An unbelievable rich twist on au gratin potatoes, this casserole develops a caramelized, cheesy, roasted-garlic crust as it bakes. However, this dish does not save well (leftovers tend to separate and become oily), so eat up! Wonderful with a ham dinner.

3 pounds red potatoes, peeled and sliced
6 ounces Gouda cheese, shredded, divided
3 tablespoons butter
5 cloves garlic, minced
1 ½ cups heavy cream
1 teaspoon salt
½ teaspoon black pepper

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Lightly grease a 9x13 inch baking dish.
  • In the prepared dish layer 1/2 of the potatoes, 1/2 of the cheese, then the remaining potatoes.
  • Melt the butter in a small skillet over medium heat. Saute garlic until fragrant and golden brown; pour over potatoes.
  • Combine cream, salt and pepper; pour evenly over potatoes and sprinkle with remaining cheese.
  • Bake in preheated oven for 75 minutes. Serve immediately.

Soupe a L'ail Aux Pommes De Terre - Saffron Flavored Garlic Soup image

Adaption from original recipe in Mastering the Art of French Cooking by Julia Child, Louisette Bertholle and Simone Beck.

Number Of Ingredients 14

1 head garlic
1/4 cup shallot, diced
2 tablespoons butter
7 cups chicken broth
1 cup cream
2 teaspoons salt
1/4 teaspoon sage
1/4 teaspoon thyme
1 small bay leaf
1 teaspoon parsley
3 cups potatoes, peeled, cleaned and diced
1 pinch saffron
6 slices French bread
1 cup gruyere or 1 cup swiss cheese, grated

Steps:

  • Remove excess layers of paper from head of garlic and slice off the very top of head. Place on aluminum foil, drizzle with olive oil, cover and roast at 400 F for about 30 mins or until garlic becomes soft.
  • In a 3 qt sauce pan saute shallots. Combine all the ingredients in the same sauce pan except for the potatoes, cream and saffron. Bring the soup to a boil and simmer for 20 minutes.
  • Use an immersion hand blender to puree the soup (or run through a food processor).
  • Add the potatoes, cream and saffron to the soup and simmer for 20 minutes or until the potatoes are tender.
  • Divide the soup into 6 oven safe bowls and top with french bread. Sprinkle cheese on top of the bread and broil until the cheese begins to brown. Serve while warm.

Grilled Garlic Potatoes image

This grilled potato recipe is so moist and delicious. It goes great with any meal or on its own, but my favorite is with steak. The cheese tops it off perfectly. Add mushrooms and carrots for an excellent variation. Delicious with sour cream on the side.

6 medium baking potatoes, peeled and thinly sliced
1 large white onion, sliced
3 tablespoons butter, sliced
3 cloves garlic, minced
1 teaspoon chopped fresh parsley
salt and pepper to taste
1 cup shredded Cheddar cheese

Steps:

  • Preheat grill for high heat.
  • Arrange potato slices, separated by onion and butter slices, on a large piece of aluminum foil. Top with garlic, and season with parsley, salt, and pepper. Tightly seal potatoes in the foil.
  • Place on the preheated grill, and cook 20 minutes, turning once, or until potatoes are tender.
  • Sprinkle potatoes with Cheddar cheese, reseal foil packets, and continue cooking 5 minutes, until cheese is melted.

These potatoes are peeled and baked whole. They get a nice golden brown and are very soft inside. Potatoes should be medium size. If they are larger, cut them in half. (thanks, Loof, for the tip)

1 tablespoon canola oil
7 tablespoons unsalted butter, cut into pieces
4 yukon gold potatoes, peeled (or other waxy potato)
8 garlic cloves, unpeeled and crushed with the flat edge of knife
1/2 cup chicken broth (or vegie broth)
1 sprig fresh rosemary
salt and pepper, to taste

Steps:

  • Heat oven to 350°F.
  • Put oil and butter in a baking dish. Put dish in oven until butter melts.
  • Add potatoes and garlic and turn to coat all sides of potatoes. Bake 15 to 20 minutes until golden brown.
  • Add the broth and rosemary and bake another 15 minutes, or until the stock is absorbed and potatoes are soft. Season with salt and pepper.
  • Serve. (discard garlic).

5 ounces streaking bacon, thickly cut
2 tablespoons olive oil or 2 tablespoons corn oil
2 lbs red potatoes, thinly sliced
salt and black pepper
4 ounces grated gruyere cheese
3 cloves garlic
1 tablespoon chopped parsley
2 tablespoons double cream

Steps:

  • Wipe out a heavy cast iron deep frypan (cocotte) with an oiled paper.
  • Cut the bacon into 1/2 inch wide strips, and over a mediium heat cook until crisp and golden coloured, then add the oil and a first layer of potatoes.
  • Season well with salt and pepper and cover with a layer of grated cheese.
  • Continue filling the dish with alternate layers of seasoned potatoes and cheese until the dish is full.
  • Sprinkle with finely chopped garlic and parsley.
  • Cover the dish and place over a low heat.
  • Cook for 30 minutes shaking the dish occasionally but do not stir the contents.
  • When the potatoes are tender when pierced with a pointed knife, pour the cream over the surface, replace the lid and cook for a further 3 to 4 minutes.
  • Serve the gratin immediately either in the dish or turned out on to a heated serving dish, crusted side uppermost.
