- Trim the chops of excess fat. Sprinkle generously with salt and pepper on both sides. Heat a 14-inch cast-iron skillet (if you have a smaller one, you'll need to work in batches) over high heat, and then swirl in the olive oil. Lay in the pork chops and don't move them for a few minutes, to assure a good golden sear forms. Turn and brown well on the second side for a total of about 10 minutes. Transfer the chops to a warm plate.
- Swirl the butter into the pan. Add the onion and apples. Saute until the onion slices are lightly caramelized and the apples have begun to soften, about 8 minutes. Stir in the beer or other liquid. Return chops to the pan.
- Cook until the pork is tender, about 15 more minutes (depending on the size of the chops), turning halfway through and covering the chops with the apple mixture. If the apple mixture needs a little thickening, transfer the chops to the warm plate again and simmer the mixture on high for a few minutes to reduce. Serve the chops over rice or mashed potatoes with a large spoonful of the apple-onion mixture over the top.

- Peel, core, and slice the apples.
- Preheat the oven to 350 degrees.
- Melt the butter in a skillet.

- Position a rack in the center of the oven and preheat to 400 degrees F. Line a rimmed baking sheet with parchment paper.
- Place the parsnips in the center of the baking sheet and drizzle generously with olive oil, sprinkle with salt and pepper and toss with 3 sprigs of thyme. - Season the chops well with salt and freshly ground black pepper. In a large shallow ovenproof pan, heat the olive oil and fry the rind of each chop for a good head start to getting them crisp. - Preheat oven to 400º. Spread apples in a lightly buttered baking dish (one large enough to hold the chops in one layer) and bake for 15 minutes.
- Mix the cream and mustard in a small bowl or measuring cup. Salt and pepper to taste and set aside.
- While apples are baking, lightly salt the pork chops. Melt butter in a large skillet over medium heat. Add the chops and cook until nicely browned, about 5 minutes a side.
- Arrange the chops over the apples. Add the wine to the skillet and deglaze the pan, scraping up any browned bits. Boil until wine is reduced by half and then dribble it over the chops. (I eyeball the wine, just pouring it out of the bottle, I probably use a little more than ¼ cup.)

- Pound out the pork chops to half an inch thick. If you can, control the shape to be more of a rectangle than a square, so it fits better to the shape of the bread. In a frying pan, melt the oil and 1/2 tbsp butter on medium high heat and add the onions. Saute for approx 5 minutes or until lightly golden. Add the apples and cook for approx 3 minutes or until soft and caramelized. Pour onion and apple mixture into a bowl and set aside. Season the pork chops with salt, pepper and garlic powder. - Pat dry pork chops with paper towels.
- Brush pork chops with 1 tablespoon of olive oil and season with salt and freshly ground black pepper, and Italian seasoning.
- Allow the pork chops to rest while you prepare the apples as follows below. This brings pork chops closer to room temperature which will help them sear better.
- I used 2 apples (1 red Gala apple and 1 green Granny Smith apple, for presentation purposes). Core the apples and slice each one length-wise.
- Place sliced apples into a large bowl, add brown sugar, cinnamon, and mix. Let apples sit for about 10 minutes to release juices.
- In a large pan (I used a large stainless steel skillet), heat 1 tablespoon of butter and 1 tablespoon of olive oil on high heat. Add sliced apples (without juice at the bottom of the pan) and cook on high heat for about 3 minutes on one side, checking periodically. After 3 or 5 minutes, flip sliced apples to the other side, reduce heat to medium and cook the apples for another 3 or 5 minutes. Remove from heat.
- Cook the apples in a single layer, without overcrowding to get a slightly "roasted" appearance. That means you might have to cook apples in 2 batches. Use the remaining 1 tablespoon of butter for the second batch.
- Depending on how hot your stove gets, it might take you less or more time to cook apples, the key is to brown them or even get a slightly "burned" effect. But don't overdo it, remove the cooked apples from the skillet once the apples have this "roasted" appearance.
- Right after you remove the pan with roasted sliced apples from the heat, immediately add honey to the hot skillet - it will make apples sizzle and will caramelize them beautifully, off the heat.
- For best searing results, use a cast-iron skillet. Heat a large skillet over medium-high heat for about 3 minutes to heat it through.
- Add 2 tablespoons of olive oil - the oil should shimmer. Add the pork chops, and cook them on one side for 5 minutes, without moving.
- Reduce the heat to medium, flip the pork chops over to the other side, and cook them on medium heat for about 5 minutes. Cook longer (depending on the thickness of your pork chops) until the pork chops are cooked through.

- Roll the fat sides of the pork chops in the salt flakes.
- Heat a griddle pan until smoking. Sear the fat side of the pork chops in the pan for 1-2 minutes, using tongs to keep the pork chops upright in the pan. When the fat is golden-brown and crisp, lay the pork chops down flat and fry for 3-4 minutes on both sides, or until the pork chop has deep griddle marks all over. Set aside.
- Meanwhile, heat the olive oil in a large frying pan and fry the onion and bacon together for 4-5 minutes, or until the onion is starting to colour. Add the bouquet garni, button mushrooms and shallots to the pan and cook over a medium-low heat for 3-4 minutes.
- Pour the cider into the pan and deglaze by scraping up any browned bits from the bottom of the pan with a wooden spoon, then bring to the boil. Add the pork chops and cook for 10-15 minutes, or until the pork is cooked through (the juices should run clear when the pork is pierced at the thickest part).
- Meanwhile, dust the apple pieces with the muscovado sugar. Place the griddle pan used to cook the pork back over the heat, then add the apples and cook for 8-10 minutes, or until the apples are golden-brown and caramelised.
- Remove the pork chops from the pan and set aside to rest. Return the pan to the heat and bring to a rapid boil, then stir in the mustard and cream and cook for 4-5 minutes, or until the liquid has reduced to a sauce consistency.
- To serve, spoon the caramelised apples onto serving plates and arrange a pork chop next to the apples, with the cooked carrots and mashed potatoes alongside. Spoon over the sauce and serve.

- In a large glass dish, such as a lasagna pan, combine olive oil, vinegar, maple syrup, salt, pepper, and chopped rosemary. Stir to combine. Add the pork chops to the marinade, turn several times so both sides are seasoned. Place in refrigerator for 30+ minutes to marinate.
- Remove the pork chops from the marinade and pat them dry. (Discard the marinade.) Let the pork chops come to room temperature for 15 minutes. Season with salt and pepper on both sides.
- Heat 2 tablespoons ghee or lard in a large cast iron skillet over medium-high heat. Add the pork. You should hear them immediately begin to sizzle. Pan fry until browned on the outside and cooked through, 2 to 4 minutes per side. When done, the pork should be firm but not hard. (You can always cut into one to see if it’s done to your liking - and remember that carry-over cooking will happen as you prepare the apples and kale.) Remove chops from pan and set aside (cover to keep warm) while you saute the kale and apples.
- Turn this into a full meal by serving with sauteed kale and apples. I like to use one skillet to make the whole meal. Once you remove the pork chops from the pan, add a little more ghee followed by the sliced apples (from 2 apples). Turn once, so they brown evenly on both sides. Remove apples from pan, then cook your greens (I used baby kale).

- Remove the pork from the refrigerator and let stand at room temperature while the oven preheats to 450ºF. Place a large rimmed baking sheet in the oven and heat until very hot.
