  • Combine butter, wine, lemon juice, dill, sugar, salt, and black pepper together in a microwave-safe casserole dish; place cover on dish.
  • Microwave butter mixture until butter is melted, 45 to 60 seconds. Add salmon, skin-side up, to butter mixture and place cover on dish. Microwave until salmon flakes easily with a fork, about 6 minutes.

2 to 3 cups of water or a combination of water and dry white wine
1/2 teaspoon whole coriander seeds
Bay leaf

Steps:

  • Arrange salmon in a single layer in a skillet that is 2 inches deep. Season with salt. Add enough water and wine to completely cover the salmon; add coriander seeds and bay leaf. Slowly bring liquid barely to a simmer. Reduce heat to low, cover the skillet and simmer for 3 to 4 minutes or until the salmon looks opaque.
  • Turn heat off and let stand covered for 10 minutes or until you are done eating your greens.

¼ onion
¼ carrot
¼ pack shimeji mushroom
2 tablespoons sake, or white wine
1 tablespoon butter
salt, to taste
pepper, to taste
soy sauce, to taste

Steps:

  • Cut a piece of parchment paper in the shape of a square. Slice the onion thinly. Julienne the carrot. Cut the bottom of shimeji mushroom and tear into bite-sized pieces.
  • Place the salmon at the center of the parchment paper. Season with salt and pepper.
  • Place onion, carrot and shimeji in that order.
  • Sprinkle sake and put the butter on top.
  • Bring up the top and the bottom corner of the paper. Fold the top corner for 3 to 4 times. Twist the ends.
  • Place the salmon packet on a microwave safe plate and microwave for 4 minutes, or cook in 350°F (180°C) oven for 20 min.
  • Open the parchment paper carefully and drizzle soy sauce on top.

450g fillets of salmon or firm white fish, such as cod
1½ tbsp finely shredded fresh root ginger
3 tbsp finely shredded spring onions
2 tbsp light soy sauce
2 tsp dark soy sauce
1 tbsp groundnut oil
2 tsp sesame oil
handful of fresh coriander sprigs, to garnish

Steps:

  • Pat the fish dry with kitchen paper then cut into very big pieces. Put in a heatproof dish and evenly scatter with the ginger. Wrap tightly in cling film. Can be prepared to here up to 2-3 hours ahead, chill. Put the plate of fish into the microwave and cook for 3-5 minutes (depending on its thickness and how you like your fish cooked) on full power.
  • Remove the plate of cooked fish. Wait one minute and pour off any excess liquid that may have accumulated on the plate, then scatter the spring onions on the fish, together with the light and dark soy sauces.
  • Heat the two oils together in a small saucepan until very hot, then pour over the top of the fish. Scatter with a handful of coriander sprigs and serve at once.

Steps:

  • Marinate and/or baste salmon with 1/2 of your favorite marinade.

1 medium onion, chopped
2 celery ribs, chopped
4 sprigs fresh parsley
1/2 cup dry white wine
1 tablespoon soy sauce

Steps:

  • In a large saucepan, combine the first 8 ingredients. Bring to a boil; reduce heat. Simmer, covered, 30 minutes. Strain, discarding vegetables and spices., Cut three 20x3-in. strips of heavy-duty foil; crisscross so they resemble spokes of a wheel.
