Potato Stuffed With Egg (Nafaqo) image

Posted for ZWT7. The recipe I found used yellow food dye, but I thought colouring it with a little turmeric would be more authentic.

Number Of Ingredients 7

3 potatoes
1 egg
1 cup chicken stock
1 cup plain flour, dived in half
1/4 teaspoon turmeric
1/4 teaspoon salt
oil (for frying)

Steps:

  • Boil the potatoes and egg until fully cooked.
  • Heat the chicken stock.
  • Add the Flour and stir until smooth. Using a whisk will help make it smooth faster.
  • Add the turmeric and stir well.
  • Once the egg is fully cooked, remove the shell and cut it into 4 pieces.
  • Once the potatoes are cooked, remove the skins and mash. Slowly add the rest of the flour. The potatoes should be like a dough. You may not need the full 1/2 cup of flour, it depends on how big the potatoes are.
  • Once the potatoes are dough like, pinch some off and flatten.
  • Add one piece of egg in the middle and bring the potato around it to fully cover the egg.
  • Shape it into a circle or oval.
  • Heat a pan of oil on the stove.
  • Dip each potato ball into the stock mixture and coat well.
  • Drop it into hot oil and fry until crisp, about 1-2 minutes.

4 large baking potatoes
1 stick butter
1 cup grated Cheddar cheese
3/4 cup milk, plus more if needed
2 tablespoons chopped chives, optional
Salt and pepper, to taste

Steps:

  • Preheat oven to 425 degrees. Wash potatoes and poke 2 or 3 vent holes in each with a fork. Bake potatoes in oven until done, about 1 hour. (Poke with a fork and if fork goes in easily they are done). Remove potatoes from oven and allow to cool for 10 minutes. Slice potatoes in 1/2 lengthwise and scoop pulp into mixing bowl being careful not to break skin. Mash potatoes with butter, cheese, milk, and chives. Taste-test and adjust seasoning if necessary with salt and pepper. Spoon mashed potatoes back into skins and place in a 9 by 13-inch dish. Return to oven and heat thoroughly.

These potatos really live up to there name, they ARE fluffy and what I think to be, one of the best recipes for twice baked potatoes. I'm certain you will agree once you try them! Prep time does not include baking the potatoes (which is about 1 hour baking time).

6 large potatoes, baked (russets are best)
2 -3 tablespoons soft butter
1/2 cup hot milk
salt and pepper
1 teaspoon baking powder
1 pinch nutmeg
2 egg yolks (place one in a seperate bowl)
2 egg whites
1/2-3/4 cup swiss cheese, finely shredded
2 tablespoons onions, grated (optional)
1 tablespoon water

Steps:

  • Cut a thin slice from the top of the potato and discard.
  • Scoop out the potato pulp carefully with a spoon, and place the pulp in a medium bowl (be careful not to break the potato skin).
  • With an electric mixer mix the pulp with soft butter, hot milk, salt, pepper, baking powder, nutmeg and ONE egg yolk and onion (if using); whip/beat until smooth and fluffy.
  • Add in the shredded cheese; mix well to combine.
  • In another bowl, whip the egg whites until stiff; fold into potato mixture.
  • Pile the potato mixture back into the skins.
  • In a small bowl or cup beat the remaining egg yolk with water.
  • Set oven to 400 degrees.
  • Brush the egg yolk/water mixture over the top of each potato.
  • Set the stuffed potatoes into a greased baking pan.
  • Bake for 15 minutes.

1/4 cup olive oil
2 medium baking potatoes, peeled and diced
1 medium onion, diced
salt and pepper
8 large eggs
1/4 cup freshly grated pecorino romano cheese
1 tablespoon chopped fresh Italian parsley

Steps:

  • Heat the oil in large nonstick ovenproof or cast iron skillet over medium heat. Fry the potatoes until tender and golden brown. Add the onion and salt and pepper. Continue to cook until the onion is translucent, about 3 to 4 minutes.
  • Meanwhile, whisk together the eggs, cheese, parsley, and salt and pepper in a large bowl. Add the egg mixture to the potatoes and onions. Cook, shaking the pan and gently moving the mixture from side to side with a rubber spatula as some of the liquid from the top reaches the bottom of the pan.
  • Cook until the bottom is set and beginning to brown and the top is still loose, 2 to 3 minutes. Flip the eggs by sliding them onto a plate. Then invert and slide the eggs back into the pan, cooked side up. Cook until the eggs are set, 2 to 3 minutes more, shaking the pan often to prevent sticking.
  • If you prefer, rather than inverting the eggs, you can place the skillet under the broiler for 2 to 3 minutes until the top is set and lightly browned. Unmold onto a plate, cut into wedges, and serve.

2 cups shredded cheddar cheese, divided
3/4 cup sour cream
1 (1 ounce) envelope ranch dressing mix
1 tablespoon snipped chives
1 garlic clove, minced
crumbled cooked bacon
chopped green onion

Steps:

  • Bake potatoes at 400° for 1 hour or until tender.
  • Reduce heat to 375°.
  • Cut each potato in half lengthwise; scoop out the pulp, leaving a thin shell.
  • In a large mixing bowl, beat the pulp with butter.
  • Stir in 1 cup of cheese, sour cream, salad dressing mix, chives and garlic.
  • Spoon into potato shells.
  • Sprinkle with remaining cheese.

4 medium baking potatoes
1/4 cup butter, cubed
1 cup sour cream
1 cup shredded cheddar cheese
4 bacon strips, cooked and crumbled
3 to 4 green onions, sliced

Steps:

  • Bake potatoes at 400° for 1 hour or until tender. Cool slightly. Reduce heat to 350°. , Cut each potato in half lengthwise. Scoop out pulp, leaving a thin shell. In a large bowl, mash the pulp with butter. Stir in the sour cream, cheese, bacon and onions. Spoon or pipe into potato shells. , Place on a baking sheet. Bake for 30-35 minutes or until heated through.

1 tablespoon butter
2 eggs
2 slices bacon, cooked and diced
2 tablespoons shredded cheese

salt & freshly ground black pepper, to taste

Steps:

  • Preheat oven to 350 degrees F.
  • Lay each baked potato on its side and use a knife to carefully cut off the top third of the potato. With a spoon hollow out the middle of each potato to make a "bowl", leaving the potato as thick or thin as you would like.
  • Place 1/2 tablespoon of butter in the middle of each bowl. Gently break an egg into each bowl, careful not to break the yolk.
  • Top with bacon, cheese, parsley and then season with salt and pepper.
  • Bake until the egg whites are set (20-25 minutes). Serve immediately.
