Time 1h

Yield 6 to 8 servings

Number Of Ingredients 17

2 large Spanish onions, chopped
1 head garlic, divided into cloves, peeled, and chopped
5 to 6 tablespoons extra-virgin olive oil
2 pounds Portuguese chourico (linguica is the milder sausage for the faint of heart.)
6 tablespoons crushed red pepper in vinegar
4 cups of water
2 (16-ounce) cans crushed tomatoes or vegetable tomato juice
1/4 cup ketchup
1 teaspoon Portuguese allspice, optional
1/4 cup chopped parsley
3 to 5 red bliss potatoes
1 bunch garden green beans or pea pods
1/4 to 1/2 cup of any wine or vermouth
3 to 5 lobster tails
1 pound Cherrystone clams
1 pound mussels
1 pound cod or sea bass

Steps:

  • You will need two large saucepots. In one pot saute one onion and half the garlic in 2 to 3 tablespoons extra-virgin olive oil until transparent. Cut Portuguese chourico into desired pieces, and add 1 pound to the onion mixture. Add 3 tablespoons crushed red pepper in vinegar.
  • Do the same exact thing in the other large saucepot.
  • To one pot, add 4 cups water, 1 can of tomatoes, ketchup, Portuguese allspice, if using, and chopped parsley. Let simmer for about 10 minutes.
  • Add potatoes, skins on, cut in desired pieces. When potatoes are almost cooked, add fresh green beans or pea pods. Do not overcook the beans or peas unless you like overdone vegetables.
  • To the other pot, add the remaining tomatoes, and wine or vermouth. Add lobster tails, clams, mussels, and fish. Steam until the shellfish opens and serve together with the stew.

Categories     Soup/Stew     Shellfish     Vegetable     Dinner     Simmer

Yield 6 bowls

Number Of Ingredients 17

5 thick cut slices bacon
2 med onions (or 3 small), sliced
2 cloves garlic, minced
1/2 red or green pepper, cut in strips
2 med carrots, shaved
2 stalks celery, diced
1 13 oz. can diced tomatoes
1 cup chicken stock
1-1/2 cups water
1 bay leaf
1-1/2 tsp Worcestershire sauce
1 tsp thyme, dried or fresh
1 tsp salt
1 TB fresh chopped parsley
3 med potatoes (I used Yukon golds), diced into 1/2 inch pieces
1 lb bay scallops (the size of cherry tomatoes)
more fresh chopped parsley or chives for garnish

Steps:

  • Prep vegetables. To shave the carrot, press down hard with a vegetable peeler to get thick shavings along the length. Fry bacon in a heavy-bottom skillet until crisp. Remove bacon from pan and set aside. Add onion, garlic, pepper, carrot, and celery to the bacon drippings. Cook over low heat for 10 minutes. Add tomatoes, stock, water, bay leaf, Worcestershire, thyme, and parsley. Bring to a boil, reduce heat, cover and simmer 10 minutes. Add potatoes and simmer 15 minutes more or until potatoes are soft, but not mushy. Add scallops and simmer, uncovered, until scallops are cooked through, about 10 minutes. Coarsely chop bacon and sprinkle on top along with parsley or chives. Serve over or with crusty bread.

A Tyler Florence recipe. Absolutely delicious and easy; I use ground chorizo and frozen, bagged mixed seafood (crab, shrimp, scallops) from Trader Joe's.

Provided by Raquel Grinnell

Categories     Perch

Time 1h

Yield 12 serving(s)

Number Of Ingredients 16

1/4 cup extra virgin olive oil, plus more
extra virgin olive oil, for serving
2 medium onions, chopped
4 garlic cloves, finely chopped
1 lb linguica sausage or 1 lb chorizo sausage, sliced in chunks
5 sprigs fresh thyme sprigs
1/2 cup fresh oregano, hand torn
2 bay leaves
2 lbs yukon gold potatoes, sliced
3 quarts chicken broth
1 lb kale, chopped
sea salt
fresh ground black pepper
2 dozen littleneck clams, scrubbed
1/2 lb cod or 1/2 lb bass fillet, skin and pin bones removed
1/4 cup flat leaf parsley, chopped

Steps:

  • Heat the oil in a heavy 4 to 6-quart pot over medium flame. Add the onions, garlic, and sausage; cook, stirring with wooden spoon, until the sausage renders out some of its fat and the onions are soft.
  • Toss in the herbs and then the potatoes, stir that around for a minute to coat in the oil. Pour in the chicken broth and bring up to a simmer.
  • Add the kale, season with salt and pepper. Cover and simmer for 10 minutes until the potatoes are nearly tender.
  • Uncover the pot and add the clams; simmer, covered, for 15 minutes until the clams open. Add the fish and continue to cook for another 3 to 5 minutes until the fish is cooked. Garnish with chopped parsley and drizzle with olive oil.
