JALAPENO POPPER BURGERS

- Brush jalapenos with oil. Grill, covered, over medium heat for 3-5 minutes or until tender, turning occasionally. When cool enough to handle, finely chop. In a small bowl, combine the bacon, cream cheese and jalapeno until blended., In a large bowl, combine the garlic, salt, lemon pepper, pepper and paprika. Crumble beef over mixture and mix well. Shape into 8 thin patties. Spoon bacon mixture onto center of 4 patties; top with remaining patties and press edges firmly to seal., Grill burgers, covered, over medium heat or broil 4 in. from heat for 6-7 minutes on each side or until a thermometer reads 160° and juices run clear. Top with pepper jack cheese. Cover and cook 1-2 minutes longer or until cheese is melted., Grill buns, cut side down, over medium heat for 30-60 seconds or until toasted. Serve burgers on buns with lettuce, tomato and guacamole.

This burger was really good. I questioned the lack of seasoning in the meat, but the jalapenos really are robust and make this burger pop with flavor. - 1. Combine ground beef, jalapenos, Worcestershire sauce, salt and pepper.
- 2. Form into 4 patties, grill or cook in skillet until done.
- 3. Fry bacon.
- 4. Combine cream cheese and cheddar cheese in food processor until mixed well.
- 5. When burgers are done spread ranch dressing on each side of bun, spread cream cheese mixture on top of hamburger patty and top with bacon. I served it with cheesy jalapeno hash browns and buttermilk chipotle onion rings.

When I was young my mother would reward me for practicing the piano. My favorite request was a trip into town,to the only gas station for miles around, and I would get my favorite food on earth; Jalapeno Poppers! This burger is inspired by my favorite childhood treat! - 1. In a medium mixing bowl, combine cream cheese, chilies, and shredded cheese. Mix on high speed until thoroughly combined. Set aside in freezer.
- 2. In a large mixing bowl combine ground beef and 1 cup salsa verde and egg; lightly mix until combined. divide into 8 equal portions, divide each portion into two 1/4 in. thick patties. Place a generous tablespoon of chilled cream cheese mixture in the centers of half the patties, slightly spread cheese mixture leaving a border of meat around edge. Top with remaining patties; pinch to seal edges.
- 3. Place burgers on grill at medium high heat; grill for 5 minutes then carefully flip patties. Cook an additional 2 minutes then spread remaining chili-cheese mixture on top of each burger (1 to 2 tablespoons)close the grill lid and cook until cheese is melted or bubbled (about 2-3 more minutes.)Also place buns on grill, cut side down and grill until just "toasty". Burgers are done when internal temp. reaches 158-160*F. Serve patties on bun, with onion, tomato,cilantro, desired amount of jalapenos and lettuce. Enjoy hot!

- Combine ground beef and 1/4 cup salsa in large bowl, mixing lightly but thoroughly.
- Divide beef mixture into 4 equal portions and lightly flatten into thin patties.
- Place one stuffed pepper in center of each patty. Wrap the beef around the pepper to enclose, sealing seams and forming a ball. Flatten balls into patties about 4 to 5-inches across and 1-inch thick.
- Place patties on grill over medium ash-covered coals. Grill covered, 15 to 16 minutes to 165°F internal temperature, turning occasionally.
- Spread 1 tablespoon chile con queso evenly over top of each burger. Sprinkle with tomato and olives and serve on hamburger buns with additional salsa as desired.

- Sprinkle the ground beef evenly with 1/2 teaspoon salt in a large bowl. Gently form the meat into 4 balls, then lightly press into 4-inch-wide, 1-inch-thick patties. Make a 2-inch-wide indentation in the center of each with your thumb to prevent the burgers from bulging when grilled.
- Preheat a grill to high. Season the patties with salt and pepper. Grill, undisturbed, until marked on the bottom, 3 to 5 minutes. Turn and grill until the other side is marked and the patties feel firm, 3 to 5 more minutes; if desired, top each burger with 2 slices cheese during the last 2 minutes of cooking and cover with a disposable aluminum pan to melt.
- Serve the patties on the buns; top with lettuce and tomato.

- Heat oven to 200C/180C fan/ gas 6. Put the pepper on a baking tray and rub with 1/2 tbsp oil. Roast in the oven for 25-30 mins, turning once halfway through. Remove and allow to cool slightly before finely chopping.
- Tip the mince, roasted pepper, egg, carrot and breadcrumbs into a large bowl and mix well. Using your hands, shape the mixture into six equal burgers.
- Heat the remaining oil in a large, heavy-based, non-stick frying pan over a medium heat. Fry the burgers for 5-6 mins each side until cooked through. Top with slices of cheddar. Spread the rolls with mayo, add the burgers and top with slices of cucumber.
