This is my version of Popeye's Red Beans and Rice. It is the final result after many disastrous attempts, thank goodness for a husband with a cast iron stomach.

1 lb smoked sausage, sliced,i use hillshire hot links
4 (16 ounce) cans pink beans, drained and rinsed i use goya beans
1 stalk celery, chopped
1 medium onion, chopped
2 cloves garlic, minced
1 bay leaf
1 pinch rosemary, crumbled
1/8 cup liquid smoke
1 (4 ounce) can green chilies, drained

Steps:

  • Mix all ingredients well in a crock pot.
  • Cook on low for 6-8 hours.
  • Remove bay leaf.
  • Serve with steamed rice with hot sauce on the side.

3 cans (16-ounce) red kidney beans
3/4 pound smoked ham hocks
1 1/4 cups water
1/2 teaspoon onion powder
1/2 teaspoon garlic salt
1/4 teaspoon red pepper
1/2 teaspoon salt
1/4 cup lard
1/4 teaspoon freshly ground black pepper
5 cups long-grain white rice, cooked and drained

Steps:

  • Pour 2 cans of beans (juice and all) into a large saucepan. Add the smoked ham hock and water. Then turn the heat on medium low and stir well to mix all the ingredients. Simmer for about an hour until the meat starts to loosen from the bone. Remove the pan from the heat and allow it to cool until the hock is cool enough to be handled. Then carefully remove the meat from the bone. Discard the bone. Place the meat, beans and liquid in a food processor or blender. Add onion powder, garlic salt, red pepper, salt, and lard. Lend on high for a few seconds. In a food processor, process for only 4 seconds. The beans should be chopped and the liquid should be thick. Drain the third can of beans and add the drained beans (discard the liquid) to the mixture. Process or blend just for a second or two. You want these beans to remain almost whole. Then transfer the beans mixture back into the pan and cook slowly over low heat. Stir often to prevent sticking. Cook until the beans are firm, and most of the water has been evaporated. Prepare the rice by cooking it according to the directions on the box. Basic directions for rice include boiling water and adding the rice to the water once it begins to boil. Cook the rice until it is tender, then drain well. Once the beans and rice are done cooking, remove them both from the heat. Serve the bean mixture over the cooked rice on individual serving plate, or alongside a main course dish.

THIS IS NOT THE RECIPE FROM TODD WILBUR!!!! This recipe was found on cajun cooking and then I made changes to it myself. I'm still a southerner at heart so usually make my own recipe of red beans and rice, but every now and then I crave Popeye's. This recipe is not health conscious.

1/4 cup pork fat
2 (15 ounce) cans red beans or 2 (15 ounce) cans kidney beans
1/2 cup water
1/2 teaspoon brown sugar
1/8 teaspoon salt
1 dash garlic powder
1 dash onion powder
1 dash hot pepper sauce
2 1/4 cups water
1/4 cup butter
1/4 teaspoon salt
1 cup rice

Steps:

  • Melt pork fat. Combine 1/4 cup pork fat with one 15-ounce can red beans plus liquid in a medium saucepan. Add 1/2 cup water, brown sugar, 1/8 teaspoon salt, garlic powder, and onion powder. Bring mixture to a boil, then reduce heat and simmer for 20 minutes. Use a potato masher to smash beans into a paste-like consistency. Add entire contents of remaining can of beans to the mixture and cook for an additional 10 minutes.
  • Prepare rice for 4 servings. For Uncle Ben's converted rice you bring 2 1/4 cups water to a boil. Add 1/4 cup butter and 1/4 teaspoon salt. Add 1 cup of rice, reduce heat to low and simmer rice for 20 minutes or until tender.
  • To prepare each serving scoop 1 cup of beans into a bowl. Add 1 cup of rice on top of the beans and serve.
  • ****If you can't find pork lard -- Buy 2 pounds of smoked ham hocks and render the fat from the smoked ham hocks. Preheat oven to 375 degrees and place the ham hocks in a deep pan. Cover pan with foil and bake for 4 to 5 hours or until 1/4 cup of fat has rendered from the hocks.

We didn't even realize there was a way to recreate the Popeyes red beans and rice magic in our own kitchen until we tried this amazing copycat recipe.

3 slices of thick cut bacon, chopped
1 large onion, chopped
2 cloves garlic, minced
1 ½ cups dry red beans
¼ teaspoon liquid smoke
½ tablespoon cajun seasoning, mild or hot based on preference
4 cups chicken broth or stock
2 cups white rice, cooked

Steps:

  • Set Instant Pot to sauté and add bacon. Cook until the bacon is crisp, and then remove from pot.
  • Add onion to the pot and cook until the onions begin to soften, scraping the bottom to incorporate the fond.
  • While the onions are cooking, rinse the beans and remove any bad beans or stones.
  • Add the garlic, liquid smoke, and cajun seasoning to the pot. Stir.
  • Add the beans, broth, and bacon to the pot, and then set on high pressure for 1 hour.
  • After the beans have cooked, allow the Instant Pot to naturally release for 15 minutes, and then quick release.
  • Drain off excess water, reserving a ½ cup.
  • Use an immersion blender or potato masher to mash about half the beans. Stir.
  • Add beans to the rice, and garnish with fresh parsley or green onions if desired.

3 (16 ounce) cans red beans (2 cans with liquid, 1 can drained)
1/2-3/4 lb smoked ham hock
1 1/4 cups water
1/2 teaspoon onion powder
1/2 teaspoon garlic salt
1/4 teaspoon red pepper
1/2 teaspoon salt, to taste
5 tablespoons lard
1/4 teaspoon fresh ground black pepper
4 -5 cups long grain rice, cooked and drained

Steps:

  • Pour 2 cans of beans with their liquid into a 2-quart saucepan.
  • Add smoked ham hock and water.
  • Simmer over medium heat for 1 hour until the meat starts to loosen from the bone.
  • Remove from heat and cool until the hock is cool enough so the meat may be removed from the bone.
  • Place the meat, beans and liquid in a food processor.
  • To the mixture add onion powder, garlic salt, red pepper, salt, and lard.
  • Process for only 4 seconds.
  • Beans should be chopped and liquid thick.
  • Add the third can of beans that have been drained of their liquid.
  • Process just for a second or two; you want these beans to remain almost whole.
  • Pour bean mixture back into to pan and cook slowly on low heat stirring often until ready to serve.
  • Serve over rice.

1 (15 ounce) can red beans
1 slice salt pork (about 1-inchx4-inch) or 1 slice pork fatback (about 1-inchx4-inch)
2 tablespoons oil
2 tablespoons diced onions
1 tablespoon bell pepper
1/2 teaspoon sugar
1/2 teaspoon liquid smoke
garlic powder
onion powder
cumin powder
celery seed, powder
paprika
chili powder
cayenne powder
1/2 cup water

Steps:

  • Cook oil, pork, onion, and green pepper over low-med heat until meat is translucent & fat is rendered. Don't brown or overcook meat.
  • Put meat mixture (incl. all the fat & oil) in food processor with a little water and about 25 beans and mix until blended & smooth. Place back in cooking pot.
  • Mix or pulse remaining beans in food processor with enough water until it has consistency of salsa. Add to cooking pot.
  • Add remaining ingredients to cooking pot (spices, liquid smoke, sugar) and enough water to make a loose, soupy mixture (the beans will thicken the mixture as it cooks).
  • Cook over low-med heat for 10 minutes, stirring, and adding water as necessary to end up with the consistency of thick gravy. Serve over quality white rice.

1 cup chopped onion
1 garlic clove
1 tablespoon olive oil
1/4 cup liquid smoke
2 links andoullie sausages, ground in the food processor (we used Aidells which is pork but try chicken)
1/2 lb turkey ham, cut into cubes
3 (15 ounce) cans red kidney beans, drained and rinsed
3/4 cup water
1 teaspoon thyme
1 teaspoon fresh ground pepper
1/2 teaspoon sage
1/8 teaspoon cayenne pepper
1 teaspoon salt, to taste
3 cups uncooked rice

Steps:

  • Start rice in a rice cooker.
  • Saute onion and garlic in a pot in olive oil. Add smoke and ground/diced meats, give a spin around the pot to release juices and add beans, spices and water. Cover and cook on low 40 minutes When you next view their should be a broth in with the beans (if not add a little water and cook a few more minutes).
  • Turn off burner and get out a hand masher. Mash the beans and meat mixture down and then grind the trapped beans around in a circle. When 2/3 of the mix is smooth spoon over rice and serve.
