1 cup unsweetened applesauce
1/4 cup packed brown sugar
1 tablespoon barbecue sauce
1 tablespoon Worcestershire sauce
1 garlic clove, minced
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Preheat oven to 350°. Place pork chops in a large cast-iron or other ovenproof skillet. Mix remaining ingredients in a small bowl; spoon over chops., Bake, uncovered, until a thermometer reads 145°, 20-25 minutes. Let stand 5 minutes before serving.

Number Of Ingredients 19

1 1/2 pounds baby red-skin potatoes
cut in half
1 pound green beans
trimmed and cut into 1-inch pieces
6 tablespoons extra-virgin olive oil (EVOO)
divided
Salt and freshly ground black pepper
1/4 cup (about a handful) parsley leaves
chopped
4 McIntosh apples
peeled
cored and diced
3 tablespoons light or dark brown sugar
1 cup all-natural apple juice or cider (it should look cloudy)
Zest of 1 orange
reserving the juice
1/4 cup soy sauce or tamari
4 center-cut boneless pork loin chops
about 6 to 8 ounces each and an inch thick

Steps:

  • Preheat the oven to 400F
  • Place the potatoes on a baking sheet
  • Drizzle with 2 tablespoons of EVOO and season with salt and freshly ground black pepper
  • Roast in the oven for 20-25 minutes
  • In the last 15 minutes of cooking time, add the green beans to the baking sheet with the potatoes
  • While the potatoes are roasting, combine the apples, brown sugar and apple juice in a medium-size pot over medium-high heat and cook, stirring occasionally, until a chunky sauce forms, about 10-12 minutes
  • If the sauce begins to spatter as it bubbles, reduce the heat
  • Once a sauce forms, remove the pot from the heat
  • Preheat a large skillet over medium-high heat with 2 turns of the pan of EVOO
  • In a shallow dish, combine the orange juice and zest, and the soy sauce
  • Add some salt and freshly ground black pepper
  • Dip the chops into the mixture and place in the hot pan
  • Brown and caramelize the chops for 4 minutes on each side, until the juices run clear
  • Remove the chops from the heat and let them rest a couple minutes for the juices to redistribute
  • Remove the potatoes and beans from the oven and garnish everything with parsley
  • Serve the pork chops with the applesauce, roasted potatoes and green beans alongside

GRILLED PORK CHOPS WITH CHERRY SAUCE



Grilled Pork Chops With Cherry Sauce image

If you thought pork and apples were a winning combination, just wait 'til you try pork and cherries.

4 pork loin chops, preferably bone-inand at least 1 inch thick
1 tablespoon minced fresh rosemary
1 teaspoon salt, plus more for the sauce
1 teaspoon freshly ground blackpepper, plus more for the sauce
1 teaspoon  finely minced garlic
3 tablespoons butter
1 tablespoon minced shallot
1 cup cherries, stemmed, pittedand halved
½ cup fruity red wine

Steps:

  • Pat the chops dry, and rub them all over with a mixture of the rosemary, salt, pepper and garlic. Cover, and marinate for up to 2 hours at room temperature, or overnight in the refrigerator. Bring the chops back to room temperature before grilling.
  • Heat one side of a charcoal or gas grill, and put the rack about 4 inches from the heat source. Cook the chops over the hottest part of the fi re until well seared on both sides, about 3 or 4 minutes per side. Move them to the cool part of the grill, cover and cook until done, anywhere from 1 to 10 minutes, depending on the heat of the fi re and the thickness of the chops. The pork is done when it's just fi rm to the touch, its juices run just slightly pink and the meat is rosy in the center, or when an instant-read thermometer registers 135 degrees in the thickest part of the chop (the temperature will continue to rise as the chops rest). Transfer them to a platter, cover loosely with aluminum foil and let them rest while you make the sauce.
  • Put 1 tablespoon of the butter in a skillet over medium-high heat. When the foam subsides, add the shallots, and cook until soft, 2 or 3 minutes. Add the cherries, wine and whatever juices have accumulated around the pork chops; cook, stirring occasionally, until the liquid reduces into a thin syrup, 5 or 6 minutes. Stir in the remaining 2 tablespoons butter, a little at a time, until it's incorporated into the sauce. Season with salt and pepper. Pour the sauce over the chops, and serve.

¼ cup chopped onion
1 apple - peeled, cored, and sliced
2 (1/2-inch thick) pork chops
¾ cup applesauce
2 tablespoons brown sugar
½ teaspoon ground mustard
⅛ teaspoon ground cinnamon
½ teaspoon salt
ground black pepper to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Melt butter in a large skillet over medium heat; cook and stir onion and apple slices in the melted butter until tender, about 5 minutes. Transfer onion and apple to a bowl.
  • Place pork chops in the same skillet; cook over medium heat until pork chops are browned on both sides, about 5 minutes per side.
  • Mix applesauce, brown sugar, mustard, and cinnamon into onion and apple mixture.
  • Place pork chops in a 9x9-inch baking dish; season with salt and black pepper. Spoon applesauce mixture over pork chops; cover dish.
  • Bake in the preheated oven until pork chops are no longer pink in the center, about 30 to 45 minutes. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).

2 tomahawk pork chops (about 1/2 pound each)
2 tsp salt (smoked salt is even better, if you have it!)
1 tsp paprika
1/2 tsp onion powder
1/2 tsp garlic powder
1/4 tsp black pepper

Steps:

  • Pat the pork chops dry with a paper towel and coat on all sides with dry rub. Rest for 30 minutes.
  • Arrange a rack in the middle of the oven and pre heat to 400°F (204°C).
  • Heat a large oven-safe skillet over high heat. Sear the meat on one side, about 3 minutes. Then flip the chop over and put the skillet in the oven.
  • Bake the pork chops for about 6-10 minutes. It's best to have a probe thermometer inserted into the meat (not touching the bone). When the temperature reaches 135 degrees F, remove the chops.
  • Add a pat of butter on top of the meat and rest it for 10 minutes.

2 cups milk
3 teaspoons salt
8 (1/2-inch-thick) pork chops (with or without bone; 2 lb total)
3 1/2 cups fresh bread crumbs (from 10 slices firm white sandwich bread, ground in a food processor)
1 tablespoon minced garlic
2 teaspoons chopped fresh rosemary or 1/2 teaspoon dried, crumbled
2 teaspoons chopped fresh thyme or 1/2 teaspoon dried, crumbled
2 to 3 tablespoons vegetable oil
2 to 3 tablespoons unsalted butter
For applesauce
3 lb mixed McIntosh and Gala apples
1/4 cup water

1 Turkish or 1/2 California bay leaf
1/4 teaspoon ground allspice

Steps:

  • Marinate pork chops:
  • Stir together milk and 2 teaspoons salt in a shallow 3-quart dish, then add pork chops. Marinate, covered and chilled, turning over once, at least 1 hour.
  • Make applesauce while chops marinate:
  • Peel, core, and coarsely chop apples, then stir together with remaining applesauce ingredients in a 3-quart heavy saucepan. Bring to a simmer, stirring occasionally, then reduce heat to moderately low and cook, covered, stirring occasionally, until apples are falling apart, 15 to 20 minutes. Discard bay leaf and mash apples with a fork. Keep applesauce warm, covered.
  • Fry pork chops:
  • Preheat oven to 200°F.
  • Stir together bread crumbs, garlic, rosemary, thyme, and remaining teaspoon salt in a shallow bowl.

BRADY BUNCH PORK CHOPS

I think this recipe is an absolute gem. Really, in all my years of cooking, I don't think I have ever made chops as delectable as these! Crispy-crunchy on the outside, meltingly tender and moist on the inside. The key, I think, is the salty milk marinade/brine, and making sure not to overcook them. Thanks to Gourmet Magazine for this one.

2 cups 1% low-fat milk
2 teaspoons salt
2 lbs boneless pork chops (8 in total, about 1/2 inch thick)
3 1/2 cups fresh breadcrumbs
1/2 teaspoon garlic powder
1/2 teaspoon dried rosemary
1/2 teaspoon dried thyme
1 teaspoon salt
2 tablespoons olive oil
2 tablespoons butter

Steps:

  • In a large shallow dish, like a 9x13 pan, stir together milk and first amount of salt.
  • Add pork chops (you could use bone-in chops, if you wish) and marinate (if you want to call it that; it's more of a milk brine methinks), covered and in fridge, for at least one hour (maximum 4 hours).
  • Turn chops once, halfway through marinating/brining time.
  • When ready to cook chops, preheat oven to 200F and have ready an ovenproof platter.
  • In a shallow dish (like a pie plate), combine freshly made bread crumbs (grind bread in food processor to make crumbs; you'll need about 8 slices) with garlic powder, rosemary, thyme and remaining amount of salt.
  • Remove chops from milk and let excess milk drip off, then dredge chops in bread crumbs, lightly patting crumbs onto both sides of chops so they adhere.
  • Place breaded pork chops on a tray, keeping chops in one layer.
  • In a large 12-inch skillet over high heat, place butter and oil.
  • Saute chops, 2 1/2 to 3 minutes per side only.
  • DO NOT OVERCOOK, do not crowd chops in skillet, and turn only once; chops should be golden brown and just cooked through.
  • Place cooked chops on platter and keep warm in preheated oven.
  • Cook remaining chops (you may have to do 3 batches, depending on the size of your pan and how many chops you do); add more oil and butter to pan if necessary (it likely will be).
  • I recommend serving with applesauce.

1/2 tsp dried sage
1/2 tsp dried thyme

1 tsp butter
2 tbsp flour (leave out for gluten free)
1/2 cup apple sauce for serving on the side

Steps:

  • Season pork chops with paprika, garlic powder, sage, thyme, salt and fresh pepper to taste.
  • Place flour on a small flat plate and lightly pat the chops with flour, shaking off any excess flour so they are lightly coated.
  • Heat a large skillet over medium heat and add butter when the pan is hot.
  • When the butter melts, place chops in the skillet and cook 3 1/2 to 4 minutes.
  • Turn over and cook an additional 3 - 4 minutes, or until the internal temp is 145° F.
  • Remove from the pan and set on a platter to rest for three minutes.

  • Marinate pork chops.

I'm showing you how easy it is to bake pork chops (and keep them tender and juicy) in the oven with this recipe for Applesauce Baked Pork Chops, served with roasted potatoes, sweet potatoes and onions for a complete meal.

4 boneless pork chops (1 to 1 1/2 inches thick)
1 large sweet onion (thickly sliced)
1 large sweet potato (peeled and cut into wedges)
2 large russet potatoes (peeled and cut into wedges)
2 tbsp vegetable oil
1 tsp salt
1 tsp smoked paprika
1/4 tsp cayenne pepper
3/4 cup unsweetened applesauce
1/4 cup steak sauce
1/4 cup honey
1 tbsp yellow mustard
1 tsp salt

Steps:

  • Preheat oven to 425 degrees F. Line a sheet pan with parchment paper.
  • Toss the onions, sweet potatoes and potatoes together on the pan lined with parchment paper. Drizzle the oil over the potato and onion mixture and sprinkle evenly with the one teaspoon of salt, smoked paprika and cayenne pepper. Toss gently to coat. Roast the potatoes in the oven for 20 minutes.
  • Meanwhile, whisk together the applesauce, steak sauce, honey, mustard and remaining teaspoon of salt together. Pour evenly over the pork chops being sure to coat both sides.
  • Remove the potatoes and onions from the oven. Gently push them to the edges of the pan so there is enough room in the center of the pan for the pork chops.
  • Place the pork chops in the center of the pan, topping each chop with more of the applesauce mixture.
  • Place the pan back in the oven and bake the chops for 10 minutes.
  • Increase the temperature to 500 degrees, rotate the pan and bake for 5 minutes more.
  • Remove the pan from the oven and check the temperature of each pork chop with an instant read digital thermometer. Continue to bake a few more minutes (if necessary) until the internal temperature of each chop reaches 145 degrees F. Do not over cook!
  • Allow the chops to rest for five minutes before serving.

BRAMLEY APPLE SAUCE



Bramley Apple Sauce image

Perfect in every way. Slightly tart with just a hint of sweetness. The perfect condiment to go with pork.

3 Bramley apples, peeled cored and sliced (or the equivalent of another cooking apple)
50g caster sugar (1/4 cup)
50g butter (3 1/2 TBS)
1 tsp lemon juice
1 bone in pork chop per person
salt, pepper, dried sage and onion granules
2 TBS of fine dry bread crumbs per chop
butter to dot
apple juice

Steps:

  • Tip all of the ingredients into a pan. Cover with a lid. Cook over low heat for about 15 minutes, or until the apples are very soft and have broken down. Beat with a fork. Serve immediately or tip into a bowl, cover and chill until needed.
  • Preheat the oven to 200*C/400*F/ gas mark 6. Cut the fatty edge of the chop (s) with some kitchen scissors at 1/3 inch intervals and place it/them onto a baking sheet with a raised edge, which you have lined with foil and buttered. the size of baking sheet depeds on how many chops you are cooking. Obviously if you are only cooking one or two you will want a smaller baking tray.
  • Dust the top surface of each chop with some salt, pepper, sage (rubbed between your fingertips) and onion granules to taste. Then sprinkle a tablespoon of bread crumbs evenly over top of each one. Dot with butter. Pour apple juice into the baking tray evenly around the chops, trying not to disturb the crumbs on top.
  • Place the tray into the oven and bake for 15 to 20 minutes, checking to make sure the apple juice does not boil dry in the pan. Once the crumbs have begun to brown on top, remove the pan from the oven.
  • Carefully turn each chop over without disturbing the crumb topping and repeat the process for seasoning and crumbing on the underside. If you need more juice in the pan, once again pour it around the chops.
  • Return the pan to the oven and cook for another 15 to 20 minutes, until nicely browned on top and the juices have thickened into a bit of a sauce. Check every 5 to 6 minutes or so to make sure the pan is not going dry and top up with more juice if need be. Serve hot with some of the pan juices spooned over top. Fabulous!

4 apples, granny smith
2 tsp lemon juice
1 piece fresh ginger root (one inch)
3 Tbsp light brown sugar
2 c all natural apple juice
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
PORK CHOPS
4 thick center cut boneless pork chops (one inch thick)
1 c milk
1 1/2 tsp salt
1 3/4 c panko bread crumbs
1 Tbsp minced garlic
2 tsp fresh rosemary
1/2 tsp dried thyme
2 Tbsp vegetable oil
2 Tbsp unsalted butter

Steps:

  • 1. Marinate pork chops in milk with one teaspoon of salt in a covered container, refrigerated, turning once for at least one hour
  • 2. Peel, core, and coarsely chop apples, then stir together with remaining applesauce ingredients in a heavy 3 quart saujcepan
  • 3. Boil apples, stirring occasionally until a chunky sauce forms
  • 4. Reduce heat to moderately low and cook covered, stirring occasionally, until apples are soft (about 12 - 15 minutes)
  • 5. Discard ginger and mash apples with a potato masher, then keep applesauce covered and warm till serving time
  • 6. Mix panko, garlic, rosemary, thyme, and remaining 1/2 teaspoon of salt in a shallow dish
  • 7. Using tongs or a fork, remove chops from marinade one at a time allowing milk to drip off, then coat in panko mixture and transfer single layer to a plate or tray
  • 8. Heat butter and oil in a 12-inch heavy skillet over moderately high heat until foam subsides
  • 9. Brown chops turning over once, until golden brown on both sides. Reduce heat to medium low, cover, and cook till done. Serve pork chops with warm applesauce

2 pounds Golden Delicious apples, peeled and chopped
3 tablespoons sugar
1 tablespoon fresh lemon juice
1 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon dried sage
4 bone-in pork chops (1/2-inch thick; about 6 ounces each)
Kosher salt and freshly ground pepper
2 tablespoons vegetable oil
1/2 cup low-sodium chicken broth
2 tablespoons fresh lemon juice
2 tablespoons cold unsalted butter
Chopped fresh parsley, for topping

Steps:

  • Make the applesauce: Combine the apples, sugar and 1/2 cup water in a large pot. Bring to a simmer over medium-high heat. Reduce the heat to medium low, cover and cook, stirring occasionally, until the apples are very tender but still juicy, about 15 minutes. Remove from the heat and stir in the lemon juice. Mash the apples with a fork, or puree with an immersion blender or in a food processor for a smoother sauce. Transfer to a bowl and refrigerate at least 30 minutes.
  • Meanwhile, make the pork chops: Mix the paprika, garlic powder and sage in a small bowl. Season the pork chops with salt and pepper and rub all over with the paprika mixture. Heat a large nonstick skillet over medium-high heat and add the vegetable oil. Add the pork chops, reduce the heat to medium and cook until golden brown on the bottom, about 3 minutes. Flip and cook until browned on the other side and cooked through, 2 to 3 more minutes. Remove to a plate and pour off the drippings from the skillet.
  • Add the chicken broth and lemon juice to the skillet and scrape up any browned bits from the bottom of the pan. 2 tablespoons vegetable oil
4 (3/4 inch) thick pork chops
2 cloves garlic, minced
1 onion, thinly sliced
16 ounces sauerkraut
1 teaspoon caraway seed
2 tablespoons apple juice
salt and pepper to taste

Steps:

  • Heat oil in a large skillet over medium heat. Brown chops on all sides and remove from pan.
  • Add the garlic, onion, sauerkraut, caraway seed, apple juice, and salt and pepper to taste to the hot skillet. Saute for 3 to 4 minutes. Lay browned pork chops on top of sauerkraut mixture, cover, reduce heat to low and cook for 20 minutes, stirring occasionally.
