- PREPARE THE PORK SKEWERS1. Trim excess fat from the pork shoulder and cut into 1 1/2 inch cubes. 2. Make a marinade by mixing the marinade ingredients. In a non-reactive container or freezer bag combine the cubed pork with the marinade. Refrigerate for at least 1 hour to overnight. Bring to room temperature before cooking. 3. Cut the onion into thick chunks similar in size to the size of the pork cubes. Thread the skewers** by alternating onions and pork. GRILLED PORK SKEWERS1. Heat your gas grill to medium-hot and lightly brush with oil before you place the skewers on. For charcoal grill wait until the coals turn white. Alternatively heat up a lightly greased grill pan or a griddle over medium-high heat. 2. Place the skewers onto the hot surface. Grill on all sides until the pork cubes are tender and nicely charred. Be patient before you lift them to turn them for the very first time - initially the meat is likely to stick to the surface and will gradually release as it begins to char. OVEN BAKED PORK SKEWERS1. Preheat your oven to 375 - 400 F depending on how strong you know it to be. Line a large baking sheet with parchment paper. Arrange the skewers on top about 1 inch apart. 2. Bake for 15-20 minutes or until the pork is tender, turning once or twice. Turn on the broiler and broil the skewers for the last couple of minutes for a nicely browned finish. Turn frequently to make sure the surface doesn't burn. Serve the skewers garnished with fresh herbs and charred lemon - a little citrusy squeeze really brightens up the flavors of the pork skewers. Remind everyone to handle them with caution - the ends will be hot!

SPICY GARLIC GINGER PORK
Slightly sweet and spicy takeout style pork recipe made with fresh ginger and garlic. Served over a bed of steamed rice with fresh chopped green onions and red pepper flakes for an extra kick.

- In a small bowl, mix vinegar, sesame oil, ginger, garlic, onion, brown sugar, soy sauce, sriracha, red pepper flakes and water.
- Heat your skillet to medium heat and pour in the sauce. Bring sauce to a light simmer and let simmer for about 10 minutes until sauce darkens. Then, carefully pour sauce back into the bowl and set aside for later.
- In a large mixing bowl, add pork and cornstarch and toss until pork is fully coated. You may need to add an additional tablespoon or two of cornstarch.
- In a small bowl, whisk egg. Pour egg over the pork and gently mix pork to coat.
- In the same skillet you cooked the sauce in, add oil and heat to medium-high heat. Once hot, carefully add pork to the skillet. Gently spread pork out into an even layer and let cook until bottom is golden. Don't panic, the pork will look weird at this point but it will all come together.
- Once the bottom of the pork is golden, flip over, gently breaking pieces apart. Cook for another 5-7 minutes on the other side until golden. Then, turn heat to low and let cook for another 5 minutes, stirring occasionally. Pork should be cooked through to at least 150 degrees.
- Drain excess oil from pan (if any) and turn heat up to high. Pour sauce over the pork and begin stirring frequently for a few minutes.
- Serve with a sprinkle with fresh chopped green onions and additional red pepper flakes(optional). Enjoy!
HOISIN-GLAZED PORK AND VEGGIE SKEWERS
Hoisin sauce infused with ginger, garlic and sesame serves as both marinade and grilling mop for these pork and veggie skewers. We love grilled citrus; the orange is great either squeezed over the skewers or saved as a treat at the end. Make the marinade again for grilled pork chops or chicken thighs.

- For the marinade and mop: Whisk together the ginger, garlic, soy sauce, vermouth, sesame oil, vinegar and sugar in a measuring cup. Pour 1/4 cup of the marinade into a small bowl, whisk in the hoisin sauce and set this basting "mop" aside.
- For the kebabs: Toss the remaining marinade with the pork in a medium bowl, then cover and chill in the refrigerator for 30 minutes.
- Carefully thread onto a skewer 1 piece of pork, 1 snow pea folded over a water chestnut slice (the pea will crack on one side, but it will help hold in the water chestnut), a piece of red pepper and a piece of baby corn; repeat twice, then end with a piece of orange, skin side facing the last baby corn. Repeat with the remaining skewers and ingredients.
- Prepare a grill for cooking over medium-high heat. Brush the skewers with the vegetable oil, and sprinkle with salt and pepper. Lightly oil the grill grates. Grill the skewers until the pork is cooked through and an instant-read thermometer inserted into the center of a piece registers 140 degrees F, 7 to 8 minutes per side. Brush the skewers with the mop, and continue grilling until the mop caramelizes, about 1 minute. Serve with iced tea.
- For the iced tea: Pour 4 cups boiling water over teabags in a heatproof pitcher and allow to brew, 3 to 5 minutes. Remove teabags and add sweetener to taste. Stir in 6 cups ice cubes until melted. Keep refrigerated until ready to use. Makes two quarts.
GARLIC PEPPER PORK SKEWERS
Ribbons of pork loin marinated in a kicky sweet sour sauce, skewered with green onions and quickly grilled. An easy do-ahead prep makes this dish ideal for a cookout without a lot of last minute fuss. Note: Minimum marinating time is included in prep time.

- Put the chicken in a bowl. In a separate bowl, whisk together the garlic, ginger, sesame oil, honey, soy sauce and lime juice. Add a third of this to the chicken and save the rest for the noodles. Mix everything together and chill overnight or for a few hours.
- Bring a saucepan of water to a simmer. Add the mangetout and cook for 1 min, then drain and rinse under cold water. Toss the cooked noodles with the mangetout, carrot, remaining marinade, coriander and sesame seeds.
- Heat the grill to medium. Thread the chicken onto three or four long skewers, put on a flat baking tray and grill for 12 mins, turning the skewers halfway, until cooked. Serve the skewers on top of a platter of the noodles with extra lime wedges for squeezing over.

- Soak 12 bamboo skewers in water for 10 minutes (this ensures skewers do not burn) then drain.
- Meanwhile, combine grated ginger in a bowl with soy sauce, sherry and sesame oil.
- Cut pork fillet into 2cm cubes. Add to the marinade tossing to coat evenly.
- Cover and refrigerate for 10 minutes.
- Thread pieces of pork on to the skewers and discard remaining marinade.
