PORTUGUESE WALNUT SQUARES

Steps:
- Cream butter and sugar using electric mixer, if available.
- Add egg and beat well.
- Add vanilla, milk, and 2 Tbsp of port.
- Grind or grate, chop very fine, or whirl in blender 1 cup nuts.
- Place in mixing bowl.
- Add dry ingredients and stir.
- Fold in butter/egg mixture to make a batter; do not over-beat.
- Spoon into a lightly buttered and floured 9 inches square pan.
- Bake in moderate oven 350F 15-20 min or until cake tests done.
- As soon as the cake is removed from the oven, brush top with 2-3 Tbsp of port.
- Cool to room temperature.
- Mix well confectioners sugar, salt, 1 Tbsp softened butter, and 1 Tbsp of port, or enough to obtain a glaze of spreading consistancy. Tint a light pink with a little red food coloring.
- Spread cake with glaze.
- Sprinkle with chopped walnuts.
- Set until firm.
- Cut into 16 squares.

Steps:
- Preheat oven to 350f degrees.
- Base layer.
- Measure all base layer ingredients into bowl, crumble together until mealy.
- Press into ungreased 9 x 9 inch oven proof dish.
- Set aside.
- Middle layer.
- Beat eggs until foamy; add the rest of the ingredients and stir well.
- Spread over bottom layer; bake in 350f degree oven for 30 minutes.
- Top layer, icing.
- Beat together well in small bowl all icing ingredients.
- Add more liquid if needed to spread easily.
- Spread over cooled squares.
- Place one whole, half walnut to indicate squares for cutting, so that the half walnut is in the middle of each square.
- Cut into squares.
WALNUT SQUARES
These are homey, old fashioned cookies that have a wonderful richness to them. The recipe was given to me by my dear friend Mary, who is like a 2nd mother to me, and one of my favorite people to swap recipes with.

Steps:
- Preheat oven to 325 degrees, grease well an 8" square pan.
- Beat egg until foamy, beat in brown sugar and vanilla.
- Sift together dry ingredients, mix into to egg mixture, stir in walnuts.
- Bake until the top has a dull crust about 25 minutes, cut into squares while warm, cool and then remove from the pan.
- Easily doubled, bake in a 9x13 pan.
PEAR WALNUT SQUARES
Excellent way to prepare the abundant fall harvest of pears. Serve at room temperature or on crisp fall night nuke for a few seconds and serve warm. For an added treat serve with a scoop of vanilla ice-cream.

Steps:
- Preheat oven to 350 degrees.
- In a medium bowl, combine flour, powdered sugar, butter, 1/2 teaspoon of the cinnamon and salt; mix well.
- Press into the bottom of a greased 7 x 11-inch baking dish.
- Top with nuts and pear slices.
- In the same mixing bowl, beat together eggs, brown sugar, vanilla and remaining cinnamon until well combined; pour over pears.
- Bake for 35 to 40 minutes, or until set in center.
- Cool completely before cutting into squares.

These are chewy walnut bars made by my Titia Albertin in Sao Miguel, Azores. They have a wonderful flavor that comes from Port wine.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch square pan.
- In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg, then stir in the vanilla, milk and 2 tablespoons Port wine. Combine the flour, chopped walnuts and baking powder; stir into the creamed mixture. Spread evenly into the prepared pan.
- Bake in the preheated oven for 15 to 20 minutes, until a knife inserted into the center comes out clean. Brush the top with 2 tablespoons of the Port wine as soon as it comes out of the oven. Let cool to room temperature before glazing.
- To make the glaze, beat together the confectioners' sugar, 1 tablespoon of butter, and 1 tablespoon of port wine until smooth and spreadable. Spread over the cooled bars.

Steps:
- Preheat oven to 350°F.
- In a medium bowl, combine the brown sugar, vanilla and egg substitute, beating until well blended.
- In a separate bowl sift together the flour, baking soda and salt.
- Add the dry mixture to the brown sugar mixture and stir just until incorporated and moist; don't over mix.
- Fold in walnuts; then spread into a greased 9" square pan.
- Bake in the preheated 350°F oven for 19 min; then cool in pan.
- Cut in squares to serve.
- Variation: swap out the walnuts for pecans instead.
- TIP: you may wish to chop the walnuts a little more finely if you have very young children, if choking may be an issue for them or refrain from giving them access to this treat entirely.
D-RING DELIGHTS (HORSE TREATS)
The perfect horse treat recipe made by me! My horse absolutely loves them and they will keep for about 2 - 3 weeks depending on hardness. To make the cookies harder use less molasses and for more stickiness and darkness use more molasses. Also, you may not think that you have added enough molasses BUT most likely don't add anymore, just keep mixing.

- Mix together VERY WELL in large bowl in order as listed.
- When you put the carrots and apples in, chop them up in a food processor until pieces are as small as possible.
- Wet hands with vegetable oil or Pam.
- Roll into medium sized balls about an inch to and inch and a half wide, then pat down.
- Put in oven at 310-330°F for 20-30 minutes depending on how hard you want them. I like to put it at 325°F for 20 minutes.
