This simple tomato sauce gets tons of flavor from herbs steeped in olive oil that lusciously coats potato pillows of gnocchi, topped with fresh balls of mozzarella.

1/4 cup DeLallo extra virgin olive oil (, plus 1 tablespoon)
4 stems fresh Italian flat leaf parsley
4 stems fresh oregano
2 stems fresh rosemary
2 stems fresh basil (,plus 2 more stems for serving)
1/2 yellow onion (, diced)
3 cloves garlic (, pressed or minced)
1 28 ounce can DeLallo San Marzano tomatoes
Kosher salt and freshly ground black pepper
Pinch of red pepper flakes
1/4 cup heavy cream (, optional)
1 16- ounce package DeLallo potato gnocchi
8 ounces cherry size mozzarella balls (, cut in half)
1/2 cup freshly grated Parmesan cheese

Steps:

  • Add 1/4 cup olive oil to a 10-inch high sided sauté pan or a saucepan over medium heat. Add the parsley, oregano, rosemary and 2 stems of basil and cook for about 5 minutes or until the herbs become crisp.
  • Remove the herbs and discard then add the onion and garlic to the oil, lowering the heat if needed so the onions cook gently and don't brown. Cook until the onions are transparent, about 5-7 minutes, then crush the tomatoes with your hand and add to the pan with juice.
  • Season with kosher salt, freshly ground black pepper and red pepper flakes and simmer for 30-40 minutes or until the sauce reduces and thicken, stirring occasionally. Stir in the heavy cream and remove from the heat.
  • Meanwhile, bring a saucepan of water to a boil and add the gnocchi. Season generously with kosher salt and cook until the gnocchi float to the top of the boiling water.
  • Drain and then place the gnocchi into the cooked sauce. Top with the halved mozzarella balls and sprinkle with Parmesan cheese then drizzle the tops of the gnocchi with the remaining olive oil.
  • Broil for 5-8 minutes or until the cheese melts and the tops become crispy. Garnish with additional basil leaves and serve immediately.

1/2 small onion, finely chopped
1 garlic clove, minced
1/2 lb fresh mushrooms, sliced
2 tablespoons olive oil
15 basil leaves, finely shredded or 2 teaspoons dried basil
16 ounces plum tomatoes, diced
salt and pepper
2 tablespoons grated parmesan cheese
1/2 cup shredded mozzarella cheese
16 ounces gnocchi (Italian potato noodles)

Steps:

  • Heat olive oil in a saucepan and cook the onion, garlic, and mushrooms until soft.
  • Add the diced tomatoes and cook for 5 minutes.
  • Add the basil, salt and pepper.
  • Cook the Gnocchi as directed on package. Drain well. Toss the Gnocchi with the sauce and sprinkle with the parmesan cheese and Mozzarella cheese.
  • Put under the broiler to melt the cheese. Enjoy!

This is the famous director's simple recipe for tomato-basil sauce. It was printed in the great cookbook, "Taste: One Palate's Journey Through the World's Greatest Dishes" by David Rosengarten. You can also top with some finely chopped fresh basil just before serving.

2 tablespoons olive oil
2 medium onions, chopped
3 (28 ounce) cans tomatoes, crushed and drained (imported Italian tomatoes highly recommended)
1 bunch fresh basil, coarsely chopped or torn
1 pinch red pepper flakes, crushed
1 tablespoon unsalted butter
2 lbs spaghetti, cook as directed and reserve the water

Steps:

  • Heat oil in a pan on on medium heat. Saute onions in oil until transparent (about 5-7 minutes). Add tomatoes, 1/4 of the basil and pepper flakes.
  • Simmer about 45 minutes. Add butter and remaining basil. If sauce is too thick, add some pasta cooking water.
  • Serve over pasta.

Serve fluffy pillows of gnocchi in a delicious pomodoro (tomato) sauce for a classic no-frills Italian-style treat. The gnocchi and sauce can be frozen, separately, for busy days

rock salt, for the tray
1.5 kg Maris Piper potatoes
375g pasta flour, plus extra for dusting
1 medium egg, lightly beaten
semolina, for dusting
3 x 400g cans chopped tomatoes
3 tbsp extra virgin olive oil, plus a drizzle to serve
1 onion, finely chopped
1 garlic clove, crushed
¼ tsp chilli flakes
1 tsp sugar
bunch of herbs, tied together (oregano, thyme and bay all work well)
handful of basil, leaves picked and torn
ricotta salata, pecorino or vegetarian alternative, finely grated, to serve

Steps:

  • Heat the oven to 220C/200C fan/ gas 8. Tip a layer of rock salt onto a baking tray and sit the potatoes on top. Roast for 50 mins-1 hr or until tender when a cutlery knife is inserted. Leave to cool for 10 mins, then peel off the still warm skins. Pass the potatoes through a ricer or push through a sieve using a spoon onto a work surface, then leave to cool. Add the flour, egg and ½ tsp salt to the potato and gently bring everything together using your hands until you have a uniform dough - don't overwork it. Divide the dough into four. Roll each piece into a long sausage on a lightly floured surface to around 2cm in diameter. Cut each one into 1.5-2cm nuggets. You can keep them like this or roll ridges onto to them with the back of a fork or a ridged pasta paddle. Set aside on a baking sheet dusted with semolina.
  • For the sauce, blitz the canned tomatoes using a jug blender or hand blender. Heat the oil in a large pan over a low-medium heat, then add the onion and a pinch of salt and fry for 10-15 mins until softened and translucent. Tip in the garlic and chilli and cook for 1 min, then add the sugar, blitzed tomatoes and herbs, and bring to a simmer. Cook, uncovered, for 20 mins, stirring regularly. Season to taste.
  • Bring a large pan of lightly salted water to the boil. Add the gnocchi in two batches and cook for 2-3 mins or until they bob to the surface. Drain the gnocchi in a colander, then toss in the pan with the tomato sauce. Spoon onto a large sharing plate, then top with the basil, grated cheese and a drizzle of olive oil. You can open-freeze the gnocchi on trays, then store in sandwich bags for up to three months, which can then be cooked for 3-5 mins from frozen.

My children really LOVE this recipe. It's time consuming for sure, but I double it and freeze for the next time. We serve with a side salad and lots of fresh French bread (I think garlic bread overwhelms it).

1 (28 ounce) can whole Italian tomatoes
2 tablespoons olive oil
1 tablespoon chopped garlic
salt and pepper
crushed red pepper flakes
6 -8 large fresh basil leaves, chopped
1/2 cup cream
6 large baking potatoes, like russets
2 egg yolks
4 ounces butter, melted
1 pinch salt
1 pinch white pepper
fresh grated nutmeg
2 cups flour
grated parmesan cheese, to serve

Steps:

  • To make the Sauce: Take the tomatoes out of the can, cut in half, and remove the seeds. Chop the tomatoes into small pieces and reserve the juice.
  • In a saucepan, add olive oil and garlic and sauté for 1 minute.
  • Add the tomatoes, salt, pepper and chili and bring to a simmer for 5 minutes. If necessary, add the reserved juice.
  • Add the basil.
  • Finish with cream.
  • To make the gnocchi: Preheat the oven to 300°F.
  • Bake the potatoes for approximately 1 to 1 1/2 hours, until tender.
  • Scoop each potato out of its skin into mixing bowl.
  • Mash the potatoes to a fine consistency.
  • In a separate bowl, combine egg yolks, melted butter, salt, pepper and nutmeg.
  • Add the egg mixture to the potatoes and mix together.
  • Add flour to mixture, 1 cup at a time, and mix until smooth.
  • Scoop out and make finger-sized rolls on a floured board.
  • Cut with knife into bite sized pieces.
  • Roll each piece over the back of a fork to make a round form.
  • In a pan, freeze until hard enough to handle, and put into portion sized bags.
  • Fill a large pot with water and add a pinch of salt and boil.
  • Drop gnocchi into boiling water 3 or 4 at a time so the water doesn't stop boiling.
  • The gnocchi is ready when it floats to the top.
  • Drain gnocchi and scoop out into bowl and add sauce.
  • Add fresh Parmesan and serve.

1 cup water
1 teaspoon kosher salt
1/4 teaspoon grated nutmeg
3 tablespoons unsalted butter, divided
1 cup all-purpose flour
3 large eggs
1/4 cup gruyere or 1/4 cup asiago cheese
2 tablespoons gruyere or 2 tablespoons asiago cheese

Steps:

  • In small saucepan, combine water, salt and nutmeg with 2 tablespoons butter. Bring to boil over high heat. Add flour all at once and beat dough with wooden spoon until thick and comes away from sides of pan. Cook, stirring to dry out dough, about 30 seconds. Transfer dough to medium bowl. Cool 5 minutes.
  • Bring large pot of salted water to boil over high heat. Set bowl of ice water near stove.
  • Beat 1 egg into dough until incorporated. Beat in 1/4 cup cheese and another egg until blended. Beat in last egg until dough is smooth and shiny. With spatula, transfer dough to large resealable plastic bag, pressing it into one corner. Cut tip off bag to create opening 1/2-inch long.
  • Reduce boiling water to gentle simmer. Hold bag over water with one hand and squeeze out dough, using small sharp knife to cut it into 1-1/2-inch lengths; let drop into water. Simmer gnocchi 3 minutes. With slotted spoon, transfer to ice water. Transfer to paper towels and pat dry.
  • Grease 13- by 9-inch baking dish with remaining 1 tablespoon butter. Scatter gnocchi in dish; sprinkle with remaining 2 tablespoons cheese. Bake in preheated 350F oven until puffed, about 25 minutes. Preheat broiler. Broil gnocchi 6 inches from heat until browned, 1 to 2 minutes. Serve immediately.
  • Makes 4 servings.

5 lbs ripe plum tomatoes or 3 (28 ounce) cans crushed plum tomatoes, with their liquid
1/2 cup colavita extra virgin olive oil
2/3 cup onion, diced
3 garlic cloves, minced
1 1/2 cups dry red wine
1/4 cup sugar
1 tablespoon fine sea salt, to taste
fresh ground black pepper, to taste
6 -8 leaves fresh basil

Steps:

  • If using fresh tomatoes, core them, cut them into coarse chunks, and puree them in a food processor, blender, or food mill until smooth. Strain the flesh of canned tomatoes through a fine sieve, to remove skins and seeds. Set aside.
  • Heat the olive oil in a large pot, and cook the onion over a medium heat, stirring, until soft.
  • Add the garlic and cook, stirring occasionally, until it becomes soft. Do not let the garlic brown, or an acid taste will be imparted in the sauce.
  • Add the remaining ingredients, reduce the heat to low, and simmer until thickened, about 15 minutes.
