POTATOES OPRAH
I got this recipe many years ago, but I can't remember if it was on Oprah's TV show or published in a book. Not only is it delicious, but it has Vitamin A from the turnips.

Steps:
- In a 3 quart saucepan bring the vegetables, broth, and 4 Tbsp.butter to a boil. Reduce heat to low, cover and simmer 15 minutes or until vegetables are almost tender. Uncover and cook 8 to 10 minutes more until vegetables are tender and liquid has almost evaporated. Stir occasionally to prevent the vegetables from sticking. Remove from heat and mash. Add the remaining 2 tablespoons butter, and add salt and pepper to taste.

OPRAH'S CLASSIC MASHED POTATOES
I found this in a magazine a while back and have been using it since! Very good . Oprah's Classic Potatoes

Steps:
- Wash potatoes well, leaving the skins on.
- Cut the potatoes in half lengthwise. Place in a kettle and fill with enough water to cover potatoes.
- Bring to a boil, reduce heat and simmer until potatoes are very tender.
- Drain well and add butter while potatoes are hot. Begin to hand mash.
- Add all remaining ingredients and mash well leaving them just slightly lumpy.
- Makes about 10-12 cups or 6 to 8 servings.

- Cut potatoes into 1 ½-inch piece.
- Place potatoes and water to cover in large saucepan.
- Bring to a boil then reduce heat to low.
- Cover and simmer until potatoes are tender about 20 minutes.
- Drain and return potatoes to saucepan.
- Combine evaporated milk and broth in microwave-proof bowl and microwave on high for 1 minute.
- Add to potatoes and mash until creamy but slightly lumpy.
- Stir in remaining ingredients.
