MARINATED AND GRILLED PORTOBELLO MUSHROOMS

Number Of Ingredients 7

2 large portobello mushrooms
1/3 cup olive oil
2 tablespoons unsalted butter, melted
1/4 teaspoon red pepper flakes
2 teaspoons minced garlic
1/4 cup white wine
1 teaspoon lemon zest

Steps:

  • Preheat grill or grill pan.
  • Clean mushrooms and lay with gills up in a shallow baking pan. In a bowl combine olive oil, butter, red pepper flakes, garlic, wine and zest. Whisk to combine and pour over mushrooms. Marinate mushrooms at room temperature for 20 minutes, turning once. Pat mushrooms dry and place gill side up in grill pan. Grill slowly for about 20 minutes, then turn and grill for about 5 to 10 minutes more. Slice and serve with polenta. Garnish with chopped parsley.

Oregano, chopped
extra-virgin olive oil
Jacobsen Salt Co. Pure Kosher Sea Salt
pepper
Portobello Mushroom
russet potatoes

Steps:

  • When ready to cook, start the Traeger and turn temperature to 450 degrees F and preheat, lid closed, for 10 to 15 minutes.
  • Mix fresh herbs, olive oil, salt, and pepper together in a bowl. Rub over mushrooms. Grill both sides of mushrooms for approximately 2-3 minutes on each side.
  • Clean the potatoes and slice into long strips.
  • Heat the oil on the Traeger in a sauce pan; drop the potatoes in the hot oil and fry for 7-8 minutes. Let the potatoes cool slightly on a sheet pan. Enjoy!

4 large portabella mushrooms or 8 baby portabella mushrooms
1/4 cup balsamic vinegar
1/2 cup pineapple juice
2 tablespoons chopped fresh ginger, peeled
black pepper (optional)
1 tablespoon chopped fresh basil

Steps:

  • Clean mushrooms with a damp cloth and remove their stems. Place in a glass dish, stemless (gill) side up.
  • To prepare the marinade, in a small bowl whisk together the vinegar, pineapple juice and ginger. Drizzle the marinade over the mushrooms. Cover and let marinate in the refrigerator for about 1 hour, turning mushrooms once.
  • Prepare a hot fire in a charcoal grill or heat gas grill or broiler. Away from the heat source, lightly coat the grill rack or broiler pan with cooking spray. Position the cooking rack 4 to 6 inches form the heat source.
  • Grill or broil the mushrooms on medium heat, turning often, until tender, about 5 minutes on each side. Baste with marinade to keep from drying out. Using tongs, transfer the mushrooms to a serving platter. Garnish with basil and serve immediately.
