3 cloves minced garlic
1/2 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon black pepper
3 baking potatoes, cut 1/4 inch thick
1 large sliced onion

Steps:

  • In a large mixing bowl, blend together salad dressing and seasonings.
  • Next, add potatoes and onions and toss until covered.
  • Divide potato mixture evenly among 6 foil packets.
  • Double fold ends of packets to seal but leave enough room for heat to circulate Place packets on heat grill and cook for 25 to 30 minutes.
  • Make sure lid is down while cooking.
  • To cook in oven, Preheat oven to 425 degrees and cook for 40 to 45 minutes.

Steps:

  • Scrub potato and make 4 slits almost through to bottom.
  • Slice onion into 4 slices to fit into slits in potato.
  • Dot with butter or margarine.
  • Sprinkle with salt and pepper to taste.
  • Drizzle olive oil over all.
  • Wrap tightly in foil, as if to freeze.
  • Place package on rack in BBq and close the lid.
  • (Can also be done in the oven- 400f degrees for 1 hour or until potatoes are soft).
  • In a hot BBq they should be done within an hour, depends on what else you are BBqing.
  • Open packages, adjust seasoning, serve in opened foil.
  • Repeat process for as many potatoes as needed

1 ½ tablespoons butter
6 medium unpeeled potatoes, washed and cut into thick slices
1 onion, sliced
1 green bell pepper, cut into long strips
2 teaspoons garlic powder
salt and ground black pepper to taste

Steps:

  • Preheat an outdoor grill for high heat; close cover. Lay out three 18-inch long pieces of aluminum foil on a work surface, dull side facing up.
  • Smear 1/2 tablespoon butter in the middle of the first piece of foil. Add 1/3 of the potato slices, onion, and bell pepper. Sprinkle with 1/3 of the garlic powder; season with salt and pepper. Fold up the edges of the foil over the vegetables to create an almost leak-proof packet, making sure to seal the edges. Repeat with last 2 pieces of foil and the remaining ingredients to make 2 more packets.
  • Reduce the heat of the grill to medium. Place foil packets on the grate; cook until potatoes are tender, 20 to 30 minutes.

4 large potatoes
2 cloves garlic, minced
1 medium onion
1 red bell pepper
1 teaspoon thyme or 1 tablespoon fresh thyme
5/8 ounce package dry onion soup mix (more or less, to your taste)
4 tablespoons butter or 4 tablespoons margarine
salt and pepper

Steps:

  • Pull off two large sheets of heavy duty foil.
  • Attach them together along wide edge, by making a"seam" in the middle (put edges together and fold over at least twice), so that you have one large sheet.
  • Slice potatoes approximately 1/4" thick.
  • (Peel, or not- up to you).
  • Place in center of tin-foil.
  • Slice onions and red pepper and pile on top of potatoes.
  • Sprinkle the minced garlic, soup mix, thyme, and salt and pepper over the piled veggies.
  • Dot with cubes of butter.
  • Wrap tightly in the tin-foil, and cook on the grill about 30-45 minutes, or until potatoes are tender.
  • (You may want to place foil packet on top of one more sheet of foil just to make sure it doesn't burn- depends on how hot the grill is!).
  • You can also bake in the oven at 375 for 45 minutes.
  • (Place on a jelly roll pan or cookie sheet for support).

Steps:

  • First, preheat the grill or oven to 450ºF.
  • Run potatoes under warm water and use a scrubby to remove any dirt or residue and then and pat dry with a towel to dry.
  • Drizzle potatoes with olive oil and use your hands to massage the oil into the skin. Then, generously season the entire potato with salt and pepper.
  • Individually wrap each potato in a piece of tin foil.
  • Place potatoes directly on the grill grates over direct heat. Cover, and let cook for 45-60 minutes. Rotating every 10 minutes.
  • Place potatoes directly on your oven racks and let cook for 45-60 minutes rotating after 30 minutes.
  • After 45 minutes, pierce one of the potatoes with a fork to see how tender they are. Once they are easily poked you know they are done!
  • Remove from heat, let sit for 15 minutes to cool, and then unwrap from foil to eat.
  • Top with your favorite toppings and enjoy!

I used the tin foil part of his recipe and used an oven and different seasoning instead. Please be careful when opening up the tin foil when it comes out of the oven. Steam shoots out!

4 red potatoes
1 medium white onion
2 tablespoons olive oil (or enough to evenly coat all onions and potatoes)
all purpose Greek seasoning (I found it at walmart...rosemary, oregano, and thyme work well too)
3 sheets aluminum foil
cookie baking sheet

Steps:

  • Pre-heat oven to 400 degrees.
  • Slice red potatoes so they are about an 1/2 inch thick.*.
  • Chop onions into large peices.
  • Put the olive oil into a bowl.
  • Put all of the onions and potatoes into the bowl with olive oil.
  • Stir the veggies (preferably with a slotted spoon) until they are all equally coated with olive oil.
  • Take the cookie sheet and place some tin foil on the sheet.
  • Make a cross with two sheets of tin foil on the foil covered cookie sheet (make sure you have enough foil to create a pouch for your potatoes and onions).
  • **I think Reynolds sells pre made aluminum foil pouches -- I didn't have them handy but my homemade pouch worked fine.**.
  • Transfer the onions and potatoes to the center of the tin foil cross, making sure to drain the excess olive oil (why the slotted spoon comes in handy!).
  • When you have all the veggies in the middle sprinkle your seasoning mixture on the potatoes, putting as much on as you like.
  • After seasoning, take all four sides of the tin foil cross and bring them up and into the center, making a little pouch for the potatoes and onions to cook inches.
  • Place in a 400 degree oven for 30 minutes.
  • Potatoes will be done when you can stick a fork through a potato without resistance.
  • *Adjust cooking time to fit the size of the potatoes you want.

1.5 lbs. Baby potatoes (chopped into bite size pieces)
1/2 Tbsp. Olive oil
1 Tbsp. Dried rosemary
3 Sprigs fresh thyme or 3 teaspoons of dried
7 Whole garlic cloves or 2 tablespoons of powdered garlic ((no need to peel))
Pinch Sea salt and pepper
2 Tbsp. Butter
4 tsp. Fresh parsley (optional)

Steps:

  • Preheat the grill to medium, or oven to 400°F. Cut 1.5 lbs. baby potatoes into bite sized pieces, then place in a bowl and mix with 1/2 Tbsp. olive oil, 1 Tbsp. dried rosemary, a pinch of sea salt and pepper, and 7 whole garlic cloves or powdered garlic.
  • Transfer the potatoes to a piece of foil, around 28 inches in length. Bunch the potatoes in the middle of the foil. Place 3 sprigs of thyme or dried thyme and 1 Tbsp. cubed butter on top of the potatoes.Bring the edges of the foil together and wrap, tightly sealing all the way around. If the foil isn't long enough to wrap properly, then double wrap with second piece of foil in the opposite direction.
  • Place the foil directly onto the grill or, if roasting, place on a tray before putting in the oven.Grill or roast for 40 minutes, then remove from the grill or oven and open up the foil.   • Lay out 4 sheets of 12″ heavy duty foil.
  • Slice 1 medium onion into several slices.
  • Place onion slices on the center of foil, making a base for your hamburger patty to go.
  • Place 1 lb. lean ground beef in a bowl. Add small amount of water to beef so that it will effectively steam the vegetables while cooking.
  • Shape the ground beef into four hamburger patties.
  • Place the hamburger patties on top of the onions.
  • Peel and slice 4 medium potatoes.
  • Place the sliced potatoes on top of the burger and onion.
  • Peel and slice 4 medium carrots.
  • Add salt and pepper, garlic salt, and seasoned salt. Also add butter if desired.
  • Take the pouches and bring opposite sides of the foil together above the food and fold them over once to make a 1' crease at the top. Fold the foil over 2 more times, but leave several inches of space between the food and the top of the foil pack, like a tent. Fold or roll the ends of the pack together toward the center to make tight seals.

Juice of 1 lemon

4 russet potatoes (scrubbed and cut into ½-inch cubes)
1 tbsp Kosher salt

Steps:

  • Preheat oven to 400°F.
  • Place the foil pieces on a work surface.
  • Add about ½ tbsp of oil down the middle (lengthwise) of each piece of foil. Add ¼ cup of onions over the oil on each piece of foil. Add half of each cubed potato over the onions. Sprinkle with salt and pepper. Repeat this process, adding a little more (approx. 1 tsp) of oil over the top.

750g miniature new potatoes
2 tbsp olive oil

Steps:

  • If your barbecue hasn't already been heated, light and heat until the ashes turn grey. Put the potatoes in a large saucepan of cold water and bring to the boil. Once boiling, cook for 5 mins until slightly tender.
  • Drain and leave to steam-dry for 2 mins. Transfer to a large sheet of foil, coat in the olive oil and season well. Make sure the potatoes are sitting flat against the foil so each one gets charred when grilled. Wrap in the foil like a parcel, and wrap again to ensure the potatoes are completely covered. Cook on the barbecue for 10 mins.
  • Check they are cooked by inserting a skewer into one of the potatoes. Carefully remove from the foil and serve in a dish.

This super simple Cheesy Potatoes Foil Packets are a delicious side dish that can be baked in the oven or cooked on the grill. The potatoes are loaded with cheese!

4 medium Russet or Idaho potatoes
4 tbsp unsalted butter
4 tbsp extra virgin olive oil
1/2 medium sweet onion (chopped)
1/4 cup shredded sharp cheddar cheese
1/4 cup shredded mozzarella cheese
1/2 tsp kosher salt
1/4 tsp ground black pepper
1/2 tsp dried dill (optional)

Steps:

  • Prepare 4 sheets 12" x 10" of aluminum foil.
  • Peel and dice potatoes.
  • Place one diced potato per sheet of foil. Add one tablespoon of diced onion. Place one tablespoon of butter on top of potatoes and drizzle one tablespoon of olive oil. Season potatoes with salt and pepper. Bring the longer sides of foil sheet together and make a couple of 1" folds to close. Make sure to leave enough room for the steam. Close tightly the shorter sides.
  • Place foil packets on a large baking sheet.
  • If baking in the oven: preheat to 375 degrees F. Place baking sheet in the oven and bake for 18 to 20 minutes. Carefully, open the pockets and allow steam to escape. Check if potatoes are soft. Sprinkle shredded cheese, dividing evenly over all pockets. Scrunch down the sides of foil and place sheet back in the oven to melt the cheese. You can broil them for 2 minutes, if desired.
  • If cooking on the grill: preheat grill to medium heat. Place foil packs on the grill, close and cook for 10 minutes. Flip over and cook for 10 more minutes. Carefully open packs and allow steam to escape. Check if potatoes are done. Top with cheese and close packs for few more minutes to melt the cheese.
  • Serve.

This is one of my ex-wife's long awaited recipes. Have no clue where she learned about it. Its simple, but very tasty and often requested by the entire family for many different meals especially good with grilled or broiled steaks or thick cut center pork chops or grilled salmon. Care is needed when opening the foil to dig in.

1 large potato sliced
1/4 c butter or margerine
1/4 c grated parmesan cheese
1/4 tsp garlic or onion powder optional
1 Tbsp seasoned salt[we use lawrys]

Steps:

  • 1. peel the potato or not, your choice. slice the potato into slices 1/4 " thick or so. Tear off a rather large piece of heavy duty aluminum foil or 2 sheets of regular foil.
  • 2. Place the foil on the counter or other flat surface. Place the potato slices in a single layer, overlapping very little. in the center of the foil sheet. put 3 or 4dabs of the butter/margarine on top of the potatoes. sprinkle seasoned salt and garlic/onion powder if using on top of the butter/ margarine. fold 2 sides of the foil over the potatoes and crimp very tightly. fold and crimp the other 2 sides also. You want a tightly sealed foil pouch enclosing the potato slices. Preheat the oven to 425degreesF. .You can either place the foil pouches on a cookie sheet or directly on an oven rack being careful not to puncture the foil bottoms.
  • 3. Place the foil pouches in the oven and bake for 45 minutes. When done, place the foil pouches in a large serving dish or on a large plate or platter to serve. You and your guests should be very careful opening the pouches; the contents are very hot. Enjoy.
