1 large pork tenderloin (1 1/4 to 1 1/2 pounds), trimmed
3 tablespoons packed light brown sugar
1 teaspoon dried sage
2 cloves garlic, minced
Kosher salt and freshly ground black pepper
2 sweet potatoes (about 1 1/2 pounds), cut into 1/2-inch wedges
1 red onion, cut into 1/2-inch wedges
3 tablespoons extra-virgin olive oil
Pinch of cayenne pepper
1 cup low-sodium chicken broth
2 teaspoons dijon mustard
2 tablespoons chopped fresh chives

Steps:

  • Position a rack in the upper third of the oven; preheat to 450 degrees F. Pierce the pork all over with a fork. Combine the brown sugar, sage, garlic, 3/4 teaspoon salt and a few grinds of black pepper in a bowl; rub all over the pork.
  • Toss the sweet potatoes and onion with 2 tablespoons olive oil and the cayenne on a baking sheet; season with salt and black pepper. Roast, tossing once, until golden, 20 minutes; set aside.
  • Heat the remaining 1 tablespoon olive oil in a large nonstick skillet over medium-high heat. Add the pork and cook, turning, until golden, 5 minutes; transfer to the baking sheet with the vegetables (reserve the skillet). Roast until the sweet potatoes are tender and a thermometer inserted into the center of the pork registers 145 degrees F, 11 to 13 minutes.
  • Meanwhile, add the broth to the skillet; bring to a simmer over medium heat, scraping up any browned bits with a wooden spoon. Stir in the mustard, chives and a few grinds of black pepper. Slice the pork; drizzle with the pan sauce. Serve with the roasted vegetables.

2 lbs pork tenderloin
3 large sweet potatoes, peeled and cubed
2 firm ripe bosc pears, not peeled and cut into 6 wedges
1 medium Spanish onion, sliced thin
2 tablespoons extra virgin olive oil
2 tablespoons fresh rosemary, chopped
1 teaspoon garlic salt
2 teaspoons dried sage
1/2 teaspoon coarse black pepper

Steps:

  • Preheat oven to 450 degrees.
  • Parboil potatoes to soften slightly.
  • Spray baking dish with cook spray.
  • Season the pork tenderloin on all sides with garlic salt and pepper.
  • Add the pork tenderloins and surround with sweet potatoes and pears.
  • drizzle oil over vegetables.
  • Sprinkle rosemary and sage over pork tenderloin (I actually flip the tenderloins so that the herbs are on all sides).
  • Cook in oven for 25-35 minutes.
  • Let rest out of oven for 10 minutes before slicing.

3 1/2 pound bone-in pork center loin roast (trimmed)
1 tablespoon olive oil
1 tablespoon fresh rosemary (chopped)
salt and pepper
6 medium sweet potatoes (peeled and cut into sixths)
3 firm Bosc pears (cut lengthwise into quarters and cored)
12 ounces apple juice

Steps:

  • Preheat oven to 450 degrees Fahrenheit. Rub pork with oil. Mix rosemary, 3/4 teaspoon salt and 1/2 teaspoon pepper together and rub over pork.
  • Place pork, bone side down, in a roasting pan and roast 15 minutes.
  • Reduce temperature to 350 degrees. Roast 15 minutes more.
  • Add sweet potatoes and pear slices. Tossing to coat with pan juices. Spread evenly as possible around roast.
  • Roast, occasionally stirring sweet potatoes and pears until food thermometer in center of pork reaches 145 degrees and potatoes and pears are tender, about 1 hour.
  • Transfer pork to a carving board. Allow pork to stand for 15 minutes.
  • Place potatoes and pears in an oven-safe bowl and cover with foil to keep warm in the oven.
  • Heat roasting pan over high heat on stove. Add apple juice and scrape brown bits with a wooden spoon and boil until reduced to 3/4 cup. Serve as sauce for pork.
  • Carve pork and serve with potatoes and pears, a sprinkle of fresh rosemary and drizzle of sauce.

2 large pears , quartered and cored (leave the skin on)

2 pounds boneless pork loin roast
¼ cup olive oil
½ cup white wine

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Crush garlic with rosemary, salt and pepper, making a paste. Pierce meat with a sharp knife in several places and press the garlic paste into the openings. Rub the meat with the remaining garlic mixture and olive oil.
  • Place pork loin into oven, turning and basting with pan liquids. Cook until the pork is no longer pink in the center, about 1 hour.
