- Heat oil in a large pot or Dutch oven. Add onion and cook for 1 minute. Add garlic and carrots. Cook for 2-3 minutes, stirring frequently, to prevent burning.
- Add in the tomato paste, tomato sauce and lentils. Cook for 1 minute. Add potatoes. Pour 4 cups of water on top. Add salt, pepper, thyme and oregano. Cover and bring to a boil. Reduce heat to medium-low and simmer for 25-35 minutes, until the lentils are cooked and potatoes are tender.
- Taste the soup and add more salt and pepper if needed. Serve warm.

- Peel and roughly chop the onions and sweet potatoes - can be chunky.
- Combine with the stock or water, lentils, garlic, cumin, cayenne and turmeric in a pot.

- Combine the sweet potato, carrots, celery, leeks, lentils, ginger, 3/4 teaspoon curry powder and 1 teaspoon salt in a 4-to-6-quart slow cooker. Add 6 cups water and stir, then cover and cook on low, undisturbed, 8 hours.
- Stir the soup vigorously with a whisk to make a rough puree. Thin with hot water, if desired.

- In a soup pot, heat olive oil over medium-high heat. Add shallots, carrot, and celery and cook, stirring occasionally, until vegetables are softened, about 5 minutes. - Stir in potatoes and ham, cover, and simmer until potatoes are softened, 10 minutes longer. To serve, ladle soup into bowls and swirl in parsley puree.
- Combine garlic, salt, pepper, and parsley in a blender or food processor (preferably small model) and process until pureed.

I made up this recipe one chilly weeknight to stave off a cold. I was surprised at how delicious the soup was! The file powder makes it nice and thick, but it may be left out. A warm loaf of sourdough bread is all you need to complete your meal!

- Melt the butter in a large saucepan over medium heat. Stir in the onion and celery. Cook until tender. Mix in the potatoes, carrot, and garlic. - fill a large stock pot with around 3litres of water and bring to the boil. Add 4 knorr vegetable stock cubes and simmer whilst stirring
- add the lentils
- Dice the potatoes, leeks and onion and add to the pot
- grate the carrots and add to the pot and season with salt and pepper if you wish
- simmer the soup for around 2hours stirring occasionally and once the potatoes are cooked the soup is ready

- Soak the lentils in roughly 1 cup of cold water or green tea for at least 30 minutes.
- In a medium-sized stock pot over medium-high heat, sauté the diced onions and garlic in 1/4 cup of the chicken broth until the onions become translucent (around 5 minutes).
- Add the carrots, sweet potatoes, and red wine. Cook for around 1 minute or until the wine becomes very fragrant.
- Add the lentils, water, and chicken broth. Bring to a rolling boil, stirring the mixture occasionally.
- Reduce the heat. Add the red pepper flakes and fennel seed and cover, allowing the soup to simmer for about 20 minutes or until the lentils and sweet potatoes begin to fall apart.
- Remove the lid and add the spices. If you would like to get a thicker consistency, kick the heat back up and reduce until it hits the desired thickness. You may want to adjust the amounts of salt and pepper, depending on your own tastes.
- Serve the soup either on its own or over a starch with a dollop of raita (thick yogurt mixed with vegetables) or sour cream. Garnish with whatever you like (Featured in the photo is yogurt, carrot, and a dash of paprika.).

- Separate the coriander leaves from the stalks. Reserve the leaves for garnish, and chop the stalks finely; set aside.

- Pick over the lentils in case there are any little stones.
- Put every thing except for the garlic, potato, sausage and salt in a large cooking pot with a tight fitting lid.
- Bring to the boil and simmer gently for 30 to 40 minutes, until the lentils are soft and beginning to collapse into the liquid.
- Stir occasionally to prevent sticking and add more water if needed.
- While the soup is doing it's thing wrap the garlic cloves in foil (to make a loose parcel) and bake in the oven for 20 to 30 minutes.
- When the garlic is cooked squeeze the flesh from the skins and pop the flesh into the soup.
- Add the potato cubes and sliced sausage and cook for a further 10 minutes or until the potato cubes are cooked but still holding their shape.

- Put peppercorns and fresh herbs in cheesecloth and tie corners together to form a little package.
- In large pot, bring broth, lemon juice, and cheesecloth package to a boil.
- Add lentils and potato. Reduce heat, cover and cook for about 20 minutes.
- In the meantime, in a nonstick skillet, carmelize onion and garlic with the butter. Once carmelized, add 2 cups of water, the carrots and cilantro and cook until carrots are softened.
- Once potatoes are cooked properly, add onion mixture and cook for about 5 minutes more. Add salt and pepper to taste. If soup is a little too chunky, adding a cup or two of water helps thin it out a little bit. Remove cheesecloth package before serving.
