your lime juice.
  • Stir in the prawns, then add in the coconut milk and stock. Simmer gently for 5 mins on a low heat until the prawns are pink.
  • Meanwhile, cook your egg noodles in a pan of boiling water for 4 mins until soft. Drain, then tip into the laksa pan. Season to taste, then serve in a bowl, topped with coriander.

250g medium egg noodle
1 tbsp sesame oil , plus extra to serve (optional)
1 tbsp groundnut oil
bunch spring onions , thinly sliced lengthways
300g bag beansprout
4 garlic cloves , finely chopped
1 red chilli , finely chopped
400g raw peeled tiger prawn
1 tbsp soft brown sugar
1 tbsp dark soy sauce

Steps:

  • Cook the noodles following pack instructions, then rinse with cold water and drain. Toss with 1 tsp of the sesame oil.
  • Heat 2 tsp of the groundnut oil in a non-stick wok. Stir-fry most of the spring onions and all the beansprouts for a couple of mins until tender. Add the noodles and warm through. Stir through the remaining sesame oil and tip out of the wok onto a serving dish.
  • Carefully wipe out the wok and add the remaining groundnut oil. Toss in the garlic and chilli, and cook for 10 secs. Pop in the prawns and stir-fry for a couple of mins until they have just turned pink. Stir in the sugar and soy, then bubble until the sugar has melted and prawns are cooked through. Spoon on top of the noodles and sprinkle with the remaining spring onions. Add an extra drizzle of sesame oil, if you like.

CHEAT'S CHILLI PRAWN NOODLES



Cheat's chilli prawn noodles image

Versatile, low in fat, and made from storecupboard stables, customise these spicy noodly according to taste - or convenience

2 tbsp olive oil
1 medium onion , roughly chopped
1 heaped tbsp coriander purée (from a tube)
pinch of crushed dried chillies , to taste
400g can chopped tomatoes with garlic
1 heaped tbsp tomato purée
1 tbsp vegetable bouillon powder
half a pack Chinese egg noodles
400g frozen prawns (large North Atlantic ones are tender and juicy)

Steps:

  • Heat the oil in a wok or deep frying pan. Toss in the onion, squeeze in the coriander purée and sprinkle over the crushed chillies to taste (go easy at this stage). Stir fry for 5 minutes until the onion is softened but not browned.
  • Pour in the tomatoes and 11⁄2 canfuls of hot water, add the tomato purée and sprinkle over the bouillon powder. Season well. Bring to a bubble, stirring, then lower the heat a little and let the sauce simmer for about 15 minutes until slightly reduced but still sloppy. While the sauce is simmering, break the noodles into a bowl and pour in enough boiling water to cover. Stir and set aside.
  • When the sauce is ready, drain the noodles and tip them into the sauce with the frozen prawns. Stir well and heat through for 2 minutes only - just to defrost and heat the prawns. Taste for seasoning and add more chilli flakes and a little sugar if you like. Serve in bowls with spoons and pass round chunky hot bread for scooping up the last of the sauce.

200g Thai rice noodle
1 tbsp sesame oil
2 eggs , beaten
1 red chilli , finely chopped
1 thumb-size piece ginger , grated
450g peeled cooked Atlantic prawn
1 tbsp soy sauce
small bunch coriander , roughly chopped
½ small bunch mint , roughly chopped
zest and juice 1 lime
small handful roasted peanuts , chopped

Steps:

  • Cook the noodles following the pack instructions, drain and set aside for later. Heat the oil in a large frying pan and pour in the beaten egg. Swirl around the pan to make a thin omelette, cook for 1-2 mins, then flip over and cook the other side for 1 min. Tip out and slice into thin strips.
  • Add the chilli and ginger to the pan, fry for 1-2 mins then tip in the noodles, prawns and egg. Splash in the soy sauce and stir-fry for 1 min more. Throw in the chopped herbs and pour over the lime juice and zest, then sprinkle over the chopped peanuts and serve.
