BRAISED PORK CHOPS WITH SAGE

Steps:
- Combine the sugar and 1/4 cup salt in a shallow bowl; whisk in 3 cups water. Pierce the pork all over with a fork, then add to the bowl and soak 10 minutes. Remove and pat dry.
- Put the flour on a plate. Season the pork with pepper, then dredge in the flour. Heat the olive oil in a large cast-iron skillet over medium-high heat; add the pork and cook, undisturbed, until golden on the bottom, 5 minutes. Add the sage to the skillet; flip the pork chops so they rest on top of the sage. Scatter the garlic, lemon slices and pepperoncini around the pork. Cook, undisturbed, until golden on the other side, about 5 more minutes.
- Add the tomatoes, chicken broth and 1/2 cup water to the skillet and reduce the heat to medium low. Simmer, flipping the pork halfway through, until the liquid is reduced by half and the meat is tender, about 15 minutes. Serve with the couscous; top with the parsley.

SAGE PORK CHOPS
These chops are so easy to make, but they taste like you've slaved over them for hours! Serve with roasted red potatoes and vegetables, if desired.

- Combine the salt, sage and black pepper in a small bowl and rub on both sides of the chops. Melt the butter or margarine in a large skillet over medium high heat and saute the chops for 5 minutes per side, or until well browned.
- Meanwhile, in a separate small saucepan over high heat, combine the water and the bouillon and stir until bouillon dissolves. Add this to the chops, reduce heat to low, cover and simmer chops for 45 minutes.

SAUTEED PORK CHOP WITH SAGE-CIDER CREAM SAUCE
Steps:
- Pat chop dry and season with salt and pepper. Heat oil in an 8- to 10-inch heavy skillet over moderately high heat until hot but not smoking, then brown chop, turning over once, 5 to 6 minutes total. Transfer with tongs to a plate.
- Pour off all but 1 teaspoon fat from skillet and reduce heat to moderate, then cook onion, stirring occasionally, until softened and golden brown, 2 to 4 minutes. Add vinegar and boil until liquid is evaporated, about 3 seconds.
- Return chop to skillet along with any juices accumulated on plate, then add water, cream, and sage and simmer, covered, without turning, until thermometer inserted horizontally into center of chop (avoid bone) registers 150°F, 5 to 6 minutes. Transfer chop to a clean plate, then simmer sauce, uncovered, stirring, until liquid is reduced to about 3 tablespoons, 1 to 2 minutes. Stir in parsley and salt and pepper to taste. Spoon sauce over chop.

- Season pork generously with salt and pepper. In a large skillet, heat oil and butter over medium; add pork. Cook until browned and opaque throughout, 3 to 4 minutes per side. Transfer to a plate, and cover loosely with aluminum foil to keep warm.
- Make sauce: Add shallot to skillet; cook over medium, stirring until softened, 1 to 2 minutes. Add sage, thyme, and wine. Simmer until sauce is reduced to about 1/3 cup, 2 to 3 minutes; stir in any accumulated juices from plate with meat. Transfer chops to plates, drizzle with sauce, and serve with Parmesan Rice.
PORK CHOPS IN TOMATO SAGE SAUCE
This is a recipe I adapted from a 1991 Cooking Light recipe that I have continued to make for the past 15 years. It is a favorite!

Steps:
- Heat 4 T. oil and 2 T. butter in heavy medium skillet over medium high heat.
- Add tomatoes, reserving juice and dried sage. Cook until thickened to saucelike consistency, stirring frequently, about 15 minutes. Add Set aside.
- Divide remaining 2 T. oil, 2 T. butter and whole sage leaves between 2 heavy large skillets.
- Cook mixture over medium-high heat until butter melts.
- Add 2 chops to each skillet. Cover and cook until brown, turning frequently, about 10 minutes.
- Add 1/4 cup wine to each skillet. Boil uncovered until reduced to a glaze, about 5 minutes.
- Divide tomato sauce between pans, spreading over chops.
- Reduce heat, cover and simmer until chops are tender, about 30 minutes longer.
- Degrease sauce; adding reserved tomato juice if you like a thinner sauce.
- Season with salt and pepper.
- Transfer chops to a platter, and spoon sauce over.
- Sprinkle with mnced sage and reserve.

- Heat 1 tablespoon of the olive oil in a large skillet over medium high heat.
- Blot the surface of the pork chops dry and sprinkle with salt and pepper. In two batches, brown the chops about 5 minutes per side. Add the remaining oil for the second batch. Transfer to a platter and cover to keep warm.
- Drain off any excess oil from the skillet and return it to the heat. Add the vinegar and chicken broth, stirring to loosen any brown bits from the bottom of the pan. Bring to a boil and reduce the liquid by half, about 3 to 4 minutes. once the liquid is thick and syrupy whisk in the butter. stir in the chopped sage and pour over the pork chops. Garnish with sage leaves.

BONELESS PORK CHOPS WITH SAGE CREAM
This is a combination of altered, unrelated recipes that turned out wonderfully. The creamy sage sauce is the real star, and could be used with other meat preparations such as roast pork, veal or why not turkey? If you're a sage fan, this one's for you. Prep time doesn't include brining.

- Place trimmed pork chops in a large, shallow casserole.
- Combine the milk and salt and pour over the chops.
- Refrigerate for at least 1 hour (maximum 4.) Turn once during the brining.
- Combine the green onions, sage, olive oil, white wine, mustard and a pinch of salt and pepper in a food processor.
- Process until it's as creamy as your machine will manage. Set aside.
- Combine the bread crumbs with a scant teaspoon of salt and plate.
- Drain chops one at a time, letting the milk drip off, then press each side in the bread crumbs.
- In a large skillet, heat the vegetable oil over medium-high heat.
- Fry the chops MAXIMUM 3 minutes per side. Don't crowd the pan; you may have to do a second batch.
- Serve the pork on top of a generous handful of undressed baby spinach (looks great on wooden boards.).
- Either drizzle the sage cream over the meat and spinach with a spoon or serve each person a small ramekin portion on the plate.
PORK CHOPS WITH PAPRIKA & SAGE CREAM
This is an old Bon Appetit recipe. It doesn't take long to make but I usually only make it for special occasions. This takes the lonely pork chop to a whole new level. (Use 3/4 t. of dried sage for fresh if needed)

- .Mix paprika 1/2 t. salt and 1/4 t. pepper in small bowl.
- Spread half of mixture on pork, pressing into both sides.
- Reserve remaining paprika mixture for sauce.
- Melt 1 T. butter with oil in heavy large skillet over medium heat.
- Add pork and brown well, about 3 minutes per side.
- Transfer pork to heated platter and cover.
- Pour off dripping. Add remaining 1 T. butter and melt. Add shallots and cook 2 minutes, stirring occasionally.
- Add remaining paprika mixture and minced sage and cook 30 seconds.
- Add wine and boil until reduced by half, scraping up browned bits.
- Reduce heat to medium.
- Stir in cream.
- Simmer until thickened slightly.
- Season with s & p.
- Spoon over chops and prepare for heaven!

- Combine 1 teaspoon sage, 1/2 teaspoon salt, and 1/2 teaspoon pepper in a small bowl. Sprinkle both sides of pork with sage mixture.
- Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add pork; cook 3 minutes on each side or until browned. Remove from heat; set aside.
- Add remaining 1 teaspoon of sage, white wine, and minced garlic to pan, scraping to loosen browned bits. Cook 1 1/2 minutes or until reduced to about 1/4 cup.
