- Remove and discard unpopped kernels from popped popcorn. Divide popcorn among four 10-inch microwavable dinner plates. Sprinkle each with desired amount of chili powder and equal amounts of olives, chilies and cheese.
- Microwave 1 plate at a time uncovered on High about 1 minute or until cheese is melted. (If cheese melts unevenly, rotate plate 1/2 turn after 30 seconds.) Serve warm.

Steps:
- Preheat oven to 300°F.
- Spread popcorn out evenly on a rimmed baking sheet and set aside.
- Combine butter, chives (if using), zest, cumin and chili powder in a bowl.
- Microwave on medium until butter is melted (about 40 seconds).
- Stir well then drizzle mixture evenly over popcorn and toss well.
- Sprinkle with salt and pepper, then stir well.
- Spread out in an even layer.
- Sprinkle cheese evenly over top.
- Bake for 5 minutes or until cheese is evenly melted.
NACHO CHEESY POPCORN

- Heat the grapeseed oil in a large saucepan or soup pot over medium-high heat. Add the popcorn seeds and place the lid on the pan. Shake vigorously to coat the kernels with oil. When the corn starts to pop, shake the pan constantly until the popping stops, 5 to 7 minutes. Remove from the heat and pour the popped corn into a large mixing bowl.
- Drizzle the melted coconut oil over the corn, and sprinkle with nutritional yeast, chili powder, cumin, garlic powder and sea salt. Stir thoroughly and serve with a few shakes of hot sauce, if using.

- Mix together half each of the yogurt and lime juice with 1⁄2 teaspoon of garlic granules and 1⁄4 teaspoon of paprika in a bowl, plus some seasoning. Cut any larger pieces of chicken into smaller chunks and stir into the yogurt mixture. Cover and marinate for 30 minutes (or longer if you can).
- Preheat the oven to 220°C, fan 200°C, gas 7. Mix the rest of the garlic granules and paprika with the breadcrumbs in a bowl. Drain the chicken from its marinade then toss a few pieces at a time in the crumbs to coat. Repeat until all of the chicken is coated, then spread out on a large oiled baking tray. Drizzle with 11⁄2 tablespoons of oil and turn to coat lightly. Add the red pepper and spring onions to another tray and coat in the remaining oil.
- Roast on the top oven shelf for 15 minutes, or until the chicken is crisp and cooked through, and the veg have softened, turning after 10 minutes.
- Meanwhile, spread out the tortilla chips in a large shallow baking dish (about 20cm x 30cm) and bake for 5 minutes to crisp up. Scatter the sweetcorn, jalapenos and two-thirds of the cheese over the tortilla chips and return to the oven for 5 minutes. Stir the rest of the lime juice and yogurt together in a small bowl; season to taste.
