PLUM AND APPLE CRUMBLE
A fail-safe apple crumble recipe with plums added. Serve this autumnal dessert with custard or ice cream - it can be ready in 45 minutes.

Steps:
- Preheat oven 200°C (180°C fan) mark 6. Halve and stone the plums, then roughly chop and put into a large pan. Peel and core the apples, roughly chop, and add to the pan with the sugar, cinnamon, lemon zest and 5tbsp water. Cover and heat gently until apples are softening, about 5min.
- Empty fruit into a shallow, ovenproof serving dish. Set aside.
- To make the topping, put the flour into a bowl and rub in the butter with your fingers until the mixture resembles fine rubble. Mix in the oats and demerara sugar, then scatter the topping over the fruit.
- Bake for 25-30min or until the crumble is golden. Serve immediately with our Foolproof Custard (see left) or vanilla ice cream.

- Preheat oven to 375 degrees.
- Grease an 11 x 7 inch baking dish.
- To Make Filling: In a large bowl, toss together apples, plums, honey, lemon juice, flour, and cinnamon. Arrange fruit evenly in baking dish.
- To Make CrumbleTopping: In medium bowl, combine flour, brown sugar, oats, cinnamon, and nutmeg.
- Using a pastry blender or with your fingertips, rub in margarine until mixture is crumbly.
- Sprinkle oat mixture evenly over fruit.
- Bake in oven 40 minutes, until topping is lightly browned and fruit is tender and bubbly.
- Cool and serve warm.

- For the fruit, put all the ingredients in a saucepan. Cook over a low heat, stirring until the butter has melted and the sugar has dissolved, then leave to simmer until you have a chunky fruit compote, then set aside.
- Heat oven to 190C/170C fan/gas 6. Whisk the egg into the milk and set aside. Rub the butter and the flour together until it has the texture of chunky breadcrumbs, then stir in the caster sugar, cinnamon, baking powder and a large pinch of salt. Pour in the milk mixture and bring together to form a thick, batter-like texture.
- Tip the compote into a baking dish and top with large spoonfuls of the cobbler mix, making sure there are a few gaps for the fruit to bubble through, then sprinkle everything with the demerara sugar. Bake for 35-40 mins or until the topping is golden and just cooked through. Remove from the oven and leave to rest for 5 mins before serving straight from the dish with generous spoonfuls of clotted cream.

PLUM CRUMBLE

- Heat the oven to 200C/180C fan/gas 6. Put the plums into the base of a shallow gratin dish about 28cm long. Mix together the sugar, orange zest, cinnamon and flour and sprinkle over the plums. Trickle over 2 tbsp water.
- Put all the crumble ingredients into a food processor, and using the pulse button, whizz until the mixture just starts to clump together. Take care not to over process at this stage. Alternatively, rub the butter into the flour using your hands and then stir in the other ingredients.
- Scatter the crumble over the plums and bake in the oven for 30-40 mins until golden brown. Leave for about 15 mins before serving with custard or cream.

PLUM & ALMOND CRUMBLE SLICE

- Heat oven to 180C/fan 160C/gas 4. Butter and line a 20 x 30cm baking tin with baking paper. Put the butter, sugar and ground almonds into a food processor, then pulse until the mixture resembles very rough breadcrumbs. Spoon out half the mix into a bowl and set aside.
- Add 140g flour into the mix in the processor and whizz until it just forms a dough. Tip into the tin and press down with the back of a spoon. Bake for 15-20 mins until golden. Leave to cool for 10 mins.
- To make the filling, put the remaining butter and the sugar and almond mix back into the processor, saving a few tbsp for the topping. Add the eggs, the 25g flour, cinnamon and baking powder and whizz to a soft batter. Spread over the base.
- Top with the plum pieces and a little extra caster sugar and cinnamon. Bake for 20 mins, then sprinkle with the remaining crumble mix and flaked almonds. Cook for another 20 mins or until golden. Leave to cool in the tin before slicing.

- Heat oven to 200C/fan 180C/gas 6. Place the plum halves, skin side down, in the base of a large heatproof dish. Drizzle over half the maple syrup and roast for 10 mins.
- Meanwhile place the butter, flour, oats, sugar and cinnamon in a bowl and rub the butter into the mixture until you have rough crumbs. Stir in the almonds, then sprinkle over the plums.
