Porcini Mushrooms With Beans 'Al Cartoccio' image

8 ounces white beans
2 tomatoes, peeled
1 sprig sage
1 sprig rosemary
1 garlic clove
Freshly ground black pepper
Pinch chili powder
Salt
8 porcini mushroom caps
4 cloves garlic
1 sprig 'nipitella' (this can be substituted with oregano or marjoram)
Salt and pepper
4 large tablespoons extra-virgin olive oil

Steps:

  • Preheat the oven to 325 degrees F. (160 degrees C.).
  • Place the beans in a large saucepan with plenty of water and allow to simmer for 2 hours along with the peeled tomatoes, sage, rosemary, garlic, pepper and chili powder. Add salt once the beans are cooked.
  • Gently wash the mushroom caps with running water, protecting them with your hands so as to prevent them absorbing too much of the water.
  • Place the mushrooms on a sheet of aluminum foil on a baking tray. Slice the garlic and gently insert each piece into the mushroom caps. Sprinkle the chopped nipitella over the mushrooms and add salt, pepper and a generous dash of olive oil.
  • Wrap the mushrooms in the aluminum foil, carefully ensuring all the edges are sealed and place on a baking tray in a shallow bath of water. This is now ready to be cooked 'bain marie' style for 20 minutes.
  • Once the mushrooms are cooked, assemble them onto a plate with two large tablespoons of the cooked beans and some small shavings of crusty bread. Drizzle with olive oil and serve the dish piping hot.

2 pounds/914 g fresh clams, cleaned
2 cloves garlic, thinly sliced
Bunch fresh flat-leaf parsley, chopped
12 cherry tomatoes, halved
8 tablespoons/118 ml extra-virgin olive oil
Salt and freshly ground black pepper
1 cup/235 ml white wine

Steps:

  • Preheat the oven to 400 degrees F.
  • Divide the clams, garlic cloves, flat-leaf parsley, and cherry tomatoes into 4 equal portions.
  • Take 2 sheets of aluminum foil and place them on top of each other to create a sturdier base. Lift all 4 sides up to create a container. Place 1 portion of clams, garlic, parsley, and tomatoes in the center. Drizzle with 1/4 of extra-virgin olive oil and wine. Season with salt and pepper. Make sure there is extra room in the aluminum foil container so that the clams can steam open. Grab all the sides of the aluminum foil and tightly seal them closed, to prevent the steam from escaping.
  • Repeat the above process 3 more times to create 4 individual servings. Place the foil packets in the oven for approximately 20 minutes to allow all the clams to fully open. Serve the sealed aluminum foil packages immediately. Allow each guest to open their own individual packages to experience all the aromas contained.

2 cloves garlic, thinly sliced
Bunch fresh mint leaves, chopped
8 tablespoons/118 ml extra-virgin olive oil
Salt and freshly ground black pepper
1 cup/235 ml white wine

Steps:

  • Preheat the oven to 400 degrees F.
  • Divide the mushrooms, garlic, mint leaves into 4 equal portions.
  • Take 2 sheets of aluminum foil and place them on top of each other to create a sturdier base. Lift all 4 sides up to create a container. Place once portion each mushrooms, garlic, and mint leaves in the center. Drizzle with a 1/4 of the extra-virgin olive oil and white wine. Season with salt and pepper. Grab all the sides of the aluminum foil and tightly seal them closed, to prevent the steam from escaping.

2 tablespoons butter
1 minced garlic clove
5 ounces heavy cream or 5 ounces half-and-half
6 ounces tomato sauce
40 small shrimp
3 slices prosciutto, minced
2 ounces cognac
2 tablespoons parmesan cheese
1 lb thin spaghetti
salt and pepper

Steps:

  • Preheat oven to 350 degrees. Boil water for pasta.
  • While water comes to a boil, melt butter in a large saute pan. Add minced garlic, cook a few minutes over medium heat. Add cream, salt, pepper, tomato sauce. Cook for four minutes on high flame.
  • Add spaghetti to boiling water and cook till al dente, Drain and add to sauce.
  • Add the shrimp, proscuitto, cognac and parmesan cheese. Stir and cook for two minutes on high heat. Remove from heat and put pasta in a bowl lined with aluminum foil. Seal foil in the shape of a Hershey's Kiss. Put in pre-heated oven for two minutes.
  • Remove and serve immendiatlely.
