1/4 cup olive oil, divided
3 cups diced new potatoes
3 cups cut fresh asparagus (1-inch pieces)
1/4 teaspoon salt
1/4 teaspoon pepper
1 large gala or Honeycrisp apple, peeled and cut into 1-inch wedges
2 teaspoons brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground ginger
4 boneless pork loin chops (1 inch thick and about 6 ounces each)
2 teaspoons Southwest seasoning

Steps:

  • Preheat oven to 425°. Line a 15x10x1-in. baking pan with foil; brush with 2 teaspoons olive oil., In a large bowl, toss potatoes with 1 tablespoon olive oil. Place in 1 section of prepared baking pan. In same bowl, toss asparagus with 1 tablespoon olive oil; place in another section of pan. Sprinkle salt and pepper over potatoes and asparagus., In same bowl, toss apple with 1 teaspoon olive oil. In a small bowl, mix brown sugar, cinnamon and ginger; sprinkle over apples and toss to coat. Transfer to a different section of pan., Brush pork chops with remaining 1 tablespoon olive oil; sprinkle both sides with Southwest seasoning. Place chops in remaining section of pan. Bake until a thermometer inserted in pork reads 145° and potatoes and apples are tender, 20-25 minutes. Let stand 5 minutes before serving.

7 ounces pork shoulder
2 ounces orange juice
Juice of 1/2 lemon
Canola oil, for frying
2 tablespoons flour
1 tablespoon cornstarch
Kosher salt and freshly ground black pepper
1 clove garlic, crushed
1 ounce red wine vinegar
1 teaspoon sugar
1 slice red onion, cut into a julienne
1/2 tablespoon unsalted butter
1 clove garlic
4 to 5 asparagus spears, halved (about 2 ounces)
Kosher salt and freshly ground black pepper
1/2 cup fresh basil leaves
2 tablespoons olive oil
2 teaspoons pine nuts
1/3 teaspoon minced garlic
5 teaspoons grated Parmesan
Kosher salt and freshly ground black pepper

Steps:

  • For the pork: Marinate the pork in the orange juice, lemon juice and garlic in a baking dish in the refrigerator overnight.
  • Preheat the oven to 280 degrees F. Remove the pork from the marinade, transfer to a baking dish and cover with foil. Roast until tender, about 4 hours. Let cool until firm.
  • Heat the oil in a deep fryer or large pot. Combine the flour, cornstarch, salt and pepper in a shallow bowl. Dredge the pork in the flour mixture and fry until warmed through and crispy, 4 to 5 minutes.
  • For the pickled onions: Bring the vinegar to a boil in a small saucepan. Add the sugar and stir to dissolve. Pour over the red onions in a heat-proof bowl. Let stand until room temperature and then refrigerate overnight.
  • For the asparagus: Heat the butter and garlic in a skillet over medium-high heat. Add the asparagus and saute until crisp-tender, about 5 minutes. Season with salt and pepper.
  • For the pesto: Puree the basil, olive oil, pine nuts and garlic in a blender. Transfer the mixture to a bowl and fold in the Parmesan and season with salt and pepper.
  • For plating: Put the asparagus on a plate. Add the crispy pork and top with the pesto and pickled red onions.

  • I heated up the skillet to medium heat and added in the garlic and soy sauce and let it cook together until the garlic smelled yummy, so for about 5 minutes. Then I turned the stove to high, and added in the pork chops that I cut up, the garlic salt, the ground ginger, and asparagus spears. I did not steam the spears in the microwave first because I wanted them to stay crunchy.
  • I cooked this for about 10 minutes, until the pork was cooked all the way through.

8 pork cutlets (1 pound)
Kosher salt and freshly ground pepper
1/2 lemon, plus 1 more for zesting and serving
1/2 cup finely grated Parmesan (1 ounce), plus more, shaved, for serving
1/3 cup unbleached all-purpose flour
6 tablespoons extra-virgin olive oil
8 rounds (each 3/4 inch thick) polenta (from a 1- to 2-pound tube)
1 bunch asparagus (1 pound), trimmed

Steps:

  • Pound cutlets to 1/4 inch thick; season with salt and pepper. Sprinkle with juice of 1/2 lemon, turning to evenly coat. Stir together Parmesan and flour on a plate. Dredge cutlets in Parmesan mixture, pressing to adhere.
  • Heat 2 tablespoons oil in a large nonstick skillet over medium-high. When oil shimmers, add 4 cutlets in a single layer; cook, flipping once, until golden brown and crisp, 4 to 5 minutes. Transfer to a plate. Wipe skillet clean; repeat with 2 more tablespoons oil and remaining 4 cutlets. Wipe skillet clean; heat remaining 2 tablespoons oil in skillet over medium-high. Add polenta and cook, flipping once, until golden and crisp, about 5 minutes.
  • Meanwhile, cook asparagus in a pot of generously salted boiling water until crisp-tender, 2 to 3 minutes. Drain and transfer to plates. Season with salt and pepper, drizzle with oil, and top with finely grated lemon zest and shaved Parmesan. Serve with cutlets, polenta, and lemon wedges.

This is a fantastic stir-fry! It serves 3-4 people (or even two big eaters) and I recommend serving it with plain rice. Recipe is adapted from 'The New Best Recipe'. Enjoy!

12 ounces pork tenderloin
1 teaspoon fish sauce
2 tablespoons fish sauce
1 teaspoon soy sauce
1/3 cup low sodium chicken broth
2 teaspoons lime juice
1 tablespoon light brown sugar
1 teaspoon cornstarch
2 medium garlic cloves, minced
1/4 cup minced lemongrass, from 2 stalks (trim all but bottom 3-4 inches, remove tough outer sheath, then cut finely)
3/4 teaspoon red pepper flakes
3 1/2 tablespoons peanut oil or 3 1/2 tablespoons vegetable oil
1 lb asparagus, cut on the diagonal into 2-inch pieces
1/4 cup water
1 large onion, cut into 1/4-to 3/8-inch wedges
2 -3 tablespoons chopped fresh Thai basil

Steps:

  • Freeze the tenderloin until firm, 20 to 30 minutes. Cut the tenderloin crosswise into 1/3-inch-thick medallions. Slice each medaillon into 1/3-inch-wide strips.
  • Combine the pork, 1 tsp fish sauce, and the soy sauce in a small bowl.
  • Whisk the remaining 2 tbsp fish sauce, the chicken broth, lime juice, brown sugar, and cornstarch in a measuring cup.
  • Combine garlic, lemon grass, red pepper flakes and 1 tbsp of the oil.
  • Heat 1 1/2 tsps oil in a nonstick 12-inch skillet or in a wok over high heat until smoking; add half of the pork to the skillet and cook, stirring occasionally and breaking up the clumps, until well browned, about 2 minutes. Transfer pork to a bowl. Repeat with an additional 1 1/2 tsps oil and the remaining pork.
  • Add 1 tbsp oil to the now-empty skillet or wok; add the asparagus and cook, stirring every 30 seconds, until lightly browned, about 2 minutes. Add the water, cover the pan, and lower the heat to medium. Steam the asparagus until tender-crisp, about 2 minutes; transfer the asparagus to the bowl with the pork.
  • Add the remaining 1 1/2 tsps oil to the skillet or wok; add the onion and cook, stirring occasionally, until beginning to brown and soften, about two minutes.
  • Clear the center of the skillet; add the garlic and lemon grass mixture to the clearing and cook, mashing the mixture with a spoon, until fragrant, about 1 minute, then stir the mixture into the onion. Return the pork and asparagus to the skillet and toss to combine. Whisk the sauce to recombine, then add to the skillet/wok; cook, stirring constantly, until the sauce is thickened and evenly distributed, about 30 seconds. Transfer to a serving platter and sprinkle with the thai basil. Serve immediately.

1 lb center-cut pork chops, cut into 1-inch cubes

1 (10 3/4 ounce) can cream of chicken soup
3/4 cup water

Steps:

  • Cook pasta per package directions.
  • Cook pork in heated pan, w/olive oil. Season. Cook until pork is about halfway done, still pink inside.
  • Add in asparagus, cooking until pork is done.
  • Stir together soup and water, add to pan.
  • Cover and simmer on low until asparagus is tender.
  • Add pasta, stir and serve.

6 tablespoons apple juice
6 tablespoons soy sauce
4 cloves garlic, minced
1 tablespoon ground ginger
1 lb pork tenderloin, thinly sliced
2 tablespoons cooking oil, divided
1 lb fresh asparagus, cut into 1 inch pieces
1 1/2 teaspoons cornstarch
hot cooked rice (optional)

Steps:

  • In a large resealable bag, or shallow glass container, combine first four ingredients.
  • Remove 1/3 cup and set aside.
  • Add pork to remaining marinade.
  • Seal bag or cover container and turn to coat.
  • Refrigerate for one hour.
  • In a large skillet over medium-high heat, stir-fry half of the pork in one tablespoon oil for 2-3 minutes.
  • Remove pork with slotted spoon; set aside.
  • Repeat with remaining pork and oil In same skillet stir-fry the asparagus for 2-3 minutes or until crisp-tender.
  • Stir cornstarch into reserved marinade; add to skillet.
  • Bring to boil; cook and stir for 2 minutes or until thickened.
  • Return pork to skillet and heat through.
  • Serve over rice if desired.

2 navel oranges
1 teaspoon olive oil
1 (12 ounce) pork tenderloin (trimmed and thinly sliced on the diagonal)
3/4 teaspoon salt
1/4 teaspoon pepper
1 1/2 lbs thin asparagus, trimmed and cut in half
1 garlic clove, crushed
1/4 cup water

Steps:

  • Grate 1 tsp peel from one orange and squeeze 1/4 cup juice.
  • Cut peel and pith from other orange and cut it into 1/4 inch slices cutting each slice into quarters.
  • In non stick skillet, heat 1/2 tsp olive oil over med heat til hot but not smoking.
  • Add half the pork and sprinkle with 1/4 tsp salt and 1/8 tsp pepper.
  • Cook 2 minutes or until pork loses pink color, stirring frequently.
  • Transfer to plate.
  • Repeat.
  • To same skillet add asparagus, garlic, orange peel, remaining 1/4 tsp salt and water.
  • Cover and cook about 2 minutes until tender crisp.
  • Return pork to skillet.
  • Add orange juice and orange pieces.
  • Heat through stirring often.
  • Serve.
