Roasted Turkey Two Ways image

This recipe comes in two parts: the Slow-Braised Stuffed Leg and the Whole Roasted Breast. Note: Start your breast preparation once you have placed the legs in the oven.

1 (20-pound) turkey
2 turkey legs
8 ounces Wild Mushroom Stuffing, recipe follows
4 ounces olive oil
8 ounces chicken stock
2 carrots peeled in 1-inch sections
3 stalks celery, sliced in 1-inch sections
2 yellow onions, diced
2 sprigs rosemary, leaves chopped
2 cups pomegranate juice
Butcher string
Wood skewers
1/4 pound foie gras or chicken liver
2 loaves dried bread, crusts removed and cubed
1/2-ounce dried porcini mushrooms
2 tablespoons extra-virgin olive oil
2 medium onions, chopped
1/2 pound pancetta, chopped
4 stalks celery and leaves chopped
3 cups sliced mushrooms
1 cup chicken stock
1 tablespoon chopped parsley
1 tablespoon chopped sage
1 tablespoon chopped rosemary
3 beaten eggs
Salt and pepper
6 tablespoons butter
2 tablespoons fresh chopped rosemary leaves
1 whole double-breast turkey
Salt and pepper
4 ounces olive oil

Steps:

  • With a sharp knife, separate legs from the rest of turkey and cut off backbone. Reserve breast for roasting.
  • Preheat oven to 350 degrees F.
  • Debone turkey legs. Remove silver skin and all tendons. With skin side down, cover with plastic wrap and pound out evenly. Season inside with salt and pepper.
  • Add 8 ounces of mushroom stuffing evenly across middle section. Roll into a tight cylinder. Tie with butcher's string and close ends with skewers. Season outside with salt and pepper. Heat a roasting pan and add olive oil. Sear meat until golden brown.
  • Remove legs from roasting pan. Add carrots, celery, onion and rosemary and cook until brown. Deglaze with chicken stock. Bring to a boil and add turkey legs. Slowly braise the legs in the oven for about 2 hours until internal temperature is 130 degrees F.
  • Remove foil and finish roasting to get color on the meat, until internal temperature is 140 degrees F.
  • Remove legs and set aside on a platter. Cover with foil until ready to slice.
  • Add 2 cups of pomegranate juice to the braising liquid. Simmer for 10 minutes then puree the sauce through a food mill. Carrots, onions and celery will thicken the sauce. Season with salt and pepper, to taste. Let sit for about 30 minutes and with a small ladle, remove excess fat. Remove string and skewers. Slice into half-inch portions and serve with sauce.
  • Render foie gras or chicken liver in saute pan. Remove and pour rendered fat over bread. Dice and reserve. (If you use chicken liver instead or foie gras, add 4 tablespoons of butter).
  • Rinse dried porcini and soak in warm water. Drain and chop mushrooms, reserving liquid.
  • Heat olive oil in saute pan over medium heat and add onions, celery and pancetta. Cook until vegetables become translucent. Combine dried mushrooms and fresh mushrooms and add reserved mushroom liquid and stock. Cook over medium heat and reduce until almost dry. Set aside.
  • Place foie gras or chicken liver and dried bread crumbs in a large bowl. Add herbs, beaten eggs and mushroom mixture. Sprinkle with salt and pepper. Mix until all ingredients are incorporated.
  • Fill legs of turkey according to recipe (or place stuffing in a buttered gratin dish and bake in preheated 350 degree F. oven for 30 minutes).
  • Mix butter, rosemary, salt and pepper, to taste until nice and smooth. With your hands, carefully separate turkey skin from the breast meat. Spread rosemary butter evenly between skin and meat. Season turkey breast with salt and pepper and rub with olive oil.
  • Place in roasting pan with a rack. If your oven is large enough, you can roast the turkey breast in the same oven while you braise the stuffed legs, which I prefer, because the steam from the braising liquid keeps the stuffing moist.
  • Roast until internal temperature is 165 degrees F. Baste every 15 minutes with the pan drippings.
  • When breast is done, cover with foil and let rest in a warm place until you are ready to carve.
  • Yield: 12 servings

GARLIC-ROSEMARY TURKEY WITH PORCINI



Garlic-Rosemary Turkey with Porcini image

1 12- to 14-pound turkey, thawed if frozen
Kosher salt and freshly ground pepper
1 onion, quartered
1 head garlic (6 cloves whole, remaining cloves smashed)
4 sprigs rosemary, plus 3 tablespoons chopped leaves
2 ounces dried porcini mushrooms (about 2 cups)
1 1/2 sticks (12 tablespoons) unsalted butter, at room temperature
2 teaspoons Worcestershire sauce

Steps:

  • Position an oven rack in the lowest position (remove the other racks); preheat to 350 degrees F. Remove the neck and giblets from the turkey and set aside for the gravy. Pat the turkey dry with paper towels and rub inside and out with 1 tablespoon each salt and pepper. Stuff the cavity with the onion, smashed garlic and rosemary sprigs. Tie the legs together with kitchen twine. Put the turkey on a rack set in a large roasting pan and tuck the wings under the body. Let sit at room temperature while you make the porcini butter.
  • Soak the porcini in 1 cup hot water until softened, about 10 minutes; drain. Put half of the porcini in a food processor (finely chop the rest to use in the gravy). Add the whole garlic cloves and chopped rosemary to the food processor; pulse to make a paste. Add the butter, Worcestershire sauce, 2 teaspoons salt and a generous amount of pepper; pulse until smooth. Rub the turkey inside and out with the butter. Transfer to the oven and roast 1 hour. Meanwhile, start your gravy, adding the chopped porcini in along with the stock.
  • After the turkey has roasted 1 hour, baste with the drippings. Continue roasting, basting every 30 minutes, until the skin is golden brown and a thermometer inserted into the thigh registers 165 degrees F, 1 1/2 to 2 more hours.
  • Transfer the turkey to a cutting board and let rest 30 minutes before carving; use the drippings for the gravy.

1/4 cup butter, room temperature
2 tablespoons chopped fresh parsley
2 teaspoons chopped garlic
2 teaspoons chopped fresh thyme
2 teaspoons chopped fresh rosemary
1 20- to 22-pound turkey
4 large plum tomatoes, chopped
1/2 cup canned low-salt chicken broth
For gravy
5 cups (about) canned low-salt chicken broth
3/4 ounce dried porcini mushrooms
4 tablespoons (1/2 stick) butter
2 tablespoons all purpose flour
1 1/2 cups dry white wine
1 tablespoon chopped garlic
1 tablespoon chopped fresh parsley
2 teaspoons chopped fresh thyme
2 teaspoons chopped fresh rosemary

Steps:

  • Make turkey:
  • Preheat oven to 375°F. Blend first 5 ingredients in small bowl. Rinse turkey inside and out; pat dry. Place turkey on rack in large roasting pan. Starting at neck end, slide hand between skin and breast meat to loosen skin. Spread seasoned butter over breast meat under skin. Sprinkle turkey inside and out with salt and pepper. If stuffing turkey, spoon stuffing loosely into main cavity. Tuck wing tips under turkey; tie legs together.
  • Roast turkey 1 hour. Add tomatoes to pan. Roast 1 1/2 hours longer, stirring tomatoes occasionally. Pour broth into pan. Cover turkey loosely with foil. Roast until thermometer inserted into thigh registers 180°F, basting occasionally with pan juices, about 1 hour 50 minutes longer if unstuffed or 2 hours 20 minutes longer if stuffed. Transfer turkey to platter. Tent with foil; reserve pan juices.
  • Meanwhile, prepare gravy:
  • Bring 5 cups chicken broth and porcini mushrooms to boil in medium saucepan. Remove from heat; let steep 15 minutes. Transfer mushrooms to work surface; reserve mushroom broth. Chop mushrooms coarsely. Mix 2 tablespoons butter and flour in small bowl to smooth paste. Strain juices from roasting pan into large measuring cup; spoon off fat. Add enough reserved mushroom broth to pan juices to measure 6 cups. Add wine to roasting pan and bring to simmer, scraping up browned bits; add to broth.
  • Melt remaining 2 tablespoons butter in large saucepan over medium-high heat. Add garlic and sauté 1 minute. Add parsley, thyme, rosemary and mushrooms. Sauté until mushrooms are tender, about 4 minutes. Stir in broth mixture and simmer until slightly reduced, about 30 minutes. Gradually whisk in butter-flour paste. Boil until reduced to 4 cups, stirring occasionally, about 12 minutes. Season with salt and pepper.

1/4 cup canola oil
8 cloves garlic, chopped
2 onions, chopped
1/2 cup white wine
2 quarts chicken stock
2 tablespoons chopped fresh sage
4 bay leaves
1/3 cup extra-virgin olive oil
3 tablespoons kosher salt
1 tablespoon ground black pepper
8 cloves garlic, chopped
4 parsnips, diced large
3 carrots, diced large
2 onions, diced large
1 head celery root, diced large
1 stick (8 tablespoons) unsalted butter
2 tablespoons cider vinegar
1/4 cup chopped fresh sage
1 stick (8 tablespoons) unsalted butter
4 ounces all-purpose flour
1 tablespoon cider vinegar
Kosher salt
1/4 cup chopped fresh chives

Steps:

  • For the turkey breast: Preheat the oven to 400 degrees F.
  • Break down the turkey by removing the breasts while keeping the skin on. Remove the turkey legs and thighs and set aside.
  • Sprinkle the turkey breasts on both sides with the salt and pepper. Heat a large cast-iron pan over medium-high heat, and add the butter. Melt the butter and cook, stirring frequently to it butter does not burn, until it starts to brown, about 5 minutes. Once the butter stops bubbling, add the turkey breasts skin-side down and turn the pan down to medium. Sear for about 5 minutes, then flip the breasts over and cook until golden brown. Add the whole garlic cloves and sage to the pan and baste a few times. Transfer the pan to the oven for 8 minutes.
  • Flip the breasts back over to skin-side down and cook, basting, on the stovetop, about 4 minutes.
  • Finish in the oven skin-side down until an instant-read thermometer inserted in the thickest part registers 160 degrees F, another 5 to 7 minutes. Flip and baste, then remove from the pan.
  • Let rest 4 to 5 minutes. (Leave the oven on.)
  • For the turkey legs: Sprinkle the legs and thighs with the salt and pepper. Heat a large skillet over medium-high heat. Add oil to coat the bottom of the skillet. Add the legs and thighs and sear until golden brown, about 3 minutes on each side, then remove the legs and thighs and place in a pressure cooker. Remove half of the oil from the skillet and turn the heat down to medium. Add the garlic and onions to the skillet and saute until fragrant, about 1 minute. Add the garlic and onions to the pressure cooker. Add the wine to the skillet and deglaze, using a spatula or wooden spoon to get all the brown bits off the bottom of the skillet. Then, add the pan sauce to the pressure cooker along with the stock, sage and bay leaves. Seal the pressure cooker and cook according to the pressure cooker instructions on medium for 25 minutes.
  • Remove the legs and thighs to a bowl. Remove the meat from the bones and shred. Set aside.
  • Strain out the juice and set aside to make gravy.
  • For the hash: Mix together the oil, salt, pepper, garlic, parsnips, carrots, onions and celery root in a bowl. Spread out on a sheet tray and bake until tender and starting to brown, 10 to 14 minutes. Meanwhile, brown the butter in a small pot over low heat. Toss the veggies and shredded turkey leg meat in the brown butter along with cider vinegar and sage.
  • For the gravy: Bring your strained stock to a simmer in a medium saucepot. Melt the butter in a small pot and whisk in the flour and vinegar. Cook until deep brown, 5 to 10 minutes. Whisk the roux into the stock and bring to a rolling boil, then boil for about 5 minutes. Season to taste.
  • Place the hash on the plate. Slice the turkey breast on a bias and lay over the top of the hash. Drizzle the gravy over that. Top with the chives.

OVEN ROASTED TURKEY WITH SAGE BUTTER

One 12- to 14-pound fresh turkey
Kosher salt and freshly ground black pepper
Caramelized Onion and Cornbread Stuffing, recipe follows
Extra-virgin olive oil
Sage Butter, recipe follows
2 sticks butter, softened
1/4 cup chopped sage
Salt and pepper
2 tablespoons butter
2 onions, chopped
Handful fresh sage leaves, chopped
6 large cornmeal muffins, cubed
Salt and freshly ground black pepper
1 egg
1/4 cup heavy cream
1/4 cup chicken stock

Steps:

  • Preheat the oven to 375 degrees F and remove the top rack of the oven.
  • Rinse the bird thoroughly inside and out with cold water, and pat dry with paper towels. Sprinkle the cavity and skin liberally with salt and pepper. Stuff the cavity with stuffing and, if required, truss the legs. Cover the turkey with olive oil and season well with salt and pepper. Push the sage butter under the skin of the turkey, being careful not to puncture the skin.
  • Put the turkey on a rack in a large roasting pan, and into the oven. Continue cooking until an instant-read thermometer inserted into the meaty part of the thigh registers 170 degrees F. The thigh juices will run clear when pricked with a knife, about 3 hours total (15 minutes per pound). If the legs or breast brown too quickly during roasting, cover them with foil.
  • Combine all ingredients.
  • Melt the butter in a medium skillet over medium heat. Add the onions and cook, stirring, for about 10 minutes, or until soft and caramelized. Add sage and scrape into a large mixing bowl. Add the cornbread pieces, season well with salt and pepper, and give it a good toss until it's well combined. In a separate bowl, whisk together the egg, cream, and stock, and pour that over the cornbread. Stir the stuffing together and stuff the cavity of the turkey. You could also spoon it into a buttered baking dish and put it in the oven along with the turkey. Bake until hot and crusty on top, about 30 minutes.

3/4 ounce (about 3/4 cup) dried porcini mushrooms
4 ounces thinly sliced pancetta (Italian bacon), coarsely chopped

6 ounces fresh crimini mushrooms, coarsely chopped
1/2 cup finely chopped onion
1/4 cup chopped fresh Italian parsley
1 tablespoon chopped fresh rosemary
1/2 teaspoon fennel seeds, crushed
2 cups fresh breadcrumbs made from crustless French bread
1 2 3/4-pound turkey breast half with skin, boned but skin left intact, double butterflied
2 cups (about) low-salt chicken broth
4 tablespoons (about) unsalted butter, room temperature, divided
2 tablespoons all purpose flour
1/4 cup dry white wine

Steps:

  • Bring 1 cup water and dried mushrooms to boil in heavy small saucepan. Remove from heat. Let stand until soft, about 30 minutes. Drain, reserving soaking liquid. Chop mushrooms.
  • Sauté pancetta in heavy large skillet over medium heat until crisp, about 10 minutes. Using slotted spoon, transfer pancetta to paper towel to drain. Add 2 tablespoons oil to drippings in skillet. Add crimini mushrooms and onion. Sauté until mushrooms begin to brown and no liquid remains, about 8 minutes. Remove from heat. Stir in pancetta and chopped porcini, then parsley, rosemary, and fennel seeds. Mix in breadcrumbs; season stuffing to taste with salt and pepper. Mix in enough reserved mushroom-soaking liquid by tablespoonfuls to moisten (about 3). Cool stuffing completely.
  • Cover opened turkey breast with waxed paper. Using rolling pin, pound to 1/2-inch-thick rectangle (about 14x10 inches). Remove waxed paper. Sprinkle turkey with salt and pepper. Spread stuffing over, leaving 1-inch plain border. Sprinkle with additional mushroom-soaking liquid if dry. Starting at 1 long side, roll up turkey jelly-roll style. Secure with metal turkey-lacing pins. Tie roll crosswise with kitchen string every 1 1/2 to 2 inches to hold shape. Tie roll once lengthwise to secure ends. Remove metal pins. (Can be made 1 day ahead. Cover and chill.)
  • Preheat oven to 375°F. Heat remaining 2 tablespoons oil in heavy large ovenproof skillet or heavy roasting pan over medium-high heat. Brown turkey roll on all sides, turning often, about 12 minutes. Pour 1/3 cup broth over. Brush with 1 teaspoon butter. Cover skillet with foil. Roast turkey 30 minutes, basting 2 more times with 1/3 cup broth and brushing with 1 teaspoon butter. Remove foil. Roast until turkey is brown and thermometer inserted into center registers 170°F, basting with broth and brushing with more butter occasionally, about 15 minutes longer. Transfer turkey to platter; tent loosely with foil. Reserve skillet or pan.
  • Strain pan juices into 2-cup glass measuring cup. Add more broth, if necessary, to measure 1 1/4 cups liquid. Blend 2 tablespoons butter and flour in small bowl. Place roasting skillet or pan over medium-high heat. Add 11/4 cups pan-juice mixture, wine, and remaining mushroom-soaking liquid, leaving any sediment in bowl. Simmer 5 minutes, scraping up any browned bits. Gradually whisk in flour paste. Simmer until gravy thickens, whisking constantly, about 3 minutes. Season with salt and pepper.
  • Remove strings from turkey. Cut roast crosswise into 1/2-inch-thick slices and serve with gravy.

PORCINI BREAD STUFFING



Porcini Bread Stuffing image

When it comes to Thanksgiving stuffing, a passionate attachment to one's own family recipe, combined with a healthy suspicion of other stuffings, has become part of the holiday ritual. This one, which includes porcini mushrooms, Cognac, raisins and fresh rosemary, comes from Julia Moskin's family, and is prepared with great ceremony by her uncle Julian M. Cohen. To make it vegetarian, simply use vegetable stock rather than chicken.

5 tablespoons butter
1 cup dried porcini or morel mushrooms
1 cup Calvados or Cognac
3 onions, thinly sliced
Salt and black pepper
10 to 12 cups torn sourdough bread (1 large loaf)
1/4 cup finely chopped parsley
2 tablespoons finely chopped fresh rosemary
2 tablespoons finely chopped sage
1 cup applesauce
3/4 cup raisins or dried cherries
1/2 cup coarsely chopped walnuts or pecans
1 to 2 cups chicken or vegetable stock

Steps:

  • Heat oven to 375 degrees, and butter a 9-by-13-inch baking dish. (The oven can be anywhere from 350 to 400 degrees, if you need to cook both the stuffing and the turkey in it.)
  • Soak mushrooms in 2 cups warm water about 30 minutes. Drain, reserving liquid. Thickly slice mushrooms. Meanwhile simmer Calvados in a saucepan until reduced to about 5 ounces.
  • Melt remaining butter in large pan, add onions, and saute until transparent. Sprinkle with salt if onions are browning too fast. Add sliced mushrooms, and saute 2 minutes. Add bread, mushroom liquid, chopped parsley, rosemary and sage. Stir in reduced Calvados, applesauce, raisins, nuts and enough stock so mixture is moist but not wet. Season to taste with salt and pepper.
  • Turn into buttered baking dish. Bake 45 minutes to 1 hour, until firm and crusty.

1 1/2 ounces dried porcini mushrooms
1 medium onion, chopped
1 clove garlic, minced
2 tablespoons extra-virgin olive oil
1 pound Italian sweet sausage sliced into 1-inch pieces
1 tablespoon tomato paste
2 cups chicken stock
1 teaspoon fresh rosemary, oregano or thyme leaves
Coarse salt and freshly ground pepper to taste
1 pound penne
Freshly grated Parmesan cheese

Steps:

  • Soak the mushrooms in one-and-a-half cups hot water for 30 minutes.
  • Meanwhile saute the onion and the garlic in the olive oil until soft. Add the sausage and brown lightly. Drain off any fat.
  • Drain the mushroom through a coffee filter or cheesecloth, reserving the soaking liquid. Quickly rinse the mushrooms under the running water.
  • Add the mushrooms with their soaking liquid to the onion, along with the tomato paste, chicken stock and herbs. Season lightly with salt and pepper and simmer gently for half an hour. If the sauce gets too thick add more stock. If it is too thin, turn up the heat.
  • Meanwhile, bring six quarts water to boil for the penne. Cook the penne, drain and place in a heated bowl. Pour the sauce on top, toss thoroughly and serve immediately. Pass the cheese separately.

8 lbs turkey breast
1 cup dried porcini mushrooms (approximately 1 oz)
1 teaspoon poultry seasoning
1 tablespoon kosher salt
1/2 teaspoon ground black pepper
1/4 cup butter, softened
1/4 cup mayonnaise
1/3 cup sour cream

Steps:

  • Grind the Porcini mushrooms into dust in a blender or magic bullet. Add Bell's seasoning, salt and pepper and mix well.
  • Whisk together the softened butter and mayonnaise until smooth. Add the mushroom powder and seasoning mix and stir until well incorporated.
  • Remove the turkey from the packaging and remove any innards from the cavity. Rinse and pat dry.
  • Place the turkey in a large roasting pan. Carefully separate skin from the meat by sliding your hand underneath the skin being careful not to break it.
  • Stuff the mushroom mixture liberally under the skin, and massage the outside of the skin so it's evenly distributed.
  • Rub any remaining butter mixture on the outside of the skin and make sure the skin is covering the meat and hasn't pulled away from the top.
  • Sprinkle with additional salt and pepper if desired.
  • Roast upright in a 400°F oven for one hour and 15 minutes, or until a meat thermometer inserted in the thickest part of the breast reads 160° (F.).
  • Let the turkey rest (loosely tented with tinfoil to keep warm) for one hour before carving to prevent the meat from drying out while cutting.
  • For the gravy:.
  • Pour off pan juices after carving and remove most of the fat that floats to the top.
  • Whisk 1/3 cup of sour cream into the defatted pan juices. Taste and season with salt and pepper if necessary before serving.
