1 (27 ounce) can sauerkraut
2 small onions, sliced thin
2 -4 tablespoons caraway seeds
2 sliced green apples
8 small red potatoes

Steps:

  • Layer 1/2 of the sauerkraut, 1/2 of the onion slices, sprinkle 1/2 of the caraway seeds and 1/2 of the apples on the bottom of the crock pot.
  • Brown (optional) the roast on top of the stove and place on top.
  • Layer the remaining ingredients (including the juice from sauerkraut).
  • Wash and pierce potatoes once and arrange around the roast.
  • Cook on low for 8-10 hours.

2 cups sauerkraut
2 tablespoons butter, divided
2 small apples - peeled, cored, and chopped
1 tablespoon white sugar
½ cup dry white wine
1 bay leaf
salt and freshly ground black pepper to taste
2 pounds boneless rolled pork loin roast
kitchen twine
1 tablespoon vegetable oil
2 onions, chopped
½ cup water

Steps:

  • Drain sauerkraut in a sieve, rinse under cold running water, and drain again.
  • Melt 1 tablespoon butter in a small pot over medium heat and cook apples until lightly softened, about 3 minutes. Add sugar and continue to cook until apple pieces start to brown on the edges and caramelize, 3 to 5 minutes. Add sauerkraut, wine, and bay leaf. Cover and simmer until flavors are well combined, about 10 minutes. Remove from heat and cool for 15 minutes. Discard bay leaf. Season with salt and pepper.
  • Unroll pork roast, pat dry with paper towels, and season with salt and pepper on both sides. Spoon the cooled apple-sauerkraut mixture in the middle of the roast. Roll the roast up and tie with kitchen twine.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat oil in a skillet over medium-high heat and saute pork roast on all sides until browned, 2 to 3 minutes per side. Move pork roast into a lidded casserole dish.
  • Melt remaining 1 tablespoon butter in the same skillet and cook onions over medium heat until soft and translucent, about 8 minutes. Stir in water. Pour water and onions around the pork roast; cover with lid.
  • Bake pork roast in the preheated oven until an instant-read thermometer inserted into the center reads 145 degrees F (63 degrees C), basting with its juices a couple of times, 1 1/2 to 2 hours.
  • Remove pork roast from casserole dish, untie kitchen twine, and cover with 2 layers of aluminum foil. Allow to rest in a warm area for 10 minutes.
  • Pour juices from casserole dish into a small pot and puree with an immersion blender until smooth. Season with salt and pepper and serve with the roast.

This is a great recipe for people who think they don't like sauerkraut, as it's very mild and sweet prepared this way. I never would have thought of using wine in a sauerkraut dish, but it's great. Source lost in the mists of time.

4 pork chops
olive oil or butter
1 lb sauerkraut, rinsed with fresh water and drained
1 large tart apple, peeled, cored and diced
1 medium onion, chopped
1 cup riesling wine

Steps:

  • Salt and pepper the chops and brown them in hot oil or butter, about 3 minutes per side. Set aside.
  • Add the apple and onions to the same skillet and cook for about 5 minutes, until the onion starts to look golden.
  • Add the wine and stir, scraping up all the browned bits, and cook for an additional 3 minutes.
  • Stir in the sauerkraut, and place the chops on top, including any juices that have collected. Cover the skillet, lower the heat and cook until the chops are done, about 7 minutes, depending on thickness. Do not overcook.
  • Note1: I've also made this successfully with chardonnay, but riesling is the best.
  • Note2: Sauerkraut packed in plastic bags and sold in the refrigerator case tastes much better than the canned.

2 Granny Smith apples, sliced
½ large onion, coarsely chopped
1 tablespoon caraway seeds
1 cup apple cider, divided
¼ cup brown sugar

1 teaspoon garlic powder
¼ teaspoon ground black pepper
1 (5 pound) boneless pork loin roast

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Mix sauerkraut, apples, onion, and caraway seeds in a large roasting pan. Stir 1/4 cup apple cider and brown sugar together in a separate bowl; pour over sauerkraut mixture.

1 (2-pound) boneless center cut pork loin, trimmed and tied
Kosher salt and freshly ground black pepper
1 medium onion, thickly sliced
2 carrots, thickly sliced
2 stalks celery, thickly, sliced
3 cloves garlic, smashed
3 sprigs fresh thyme
3 sprigs fresh rosemary
4 tablespoons cold unsalted butter
2 apples, such as Cortland or Rome peeled, cored and cut into 8 slices
2 tablespoons apple cider vinegar
1 cup apple cider
2 tablespoons whole grain mustard

Steps:

  • Preheat the oven to 400 degrees F.
  • In a large ovenproof skillet heat the vegetable oil over high heat. Season the pork loin all over generously with salt and pepper. Sear the meat until golden brown on all sides, about 2 to 3 minutes per side. Transfer the meat to a plate and set it aside.
  • Add the onion, carrot, celery, garlic, herb sprigs, and 2 tablespoons of the butter to the skillet. Stir until the vegetables are browned, about 8 minutes. Stir in the sliced apples, then push the mixture to the sides and set the pork loin in the middle of the skillet along with any collected juices on the plate. Transfer the skillet to the oven and roast the loin until an instant-read thermometer inserted into the center of the meat registers 140 to 150 degrees F, about 30 to 35 minutes. (See Cook's Note.)
  • Transfer the pork a cutting board and cover it loosely with foil while you make the sauce. Arrange the apples and vegetables on a serving platter and set aside. Remove and discard the herb sprigs. Return the skillet to a high heat and add the vinegar scraping the bottom with a wooden spoon to loosen up any browned bits. Reduce by half then add the cider and reduce by about half again. Pull the skillet from the heat and whisk in the mustard, and the remaining 2 tablespoons of cold butter. Adjust the seasoning with salt and pepper, to taste.
  • Remove the strings from the roast and slice into 1/2-inch thick pieces and arrange over the apple mixture. Drizzle some sauce over meat and serve the rest on the side.
  • Cook's Note: Pork cooked this way will be slightly pink. If desired, cook the pork to 160 degrees F, but be aware that this lean cut will not be as moist at the higher temperature.

2 tablespoons olive oil
3 to 4-pound pork loin roast
1 teaspoon salt
1 teaspoon pepper
1 large onion, chopped or sliced
2 apples, chopped or sliced
2 garlic cloves, minced
1 tablespoon chopped fresh sage
2 teaspoons caraway seeds
2 cups sauerkraut (from 25-ounce jar)
2 to 4 tablespoons brown sugar
1 cup beer or apple cider
2 tablespoons butter, softened
2 tablespoons flour

Steps:

  • Preheat the oven to 350°F.
  • Season the pork loin with salt and pepper. Place some oil in a large Dutch oven or ovenproof pot. Heat it on the stove-top over medium-high heat. Add the pork roast and sear it on all sides until it is golden brown. Remove the roast from the pot and set it aside.
  • Add the onion and apple to the pot. Cook until softened then add the garlic, sage, caraway, sauerkraut, brown sugar, and beer (or apple cider).
  • Return the pork roast to the pot. Place the lid on the Dutch oven and transfer it to the preheated oven. Bake for 1-1/2 to 2-1/2 hours (30-35 min./pd.) or until a meat thermometer reaches 145°F (see notes).
  • When the pork is finished cooking, remove the roast from the pot and strain the juices into a saucepan. If you don't have 2 cups of liquid then add enough liquid to make 2 cups (you can use chicken broth, beer, apple cider, wine, or water).
  • Mash the butter and flour together in a small dish until it is a thick paste.
  • Heat the juices over medium-high heat and whisk in the flour paste. Stir while simmering until thick.

flour, to coat

onion soup mix, 1/2 packet
1 cup applesauce or 2 apples
1 teaspoon brown sugar
1/4 teaspoon ginger
1/2 cup apple juice, separated in half

Steps:

  • *If using fresh apples, peel, core and dice the apples. Simmer in a little apple juice or water, covered until soft. Mash with a potato masher and you have easy, fresh, homemade applesauce!
  • Pat pork loin dry. Season generously on both sides with salt & pepper and then with the pork seasoning. Let sit for 15-30 minutes at room temperature
  • Sprinkle the roast on both sides with flour to coat.
  • Preheat oven to 325.
  • Heat oil or butter over medium-high heat, add loin and brown on all sides.
  • Add undrained sauerkraut to an oven dish and place loin on top.
  • Add applesauce, onion soup mix, brown sugar and ginger to the skillet used to cook the pork. Mix well and spoon over the top of the pork.
  • Pour 1/4 cup of the apple juice to the bottom of the pan, over the sauerkraut.
  • Cover dish with foil and bake for 30 minutes, basting halfway through.
  • After 30 minutes, remove foil, add the other 1/4 cup of apple juice, baste again and cook for 15 more minutes, uncovered.
  • Remove from oven and let pork sit for 10-15 minutes before slicing.
  • Slice and serve over the sauerkraut.

1 pork tenderloin, approx 1 lb., seasoned to taste with kosher salt and freshly ground pepper
1-2 Tbs. olive oil
1/4 cup white wine
1/3 cup dried cranberries
2 apples, skin-on, cored and cut into 1/2" cubes
2 cups sauerkraut, drained (we love Hogan Family Farms Sauerkraut!)
8 strips center-cut bacon, chopped
2 cups sliced leeks, white portion only
1 medium or 2 small sweet potatoes, peeled and cut into 1/2" cubes
1/2 cup white wine
1/3 cup packed dark brown sugar
1 tsp. caraway seeds

Steps:

  • In a medium mixing bowl, combine the dried cranberries with 1/4 cup white wine; cook in the microwave for 1 minute on full power to let the cranberries plump in the wine; remove from the microwave and stir in the chopped apples and sauerkraut; reserve.
  • Preheat the oven to 400 degrees F.
  • In a large heavy-bottomed skillet over medium-high heat, add 1-2 Tbs. olive oil; when the oil is hot, add the seasoned pork tenderloin to the skillet, browning nicely on all sides. Remove the pork tenderloin to a platter and reserve.
  • In the same skillet, cook the chopped bacon with the leeks over medium heat for 8-10 minutes or until the bacon is browned and beginning to crisp, stirring occasionally. Stir the sweet potato cubes into this mixture during the last 5 minutes of cooking time.
  • Add the reserved cran-apple mixture, 1/2 cup white wine, brown sugar, and caraway seeds to the bacon/sweet potato mixture in the skillet; gently toss to combine.

  • Place the skillet into the preheated oven and cook for 15-20 minutes, or until the pork tenderloin is 140-145 degrees at the center when tested with an instant-read meat thermometer, and the sweet potatoes are fully tender.
  • Remove the skillet from the oven and tent loosely with foil to rest for 5-10 minutes.

4 tablespoons unsalted butter
2 crisp cooking apples (such as Gala, Cameo or Golden Delicious), sliced
1 medium onion, sliced
1/2 teaspoon caraway seeds
Kosher salt and freshly ground pepper
1 pound sauerkraut, rinsed, drained and squeezed dry
1/2 cup apple cider
1/2 cup chicken stock
8 pork scallopini or thin cutlets (about 11/2 pounds)
2 teaspoons paprika
1/4 cup chopped fresh parsley

Steps:

  • Melt 2 tablespoons butter in a large skillet over medium heat. Add the apples, onion, caraway seeds, 1/4 teaspoon salt and a few grinds of pepper. Cook, stirring occasionally, until the apples start browning around the edges, about 4 minutes. Add the sauerkraut and cook until the excess liquid evaporates, about 2 minutes. Add the apple cider and chicken stock and bring to a simmer. Reduce the heat to medium low and cook until the apples and onion soften, about 8 minutes.
  • Meanwhile, season the pork with the paprika, 1 teaspoon salt and a few grinds of pepper. Melt the remaining 2 tablespoons butter in a separate large skillet over medium heat. Working in two batches, cook the pork until browned and just cooked through, 1 to 2 minutes per side. Transfer to a plate. Serve the pork with the sauerkraut mixture; top with the parsley.
