POACHED EGGS ON ENGLISH MUFFINS WITH HELGA'S HOLLANDAISE



Poached Eggs on English Muffins with Helga's Hollandaise image

3 cups (360 grams) all-purpose flour
1 tablespoon instant yeast
1 cup room temperature water
1/2 cup whole milk
2 tablespoons unsalted butter, melted
1 tablespoon sugar
1 teaspoon salt
Nonstick cooking spray
6 egg yolks
4 teaspoons lemon juice
Salt and white pepper
2 sticks (1 cup) unsalted butter, melted
6 eggs
Sliced tomatoes, for serving
Crispy cooked bacon, for serving

Steps:

  • For the English muffins: Whisk together the flour and instant yeast in a large bowl.
  • In a large measuring cup, combine the water, milk, melted butter, sugar and salt.
  • Slowly add the liquid to the flour mixture, stirring constantly with a wooden spoon. Stir vigorously until the mixture is smooth. (The dough should be loose and sticky, not runny.) Cover and let rest in a warm place for 30 minutes or until doubled in volume.
  • Preheat a griddle or large skillet over medium heat; spray liberally with nonstick spray. Place six 4-inch tart rings on the griddle; spray the inside of each ring liberally (see Cook's Note).
  • Using a large cookie scoop or 1/2 cup measuring cup sprayed with nonstick spray, fill the rings halfway with batter. (I spray my fingers and use them to push the batter to the edge of the rings, since it doesn't spread as easily as, say, pancake batter.) Griddle the muffins for ten minutes.
  • Flip the muffins, using tongs or a spatula, and griddle for another 10 minutes. (I find that the griddle oil starts to blacken at this point, and if I'm feeling like a perfectionist, I'll remove the muffins to a cooling rack, wipe down the griddle, and respray it to keep the muffins from getting too dark on the reverse side.)
  • For the hollandaise: Place the egg yolks, lemon juice, and a pinch each of salt and white pepper in a blender; blend until combined. With the blender running, slowly pour in the melted butter. Blend until emulsified, about 30 seconds.
  • For the poached eggs: Preheat the oven to 350 degrees F.
  • Add 1 tablespoon water to 6 cups of a standard muffin pan, then crack an egg into each cup. Bake for 11 minutes for a soft yolk; the exact time will vary depending on your oven and preferred level of doneness.
  • To assemble: Slice an English muffin in half. Top with a slice of tomato and a strip of bacon. Using a rubber spatula, slide a poached egg from the muffin pan and place it on top of the bacon. Drizzle with hollandaise sauce, and serve with the top half of the muffin on the side.

4 extra-large eggs, at room temperature
2 thin slices of prosciutto
2 English muffins, sliced in half and toasted
Easy Hollandaise Sauce (recipe follows)
Minced fresh chives, for serving
2 extra-large egg yolks, at room temperature
1 1/2 tablespoons freshly squeezed lemon juice
3/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
Pinch of cayenne pepper
6 tablespoons (3/4 stick) unsalted butter

Steps:

  • Preheat the oven to 400 degrees.
  • Break each egg into an individual small bowl and set aside. Fill a large (12-inch) saute pan about half full with water and bring to a boil. Carefully slide each egg into a separate corner of the pan and simmer for exactly 2 minutes. Turn off the heat and allow the eggs to sit in the water for 10 minutes.
  • Meanwhile, place the slices of prosciutto on a sheet pan and roast for 5 minutes. Set aside.
  • Place both halves of each toasted muffin on a dinner plate and, using a slotted spoon, slide a poached egg onto each half. Drizzle hollandaise sauce over the poached eggs and garnish with chives. Serve with a slice of prosciutto.
  • Place the egg yolks, lemon juice, salt, black pepper, and cayenne pepper in the jar of a blender and process on low for 15 seconds. Melt the butter in a small saucepan until it is sizzling hot. Remove the small clear insert in the top of the blender. With the blender on low, slowly add the hot butter to the egg and lemon mixture and blend for 30 seconds, until the sauce is very thick. Use immediately.

4 crumpets
4 eggs
1 tablespoon white vinegar
175 g butter
2 egg yolks
1 lemon, juice of
1/2 teaspoon cayenne pepper
1/2 teaspoon salt

Steps:

  • Hollandaise sauce----------------------------.
  • (makes about 200ml - 7 fl oz).
  • Method (sauce) ------------------------------.
  • Clarify the butter by melting it until its solids have become separated from the rich yellow oil. Remove from the heat and leave to cool until just warm.
  • Most of the solids will now be at the base of the pan. Any other solids on top can be skimmed away.
  • Place the egg yolks in a bowl and add 2 tablespoons of warm water with half of the lemon juice. Whisk over a pan of simmering water to a thick ribbon stage, almost the consistency of softly whipped cream.
  • Remove from the heat and slowly add the clarified butter, whisking vigorously. This will emulsify the butter into the egg yolk mixture. If the sauce seems too thick and almost sticky while adding the butter, loosen slightly with another squeeze of lemon juice or water.
  • Season with salt and Cayenne or white pepper and add the remaining lemon juice, if needed, to enrich the total flavour.
  • The sauce is now ready to serve. For a guaranteed smooth, silky, finish, strain through a sieve.

  • Trim the flat mushrooms, removing the central stalk. To each, flat side up, with butter and season with salt and pepper. The mushrooms can now be placed under a pre-heated grill, cooking for 6-8 minutes and tender.
  • Meanwhile, spread a little butter over each of the crumpets, spreading Marmite liberally on top. A few minutes before the mushrooms are cooked, the crumpets can be toasted beneath the grill, allowing the Marmite and butter to melt through as they warm.
  • To assemble, place the flat mushrooms on top of the crumpets along with the warmed poached eggs. Spoon the hollandaise sauce over each and the dish is ready to serve.

  • Fill a large, deep saucepan with water (replace up to one-third with vinegar should it be required).
  • Bring to a rapid simmer and whisk vigorously in a circular motion. Crack an egg into the centre. As the liquid spins, it pulls and sets the white around the yolk, before the egg reaches the base of the pan.
  • Poach the egg for 3-3½ minutes before serving.

This is a great breakfast served with buttered toast and morning coffee. If you prefer a quicker recipe, just use canned corned beef hash.

1 egg yolk
1/2 teaspoon dry mustard
1 pinch cayenne pepper
1 tablespoon water
1/2 cup butter, melted and warm (1 stick)
2 tablespoons lemon juice
kosher salt, to taste
black pepper, to taste
2 tablespoons olive oil
1/2 small onion, diced (optional)
1 medium potato, diced
1 small carrot, diced small
1/2 lb corned beef, chopped (about 2 cups)
1 tablespoon fresh chives, chopped (plus more for garnish)
6 eggs
water
2 tablespoons white vinegar

Steps:

  • HOLLANDAISE SAUCE: In a blender or food processor, put the egg yolks, mustard, cayenne, and water. Blend this together and then slowly start pouring in the warm butter with the blender running to incorporate. Add the lemon juice, salt, and pepper. Thin with a little water if it's too thick. Keep warm.
  • HASH: Heat the oil in a nonstick skillet over medium heat. Add the potatoes, and carrots. Cook until soft, about 10 minutes. Add the onion, corned beef, and chives, and cook 5-10 minutes, turning occasionally. If desired for crispiness, during the last few minutes, don't turn the hash in order to create a searing or browning on the bottom.
  • EGGS: ln a large skillet filled with 2" of water, bring it to a boil, and add the vinegar. Reduce the heat to a simmer and crack the eggs carefully into the water. Using a spoon, spoon water up over the top of the eggs several times while they cook. Simmer until the eggs are set, about 3-4 minutes. Remove the eggs with a slotted spoon and place them on paper towels to dry them off.
  • SERVE: Place the hash evenly onto warm serving plates. Using the back of a spoon, make a hollow in the center of the hash. Place a poached egg into the hollows and then top with hollandaise; garnish with chives.
