TRADITIONAL POACHED SALMON

Number Of Ingredients 6

1 teaspoon olive oil
Four 4- to 6-ounce fillets salmon
Sea salt and white pepper
2 lemons, 1 halved and 1 cut into wedges
1 bottle dry white wine, such as pinot grigio
Fresh parsley, for garnish

Steps:

  • Drizzle the olive oil over the salmon fillets and season with some sea salt and white pepper. Set aside.
  • Fill a high-sided large skillet one-third of the way up with water. Add the wine and lemon halves. Bring to a low simmer, add the salmon and let cook until firm to the touch, 5 to 7 minutes for medium. For well-done salmon, cook for 10 minutes.
  • Serve garnished with the lemon wedges and parsley.

Oven Poached Salmon a la Paige with Dill, Vidalia Onion and Cucumber Relish image

1 tablespoon cold butter
4 portions, 6 to 8 ounces each, salmon fillets
Salt and pepper
Several sprigs plus 3 tablespoons chopped fresh dill
2 cups chicken broth or water
2 teaspoons sugar
1 teaspoon salt
1/4 cup white vinegar or white wine vinegar
1 small vidalia onion, chopped
1/2 seedless cucumber, chopped
2 radishes, chopped

Steps:

  • Preheat oven to 400 degrees F.
  • Rub the bottom of a shallow baking dish with cold butter. Arrange salmon in dish. Season the fish with salt and pepper. Add broth and a few sprigs of dill to the pan. Roast the fish 12 to 15 minutes.
  • Combine sugar, salt and vinegar in the bottom of a medium bowl. Add chopped onions, chopped cucumber and radishes. Sprinkle in 3 tablespoons chopped dill and toss the mixture to coat in vinegar, sugar and salt.
  • Remove fish from the oven. Spoon pan juices over fish and carefully transfer to individual plates or platter. Top fish with relish and serve.

  • GETTING READY 1. Take a flat baking dish or Teflon -coated frying pan and spread some oil over it. 2. Preheat the oven to 325 °F (for baking). MAKING 3. Arrange the salmon steaks next to one another, but don-€™t allow it to overlap. 4. Add peppercorns, lemon rind and juice, salt, onion and hot water enough to cover the fish. 5. Cover the frying pan or baking dish before cooking. 6. If poaching on stove top- cook the dish for about 20 minutes on low heat and if poaching in the oven then cook for the same length of time until the salmon starts flaking. 7. Leave the fish to cool in the liquid. 8. Remove the skin and drain the fish well. FINALIZING 9. Spread on serving platter and pour sauce verte generously all over it and garnish the fish with parsley sprigs. SERVING 10. Serve the Poached Salmon A La Francaise with cucumber salad.

  • Place filet, skin side down, in a small stock pot.
  • Pour enough water over to cover the salmon by about two inches.
  • Place pot on high heat until just beginning to boil.
  • Remove salmon from water and pat dry.
  • Sprinkle with Kosher salt and pepper to taste.
  • This goes great with a little garlic mayonnaise or a vinaigrette.

I saw Rachael Ray prepare this on TV on the Food network for her 30 minute meals. It seemed so easy so here it is! She served it with rice cooked in chicken broth. Can be eaten hot or cold. By the way, I think she said that Paige is a friend (or the daughter of a friend) who loves this recipe. Since it's so easy to make, Paige can even make it with her Mom. You could change this recipe by using white wine for the broth and by varying the fresh herbs.
