Recipe VIDEO above. "Thit Kho To" - Tender pork in a sweet savoury glaze that has quite an intense flavour. Though made using coconut water as the broth, but it doesn't have a coconut flavour at all! It looks so unimpressive right up until the end when it magically transforms into sticky caramelised pork pieces!

1/2 cup / 100g brown sugar, tightly packed
1 tbsp water
1 kg / 2 lb pork shoulder ((butt) or boneless skinless pork belly, cut into 3 cm / 1.2" pieces (Note 1a))
1.5 cups / 375 ml coconut water ((Note 1b))
1 eschallot / shallot (, very finely sliced (Note 2))
2 garlic cloves (, minced)
1 1/2 tbsp fish sauce
1/4 tsp white pepper
Red chilli and finely sliced shallots/green onions

Steps:

  • Place sugar and water in a large pot over medium heat. Stir, then when it bubbles and the sugar is melted (it looks like caramel), add the rest of the ingredients.
  • Stir, then adjust the heat so it is simmering fairly energetically. Not rapidly, not a slow simmer (I use medium heat on a weak stove, between medium and low on a strong stove).
  • Simmer for 1.5 hours, uncovered. Stir once or twice while cooking.
  • At around 1.5 hours, when the liquid has reduced down and the pork is tender, (see Note 3 if pork is not yet tender), the fat will separate (see video).
  • Stir and the pork will brown and caramelise in the fat.
  • Once the liquid is all gone and it's now stuck on the pork pieces, it's ready.
  • Serve over rice, garnished with fresh chilli and shallots. Simple pickled vegetables are ideal for a side because the fresh acidity pairs well with the rich pork.

Recipe video above. An exciting way to use ground meat (mince) to make a quick stir fry that taste unbelievable! This is great made with chicken, turkey or pork. It also works with beef though it is better made with "white meats". Serve it over rice or vermicelli noodles to make rice bowls with shredded lettuce, carrots and cucumbers on the side (very classic Vietnamese meal!).

1 1/2 tbsp cooking oil ((I use peanut oil))
1/2 onion (, finely diced (brown, white or yellow) (~1/2 cup))
2 tsp ginger (, grated or minced)
2 garlic cloves (, minced (2 tsp paste))
1 birds eye or Thai chili (, deseeded and finely chopped (Note 1))
1 lb / 500g ground pork ((mince) (Note 2))
5 tbsp brown sugar
2 tbsp fish sauce
1 green onion (stem , finely sliced)
Rice
Sliced red chilli, tomato, cucumber ((optional))

Steps:

  • Heat the oil in a large skillet over high heat.
  • Add the onion, ginger, garlic and chili and cook for 2 minutes.
  • Add the pork mince and cook for 2 minutes or so until white all over, breaking up the meat with a wooden spoon.
  • Add the sugar and fish sauce. Stir, then leave it to cook without touching until all the juices cook out and the pork starts caramelised - about 2 minutes. Then stir it and leave it again, without stirring, for around 30 seconds to get more caramelisation. Repeat twice more until caramelised to your taste.
  • Serve over rice or vermicelli noodles, garnished with sliced scallions/shallots. For a low carb, low cal option, try Cauliflower Rice! I like to have chunks of plain cucumber and carrots on the side which is a classic way of making Vietnamese bowls.

CARAMELIZED PORK LOIN

1 stick butter
1/4 cup packed brown sugar
Pinch ground cinnamon
3 Granny Smith apples, peeled, cored and 1-inch diced
1 (5-pound) center cut, bone-out pork loin, butterflied
Salt and freshly ground black pepper
2 tablespoons vegetable oil
1/2 cup apple cider

Steps:

  • Preheat oven to 375 degrees F.
  • Melt the butter in a large skillet over medium-high heat. Add the brown sugar, cinnamon and diced apples and toss to coat. Saute 3 minutes, without stirring to let the apples caramelize on 1 side. Toss and saute another 3 minutes. Remove from the heat and cool completely.
  • Butterfly the tenderloin by cutting the beef lengthwise down the center to within 1/2-inch of the other side. Flatten with a meat mallet.
  • When the caramel apples have cooled spread the mixture down the center flap of pork. Sprinkle with salt and pepper, to taste. Spoon the apple mixture down the center of the pork roast. Bring the 2 sides of the tenderloin up around filling to meet. Use butcher string and tie around the roll at 1-inch intervals.
  • Season the stuffed and tied pork loin with salt and pepper. Sear the pork loin in vegetable oil in a large Dutch oven over medium-high heat, turning to get all the sides. Pour the apple cider over the pork. Roast uncovered for about 1 hour and 20 minutes or until an instant-read thermometer inserted into the center of the roast registers155 degrees F.
  • Remove from the oven and let rest, tented with foil, for 15 minutes before slicing. Serve with pan juices.

4 ounces sugar
1 1/2 ounces vinegar
6 ounces root beer
1 pound cherries, de-seeded
4 (8-ounce) pork tenderloins, cleaned
2 ounces olive oil
2 ounces pistachio oil
4 Belgium endive, cored and cut into long strips
3 ounces pistachios, whole peeled and roasted

Steps:

  • In a pan, heat the sugar over medium heat until it caramelizes to a deep brown color. Add the vinegar and stir with a wooden spoon. Add the root beer and allow to cook for 5 minutes. Add the cherries and allow to cook for an additional 5 minutes. Remove pan from heat, transfer to a clean container and allow to cool to room temperature.
  • Cook the pork tenderloins in a saute pan in the olive oil on medium-high heat. Cook until done yet still moist, approximately 20 minutes.
  • In a separate pan, heat the pistachio oil and saute the endive and pistachio nuts until the endive is just wilted, about 5 minutes. Transfer onto a paper towel to absorb the excess oil.
  • To serve, reheat the pork, cut into medallions and place on each plate. Spoon some of the cherries on top, allow some of the juice to form the sauce and arrange the endive and pistachio nuts on top.

1 ½ tbsp groundnut oil
500g pork shoulder steaks , cut into bite-sized chunks
2 shallots , finely chopped
1 tbsp finely grated ginger
1 red chilli , deseeded and finely chopped
75g brown sugar
1 tbsp fish sauce , plus extra to taste
1-2 tsp chilli sauce (we used sriracha)
4 spring onions , halved and shredded lengthways
steamed rice , to serve
pak choi , to serve

Steps:

  • Heat 1 tbsp of the oil in a wok over a high heat and stir-fry the pork in batches until browned all over. Remove with a slotted spoon and set aside.
  • Turn the heat right down and add the remaining oil, then stir in the shallots, ginger and chilli. Cook over a low heat for a couple of mins until just starting to soften. Add the sugar, fish sauce and 200ml water to the pan and stir everything together. Bring to the boil, stirring, so that the sugar dissolves, then return the pork to the pan. Bubble vigorously for 8-10 mins until the sauce thickens to coat the meat and become glossy. Taste and stir in a little more fish sauce, if needed, along with the chilli sauce. Sprinkle with the spring onions and serve with steamed rice and pak choi.

500g pork fillets , sliced into medallions
200ml reduced-salt chicken stock
1 tbsp wholegrain mustard
1 tbsp chopped sage leaves

  • Heat half the oil in a large frying pan. Core and cut the apples into wedges, then cook for about 10 mins until caramelised and softened. Remove from the pan and set aside. Heat the remaining oil. Fry the pork on each side for 2 mins. Add the stock and mustard to the pan, then bubble for 5 mins or until the pork is cooked through. 2 (450 g) pork fillets
1 tablespoon olive oil
50 g granulated sugar
salt and pepper
2 tablespoons white wine vinegar
1 teaspoon tomato puree
5 fluid ounces chicken stock
1 teaspoon butter
1 dash Worcestershire sauce
1 dash Tabasco sauce

Steps:

  • Pre - heat oven 200C / 400F / Gas6.
  • Season pork fillets with salt and pepper.
  • Coat the pork fillets in sugar. Add to a frying pan with hot oil.
  • As the pork caramelizes turn to get an even colour. Once done put into the pre heated oven for 12-15 minutes ( 6-8 minutes longer for well done ). Remove once cooked and leave to rest.
  • To make the sauce add white wine vinegar to a pan and reduce. Add Tomato puree or ketchup plus the chicken stock. Bring to a boil and cook for a few minutes. To finish if required add butter Worcestershire and Tabasco sauce.
  • To serve slice fillets and serve with a little sauce.
