POTATO HASH WITH A FRIED EGG

Potato Hash With a Fried Egg image

This potato and onion hash is hearty and no-nonsense, substantial comfort food at its simple best. Although I tend to cook it just for myself at home, I bet if you gave it to a tableful of people when they came round for supper, they would be weepingly grateful, fashionable dietary restrictions notwithstanding. I like a little Tabasco sprinkled over the egg.

Time 30m

Yield 1 generous serving

Number Of Ingredients 6

1 tablespoon vegetable oil
1 medium onion, sliced into half-moons
Salt
2 cups waxy potato, with skin, diced into 1/2-inch pieces (1 10-ounce potato)
1/4 teaspoon cayenne pepper
1 large egg

Steps:

  • Place a large nonstick skillet over medium heat, and add oil. When oil is hot, add onion and a sprinkling of salt. Stir until onion begins to soften, about 1 minute.
  • Add potato and cayenne to pan. Reduce heat to low, and cook, stirring frequently, until potatoes and onions are tender, caramelized and lightly browned, 30 minutes.
  • Push potato and onion hash to one side of pan, and increase heat. Crack egg into pan, and cook to taste. Spoon potatoes and onions on plate, and top with egg.

Time 35m

Yield 4

Number Of Ingredients 6

2 medium russet potatoes, shredded
½ medium onion, finely chopped
¼ cup all-purpose flour
1 egg
1 cup oil for frying, or as needed
salt and pepper to taste

Steps:

  • Rinse shredded potatoes until water is clear, then drain and squeeze dry. Place shreds in a bowl, and mix in the onion, flour and egg until evenly distributed.
  • Heat about 1/4 inch of oil in a large heavy skillet over medium-high heat. When oil is sizzling hot, place potatoes into the pan in a 1/2 inch thick layer. Cover the whole bottom of the pan, or make separate piles like pancakes. Cook until nicely browned on the bottom, then flip over and brown on the other side. It should take at least 5 minutes per side. If you are cooking them in one big piece, it can be cut into quarters for easier flipping.
  • Remove from pan, and drain on paper towels. Season with salt and pepper and serve immediately.

Serve up brunch with a bang - this pan-fried potato hash with Spanish sausage and earthy greens will start the day on the best possible foot

Provided by Jane Hornby

Categories     Brunch

Time 25m

Number Of Ingredients 7

1 tsp mild olive oil , plus extra for frying
80g spicy chorizo sausages, cut into small pieces (see tip, below)
1 onion , finely chopped
about 100g ready-prepared kale (2 good handfuls)
400g leftover cold potato , roughly chopped
½ tsp paprika (optional)
2 eggs

Steps:

  • Heat the oil in a medium frying pan, and add the chorizo and onion. Fry for about 8 mins, until the chorizo is golden and has released its orange oils, and the onion is soft.
  • Turn up the heat, tip in the kale and stir-fry for 1 min until wilting. Stir in the potatoes, paprika and some seasoning. Fry everything together for another 5 mins or until the potatoes are hot through and the kale is tender. Scrape the bottom of the pan now and again for those all-important crispy bits.
  • Meanwhile, fry or poach the eggs, then serve on top of the hash.

BACON, POTATO AND ONION HASH

Bacon, Potato and Onion Hash image

1 lb potato, peeled and diced
1 garlic clove, crushed

HOW TO MAKE THE BEST POTATO HASH | THE FOOD LAB
how-to-make-the-best-potato-hash-the-food-lab image

From seriouseats.com
Author J. Kenji López-Alt
  • Choose Your Potatoes Wisely. The type of potato you use can have a great impact on the final result. Waxy red or new potatoes turn nice and creamy when cooked, but are terrible at developing crisp crusts.
  • Par-Cook Your Potatoes With Vinegar for Maximum Crispness. Back in my early hash-slinging days, I'd throw raw cubed potatoes into a skillet with oil and let them fry until golden brown.
  • Add a Meat, Preferably Cured, and GET IT CRISP. Ok, so not all hashes need meat, and to be 100% honest, most of the ones I make at home don't have it, simply because I don't generally have cured meat hanging around.
  • Fry the Potatoes in Rendered Fat and Add More Fat Than You Think You Need. Once the meat is crisped, you might be tempted to just throw the potatoes in there.
  • Add Seasoning to Potatoes. Once the potatoes are nearly cooked, it's a good idea to start thinking about flavoring them. If simple and straightforward is your goal, then just a bit of salt and pepper will do.
  • Cook Potatoes, Meat, and Vegetables in Batches to Optimize. As with the chorizo, now is the time to remove those potatoes from the skillet (you can drop them into the same bowl as the chorizo to minimize cleanup) to make space for the remaining vegetables.
  • Combine Ingredients Before Finishing. Once the vegetables are cooked, I add them to the bowl with the meat and potatoes. Each element here has been perfectly cooked before combining, which means that the whole shebang is going to be all the tastier.
  • Drain Eggs in a Strainer for Better Shape. There are a few ways to incorporate your eggs into hash—poached, fried, or simply baked on top—but no matter your method, if you want them to be the prettiest, you should strain your eggs.
  • Baked, Fried, or Poached? Make Your Choice. Now you've got a big decision to make: how do you want to cook your eggs? Fried eggs are probably the fastest.
  • A Little More Oil Keeps the Eggs From Drying Out. I always drizzle my eggs with just at touch of olive oil, which prevents their top surfaces from developing an unappetizing, plasticky skin.

  • Add the potatoes, salt and pepper and continue to sauté until golden brown and the potatoes are cooked through. To cook faster, cover the pan and cook on low heat for about a couple minutes at a time, stirring in between. About 5 minutes before the potatoes are done, stir in fresh rosemary.
  • Note: If you like potatoes that are super soft on the inside but super crispy on the outside, I recommend boiling or baking the potatoes until they're about 2/3 of the way cooked. Then let them cool, then dice them and follow steps 1 and 2 above!
