Simple and tasty! I came up with this when I was short on time and long on craving spaghetti. This freezes well, so you can serve 1 or 2 and save some for the next time you're in a real hurry.

2 tablespoons unsalted butter
1 small onion, chopped
1 garlic clove, minced
1 lb ground round
1/2 cup dry red wine
1 (10 ounce) can tomato soup
1 cup beef broth
1/2 teaspoon marjoram
1/2 teaspoon dill weed
1/2 teaspoon chili powder

Steps:

  • Sauté onion and garlic in butter just until softened.
  • Add ground round and brown slowly, breaking up to a fine crumble.
  • Add wine and simmer for about 20 minutes until it is reduced by half.
  • Add tomato soup, broth, and seasonings, stir well and bring to boil.
  • Cover and simmer for 1 hour. If sauce is not thick enough for you, uncover and simmer for another 10 to 15 minutes.
  • Serve over your favorite pasta.

At my house, we never know how many we'll have for dinner. That's why this spaghetti sauce is one of my favorites - flavorful, filling and fast. Smoked kielbasa gives it depth, and salsa adds the kick. -Bella Anderson, Chester, South Carolina

1 pound ground beef
1 pound smoked kielbasa, cut into 1/4-inch slices
2 jars (24 ounces each) spaghetti sauce with mushrooms
1 jar (16 ounces) chunky salsa
Hot cooked pasta

Steps:

  • In a Dutch oven, cook beef over medium heat until no longer pink; drain and set aside. In the same pan, cook sausage over medium heat 5-6 minutes or until browned., Stir in the spaghetti sauce, salsa and reserved beef; heat through. Serve with pasta.

This sauce can be divided into single servings, frozen for future use. When reheating go ahead and add some VODKA and cream for a great vodka meat sauce (here's the Polish part)! I made this with only 1 tablespoon Olive oil and lean meats trying to keep the fat down and didn't lose anything in taste! Delicious in a meat lasagne or a baked ziti dish. Top a pizza or go a whole different way and place in a pie dish and top with mashed potatoes for a Italian shepherds pie! Now that's South meets East meets Western Europe! ;) Enjoy!

1 tablespoon extra virgin olive oil
4 garlic cloves, minced
1 large onion, diced
1 red bell pepper, diced
1 carrot, diced
1 celery rib, chopped
8 ounces mushrooms, sliced
1/2 cup chianti wine
1 bunch fresh Italian parsley, chopped and divided in 1/2
1 1/2 lbs ground beef
1/2 lb ground pork
2 tablespoons Worcestershire sauce
2 tablespoons Italian spices
1/4 teaspoon red pepper flakes
4 -8 fresh basil leaves
2 lbs tomato puree
2 lbs fresh tomatoes, skinned and diced
2 ounces tomato paste
salt & freshly ground black pepper

Steps:

  • In a large heavy bottom pot on medium heat, heat up the olive oil, add the garlic, onion, pepper, carrot, celery, and mushrooms cook allowing them to soften about 5 minutes.
  • Add Chianti and simmer for 5 minutes.
  • Add 1/2 the parsley, meats, mix everything together breaking up and cook over a gentle flame until the meat has changed color.
  • Add Worcestershire sauce, Italian seasonings, red pepper flakes, basil, tomato puree, diced tomatoes, and paste.
  • SIMMER gently for half an hour and season to taste with salt and black pepper. Be sure to stir not to burn this rich thick sauce.
  • If the mixture is dry add a little more olive oil, some vodka, or tomato puree. Serve over pasta, topped with parmesan cheese and remaining fresh parsley to garnish.

This simple recipe came from the Polish side of my family. We simply called it 'cottage cheese and noodles' or 'lazy man pierogies.' It's a great comfort food and can be made with any kind of noodle. It could be a side dish, but we always enjoyed it as a meal.

½ cup butter
1 small onion, diced
1 (16 ounce) package egg noodles
1 (16 ounce) package cottage cheese
½ cup sour cream
½ teaspoon sea salt
¼ teaspoon ground black pepper

Steps:

  • Melt butter in a saucepan over medium heat. Cook and stir onion in melted butter until softened, 7 to 10 minutes.
  • Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally until cooked through but firm to the bite, about 5 minutes. Drain and return to the pot.
  • Stir butter and onion mixture, cottage cheese, sour cream, sea salt, and black pepper into the noodles. Place the pot over medium heat; cook and stir until heated through and warm, 5 to 8 minutes.

I do not know where this recipe came from. A friend gave it to me. This is THE BEST SAUCE I've ever had!! We use to like dining out at Italian places but not now. Not after eating this sauce. I don't think there is any sauce that will taste as good as this. My Husband eats this stuff by the spoonful. It is that good!! (I don't claim it is Italian, I just know my family loves it!) I am sad to see that this recipe isn't liked by all. My sister said it was too sweet as well. I guess you just have to have a sweet tooth to enjoy. I hope you try it a different way to satisfy your taste buds. If it is not Italian enough for you, then maybe try adding more Italian seasoning and leaving out the sweets and maybe trying Italian Sausage in addtion to or instead of the polish sausage. For the other person: if it is too sweet, next time, just don't add all the molasses and or brown sugar or take one of them out and add all of the other. Sorry you had to toss it. You could have frozen it and fixed it next month or 6 months from now. It freezes well!

1 (7 lb) can tomato sauce
2 -3 lbs hamburger
onion
red pepper
green pepper
1/2 lb Polish sausage, chopped
3 tablespoons italian seasoning
2 tablespoons garlic (1 TBSP if using Fresh)
2 cups chopped tomatoes
1/2 cup molasses
1/2 cup brown sugar
fresh basil (add to your liking) or dried basil (add to your liking)

Steps:

  • Put tomato sauce in large stock pot 8quarts or larger.
  • Brown hamburger, drain (I like using paper towels to pat grease out as much as possible).
  • Add to pot.
  • Brown the chopped polish sausage.
  • add sausage to pot.
  • KEEP grease.
  • In grease from sausage, cook onion, green and red peppers until tender.
  • I like them browned.
  • Add to pot.
  • Start simmering Sauce in the stock pot.
  • Now add the remaining ingredients.
  • Let simmer on low heat at least an hour (or longer).
  • Stirring occasionally.
  • I usually divide this into 1 quart containers and freeze until ready to use.
  • I usually have 6 quarts to freeze.
  • I usually thaw in microwave a bit them simmer more while cooking spaghetti.

1 lb ground beef
1 pkg kielbasa
2 Tbsp garlic powder
1 pinch salt
1 Tbsp italian seasoning
1 jar(s) favorite spaghetti sauce

Steps:

  • 1. Brown hamburger in pan with 1/2 tablespoon garlic, 1/2 tablespoon Italian seasoning and salt.
  • 2. Drain hamburger of grease. Put in sauce pan.
  • 3. Add favorite sauce to hamburger add rest of garlic and Italian seasoning. Cook on medium heat till boils (not roaring),stirring constantly.
  • 4. Cut Kielbasa into small 2 bite size pieces, add to sauce. Continue to boil for 5 minutes than turn to simmer. Let simmer for 30 minutes.
  • 5. Spoon or ladle over favorite noodle and serve with garlic bread.
