POMEGRANATE AND FIG MARGARITA
Sponsored by Cointreau. The addition of black mission figs and pomegranate juice gives this otherwise classic margarita an autumnal twist. Black mission figs have a distinctly subtle flavor that's almost like a mix of melon and berry, making them an ideal pair with the duo of citrus (fresh lime juice and orange liqueur) that balances this fresh-flavored cocktail.

- For the fig-honey syrup: Combine the figs, 3/4 cup water, honey and salt in a medium saucepan. Bring to a boil over high heat, then reduce to medium heat. Cook, mashing the figs with a potato masher or whisk, until the mixture thickens and is deep purple, 3 to 5 minutes. Let cool completely.
- Strain through a fine-mesh sieve set over a bowl, pressing on the solids to extract as much liquid as possible; discard the solids. Makes 5 to 6 1/2 ounces or enough for 6 to 8 cocktails (see Cook's Note).
- For the cocktail: Spread some salt in a small shallow bowl. Run 1 of the lime wheels around the rim of a rocks glass, then dip the rim into the salt to coat.
- Add the tequila, lime juice, orange liqueur, fig-honey syrup and pomegranate juice to a cocktail shaker. Fill the shaker with ice and shake vigorously until mixed and chilled, 20 to 30 seconds. Fill the prepared glass with ice and strain the cocktail into it. Garnish with the remaining lime wheel and fig half, pierced on a cocktail pick. Serve immediately.
POMEGRANATE MARGARITA
We had these at a friend's home last evening; they were very tasty. Didn't see one on the "zaar" so thought I'd share. These are very nice for the holidays and pomegranates have been touted in the news for their antioxidant benefits. Our host said they used a little more pomegranate juice than the recipe calls for so use your own judgment.

POMEGRANATE MARGARITA
Steps:
- Pour salt onto a plate or shallow dish. With a lime wedge rub along the rim of a glass and dip glasses upside down to salt the rim. Fill glasses with ice. In a cocktail shaker with ice place the tequila, triple sec, pomegranate juice, and lime juice. Pour into the salt-rimmed glasses and top off with club soda. Garnish with a lime wedge, if desired.
CHIPOTLE MARGARITA
Steps:
- In a cocktail shaker, muddle orange slices with ice, chipotle juice and lime juice. Add more ice, tequila, orange liqueur, and simple syrup. Shake and strain into a glass filled with ice. Serve garnished with an orange slice.

- For the chipotle salt: Mix together the salt and 1 teaspoon chipotle powder on a plate.
- For the margarita: Fill a cocktail shaker with ice. Add the grapefruit juice, tequila, orange liqueur and pinch of chipotle powder. Cover and shake until mixed and chilled, about 30 seconds. (In general, the drink is ready by the time the shaker mists up.).
- Moisten the rim of a chilled rocks glass with one of the grapefruit wedges and press the rim into the chipotle salt. Strain the margarita into the prepared glass and garnish with the remaining grapefruit wedge.
