EASY GROUND BEEF STROGANOFF RECIPE

- Set Instant Pot to "Sauté."Note: Settings may vary on your Instant Pot, depending on the model. Please refer to the manufacturer's guide on how to use your Instant Pot.
- Adjust the [+] or [-] button to set the timer to 25 minutes.
- Heat olive oil and butter in the Instant Pot. Add onion and garlic. Cook, stirring often, for about 3 to 5 minutes or until onion is softened a little. Stir in mushrooms and cook, stirring every so often, for 5 to 8 minutes. Add ground beef, salt and black pepper. Cook, breaking the ground beef into small pieces and stirring occasionally, until the ground beef is fully cooked through (the ground beef should no longer be pink and be browned all the way through), about 8 to 10 minutes. Stir in Worcestershire sauce and sprinkle flour from over top. Stir in. Pour in beef stock and stir in egg noodles. If there is any time left on the timer, press "Cancel."
- Close and lock lid. Set the vent on the lid to "Sealing" (steam valve in closed position). Ensure you follow the manufacturer's guide for closing and locking the lid.
- Next, select the "Manual" or "Pressure Cook" (default high setting) button (depending on which model you have). Adjust the [+] or [-] button to set the timer to 5 minutes (it will take 5 to 8 minutes or so for the Instant Pot to come to pressure before counting down the 5 minutes).
- After the pressure cook cycle is complete, follow the manufacturer's guide for Quick Release and wait until the Quick Release cycle is complete. Unlock and remove lid, being careful of any remaining steam (ensure you follow the manufacturer's guide for unlocking and removing the lid).
- Stir in sour cream and parsley. Serve and enjoy!Note: Enjoy immediately or properly store leftovers in an airtight container in the fridge and enjoy within 2 to 4 days, reheating when ready to enjoy.
SNAPPY STROGANOFF

- Bring a pot of salted water to a boil. Add the noodles and cook according to the package directions. Drain and toss with 2 tablespoons of the butter and 1 tablespoon of the parsley. Keep warm.
- Meanwhile, melt the remaining 2 tablespoons butter over medium-high heat in an extra-large skillet. Add the beef, season with the paprika and some salt and pepper and cook until browned on all sides but still pink in the middle, 2 to 3 minutes. Remove from the skillet and set aside.
- Add the mushrooms, onions and thyme to the skillet and season with salt and pepper. Cook until beginning to soften, 2 to 3 minutes. Add the hot stock and wine and cook for a minute until it reduces. Lower the heat and stir in the heavy cream and mustard. Add the beef back in, along with any juices on the plate. Cook for 1 minute so the beef is heated through. Turn off the heat and stir in the sour cream. Taste and adjust the seasoning.
- Serve over the buttered noodles and garnish with the remaining parsley.
POOR MAN'S STROGANOFF
This is a recipe I came up with when I was helping to raise 6 kids. Every penny counted. You can add onions if desired.

- Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally, until cooked through but firm to the bite, about 5 minutes; drain.
- Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Season beef with Greek seasoning, salt, and pepper.
- Heat vegetable oil in a separate skillet over medium heat. Cook and stir mushrooms in hot oil until tender, about 5 minutes; add to ground beef.
- Stir sour cream into ground beef mixture; cook and stir until hot, about 5 minutes. Serve over egg noodles.

POOR GIRL'S STROGANOFF
This is a great and easy comfort food recipe which I found in a Midwestern Junior League Cookbook. This cooks up quick and great paired with a salad and garlic bread. Instead of a skillet, I use a large 9" sauce pan with lid.

- Saute onion in butter. Remove from skillet and set aside. Brown the ground beef; return the onion.
- Lay dry noodles over the meat and onion mixture. Do not stir.
- Over all, pour tomato juice mixed with salt, celery salt, Worcestershire sauce and pepper. Cover and simmer 15 minutes, then stir. Cook covered 15 minutes more.
- Add sour cream; stir well. Heat but do not boil.

POOR MAN'S STROGANOFF
Steps:
- Preheat oven to 325 degrees F. Brown beef & onion in skillet while also cooking macaroni according to pkg. directions.
- Put beef & onion into colander to drain off excess fat. Pour cooked macaroni directly on top of the beef (the boiling water from the macaroni rinses off even more of the fat). Pour beef & pasta into large mixing bowl & mix well. Sprinkle the ranch dip mix over the beef, onion & pasta & mix well. Add sour cream & mushrooms & mix well. Stir in 2 cups of the shredded cheddar cheese (reserve 1 cup).
- Put into casserole. Sprinkle remaining 1 cup of cheese on top.
- Bake for 45 to 55 minutes (cheese on top should be melted.)
