POPCORN SNACK MIX (NO-BAKE RECIPE)
My easy Popcorn Snack Mix involves no baking and is super versatile using what you can find in your store cupboard. Popcorn, cornflakes, chocolate chips, salted nuts and marshmallows are all drizzled with melted chocolate. Its a delicious snack for kids and adults alike.

Steps:
- Add 2 tsp Vegetable Oil and 50g Corn Kernels to a large saucepan. Put on a medium heat shaking the pan occasionally until the popping stops. Tip the popcorn out onto a large tray.
- Chop 75g Salted Nuts. Keep some chunky, chop some a little smaller. It depends on what nuts you are using as to how much you want to chop. Don't got too small. Add the nuts to the popcorn.
- Also add 25g Mini Marshmallows, 30g Corn Flakes and 50g Dark Chocolate Chips.
- Mix everything together well and spread out on the tray.
- Break up 50g Dark Chocolate and 50g Milk Chocolate into a small bowl or saucepan.
- Melt in the microwave or on the hob and stir well.
- Drizzle the melted chocolate over the snack mix.
- Leave to cool then use your hands to break up any bigger pieces where the chocolate has stuck ingredients together. You can leave some clumps for variety.
- Store in an airtight container or eat!

- Mix first six ingredients in a paper bag or clean trash bag.
- Mix popcorn oil, garlic salt and onion powder together.
- Pour over first six ingredients.
- Mix well and let sit overnight. Stir or shake several times.
- Makes a big tupperware bowl full - and is awesome stuff.

- Preheat oven to 250 degrees.
- Grease a large roasting pan and pour in popcorn, cereals, and peanuts, stir to combine.
- In a large saucepan, combine brown sugar, corn syrup and butter and bring to a rolling boil.
- Boil for 6 minutes, stirring frequently.
- Remove from heat and quickly stir in vanilla and soda until light and foamy.
- Immediately pour over popcorn mixture and stir until coated well.
- Bake uncovered for 1 hour, stirring every 15 minutes or so.

MAPLE BACON SNACK MIX

- Line 2 sheet pans with waxed paper, then set aside.
- Add the popcorn, bacon, pretzels and nuts to a large bowl. Mix and set aside.
- Add the sugar, butter, maple syrup, corn syrup and salt to a large, heavy-bottomed pot fitted with a candy thermometer and place over a medium-low heat. When the butter has melted, stir together, then turn up the heat to medium-high. Cook, stirring occasionally, until the candy thermometer reads "hard-crack stage" (300 degrees F), 4 to 5 minutes.
- Remove from the heat and stir in the maple extract. Carefully pour over the snack mix and toss using two wooden spoons. Transfer to the prepared sheet pans and spread out to allow it to cool, about 10 minutes. Break into clusters and transfer to a large serving bowl.
POPCORN SEASONING MIXES
When our grandkids sleep over, we usually watch a movie; they like seasoned popcorn but we pefer the plain old buttered stuff! Thanx to Martha Stewart, we now spend a little quality time in the kitchen as each child "cooks up" a mix before "show time"! All of the variations can be doubled or tripled, depending on the size of the container you plan to use. The Italian mixture should be kept in the refrigerator, as it contains fresh cheese.

Adapted from Go for your life, I wanted a toddler friendly snack mix that would kind of fit the Halloween theme. I came up with this colourful combo. I also added some "Cocoa rocks" to this which added to the effect to look like stones. The kids devoured this at playgroup. You could also adapt this to fit the xmas theme by substituting apricots for dried cherries and adding some dried kiwi, dried peas or a lolly such as mint leaves or green smarties or M+M's.

- Preheat the oven to 300 degrees F. Line 2 baking sheets with foil.
- In a large bowl, combine the popcorn, cereal, pretzels and peanuts. In a medium saucepan, combine the brown sugar, butter and corn syrup. Cook over medium heat, stirring, until the mixture comes to a boil. Reduce the heat to medium low and simmer without stirring for 5 minutes. - Divide the mixture between the prepared baking sheets and bake, stirring every 10 minutes, for 30 minutes. Transfer the pans to wire racks and let cool completely, continuing to stir occasionally as the snack mix cools.
