Provided by Food Network Kitchen

Categories     side-dish

Time 1h45m

Yield 8 servings

Number Of Ingredients 9

2 1/2 cups heavy cream
3 sprigs thyme
2 bay leaves
1 clove garlic, grated
1/4 teaspoon freshly grated nutmeg
1 bunch spring onions (whites finely chopped, greens thinly sliced)
Kosher salt and freshly ground pepper
3 pounds large Yukon Gold potatoes, peeled and thinly sliced (preferably on a mandoline)
2 cups shredded havarti cheese (about 8 ounces)

Steps:

  • Preheat the oven to 375 degrees F. Combine the heavy cream, thyme, bay leaves, garlic and nutmeg in a medium saucepan. Bring to a gentle simmer over medium heat. Add the spring onion whites and simmer until just starting to soften, about 5 minutes. Season with 1 1/2 teaspoons salt and a few grinds of pepper. Remove the thyme sprigs and bay leaves. Stir in about half of the spring onion greens.
  • Spread the potatoes in a 9-by-13-inch baking dish. Pour the cream mixture over the top and gently stir, pressing and submerging the potatoes to make an even layer. Cover with foil and bake until the potatoes are tender and the cream is bubbling, 45 to 55 minutes.
  • Uncover the potatoes and sprinkle with the cheese. Bake until the cheese is golden, 10 to 15 minutes. Let cool 15 minutes. Sprinkle with the remaining spring onion greens just before serving.

BRAIDED ONION-POTATO LOAF

Braided Onion-Potato Loaf image

Ever wonder why a bread recipe includes mashed potatoes? The potato's starchy quality absorbs liquid during the kneading stage, and it holds onto that liquid during baking. The bread finishes with a crisp, brown exterior crust and a flavorful, moist interior that helps the bread keep longer. -Joan Ranzini, Waynesboro, Virginia

COD, POTATO, SPRING ONION STEW

Cod, Potato, Spring Onion Stew image

"The inspiration for this one comes from conversations with Icelandic and Danish friends who prize their cod. Traditionally, they prepare it in lots of different ways − pickled, salted, dried or smoked. This stew is similar to the way in which they slowly stew salt cod after soaking it (so that the excess salt seasons the other ingredients in the soup, like the potatoes). Good salt cod is quite hard to find these days, so I've adapted the recipe to use fresh cod, but you can also use hake, bass or halibut" A jamie oliver recipe.

Time 35m

Yield 4-6 serving(s)

Number Of Ingredients 15

1 onion, peeled and finely chopped
1 leek, washed and finely sliced
extra virgin olive oil
2 medium courgettes, halved lengthways
1 kg potato, peeled
2 anchovies
1 glass white wine
565 ml milk
565 ml stock
1 kg cod fish fillet, skinned and pinboned
salt
fresh ground black pepper
handful fresh flat-leaf parsley, roughly chopped
1 bunch spring onion, finely sliced
1/2 lemon, juice of, a

Steps:

  • 1. In an appropriately sized large pan, slowly fry your onion and leek with around 5 tablespoons of olive oil for 5 minutes until soft and tender. With a teaspoon, remove and discard the fluffy tasteless core from the courgettes and grate the rest into the pan.
  • 2. Chop the potatoes into rough 2cm/1 inch dice and add to the pan. Give everything a good stir and then add the anchovies. Turn the heat up and add the white wine. Allow to cook down by half before adding your milk and stock. Bring to the boil and simmer for half an hour until the potatoes are tender.
  • 3. At this point add your cod and simmer for a further 15 minutes until the flesh flakes away − feel free to stir and break up the fish, but it's quite nice to leave some big chunks as well. Season carefully to taste. Divide between your bowls, and serve with a small handful of parsley and spring onion dressed with a little olive oil and lemon juice.

GREYSTON'S POTATO ONION BREAD

Greyston's Potato Onion Bread image

Provided by Molly O'Neill

Time 5h

Yield 2 loaves

Number Of Ingredients 10

1 package dry yeast
1 cup warm water
1 tablespoons honey
2 1/2 tablespoons dry milk powder
2 teaspoons salt
1 tablespoons vegetable oil
1/2 pound potatoes, cooked until very tender, mashed and allowed to cool
3 ounces onion, minced
4 to 4 1/2 cups unbleached flour
1 egg beaten with 2 tablespoons water, for egg wash

Steps:

  • Dissolve the yeast in the warm water and then add the honey, milk powder, salt, oil, potatoes and onion, stirring well. Gradually stir in 1 1/2 cups of flour.
  • Add 2 more cups of the flour, 1/2 cup at a time, until the dough is stiff. Turn onto a lightly floured board and knead in enough flour until the dough is no longer sticky.
  • Continue kneading for about 15 minutes and then place the dough in a lightly oiled bowl. Cover the bowl loosely with plastic wrap and set in a warm place to rise until dough is doubled in volume, about 1 1/2 hours. Remove dough from bowl, punch it down and shape into a ball. Return to bowl, cover with plastic wrap and let rise for 40 minutes.
  • Preheat the oven to 350 degrees. Punch down the dough again and turn onto a lightly floured board . Divide the dough in half and knead one piece, adding about 1/4 cup or more of flour to make the dough stiff enough to hold a round shape.
  • Form a ball and then fold the dough inward while rotating it against the board to form a mushroom cap. Repeat this rotation 10 times. Lay the ball of dough on its side and roll and press the dough against the board about 10 times, continuing to keep the round shape. Repeat with the other ball.
  • Place both balls on a buttered baking sheet and let them rise in a warm place, lightly covered with plastic wrap, for about 25 minutes. Brush the loaves with egg wash and make 2 quarter-inch-deep slashes to form a cross in each.
  • Bake for 35 to 40 minutes, until the loaves are golden and produce a hollow sound when tapped on the bottom. Cool at least 1 hour before slicing.

  • Mash the potatoes with the melted butter and season to taste (we go quite heavy on the seasoning). Add the flour, baking powder, red onion and spring onions and mix together until well incorporated.
  • Push your potato dough down to form a disc about 12cm across, then cut the disc into 4 pieces. Place them in a hot, dry ovenproof pan (no oil or butter) for 4 minutes, then carefully turn them over and cook for an additional 4 minutes – you can do this on the hob or in the oven. (If cooking on the hob, be careful they don’t burn).

  • Potato Roses. These decorative roses are an easy-yet-impressive side that's sure to impress your dinner guests. Go to Recipe.
  • Fondant Potatoes. Spring potatoes are already tender and buttery, but this easy melting potato technique takes them over the top. Cooked here in garlic butter, the potatoes are golden and crisp on the outside while the center practically melts in your mouth.
  • Ukrainian Dill Potatoes. The dish is just four humble ingredients — potatoes, dill, garlic, and sunflower oil — but their combination is magical. With each bite of creamy boiled potato, you get a grassy hit of fresh dill and a kick from raw garlic, all brought together by the nutty aroma of virgin sunflower oil (the hallmark ingredient of Ukrainian cooking).
  • Crispy Sheet Pan Potato Salad. These crispy smashed potatoes are tossed with arugula, bacon, red onions, and a whole grain mustard vinaigrette, and they definitely pack a punch.
  • Potato Breakfast Gratin with Red Peppers & Parmesan. If the tender bites of potato are your favorite part of a Spanish omelet, turn those individual servings into big-batch brunch recipe.
  • Classic German Potato Salad. Spring is the official beginning of potato salad season. I like to forego heavy mayo-slicked versions in favor of this tangy vinaigrette variation.
  • Fresh Herb, Potato, and Goat Cheese Frittata. I fully believe there's a frittata for every season. For spring that means herbs, tender potatoes, and tangy goat cheese.
  • Lemon Potato Chowder. Freshly squeezed lemon juice and zest add vibrancy to an otherwise simple potato soup. Cook the potatoes until tender, then purée until smooth or leave some smaller pieces for added texture.
  • Potato and Leek Galette. If you've been looking for a pretty spring side, your search is over. These thinly sliced potatoes layered with chopped leeks bake until everything is crisp and brown on the outside and tender inside.
  • Roasted Sweet Potato Slices with Cilantro Pesto. Sweet potatoes may get pegged as a fall vegetable, but they are every bit as delicious in the spring. Top them with a bright fresh-herb pesto of cilantro, coconut and pistachios.
