EAT-YOUR-VEGGIES CHICKEN SOUP
I found this in a pamphlet from the Potato Board. I have not tried tis yet. I think I would include about twice as much chicken, and will likely cook the chicken ahead of time, just stirring in at the end to heat through, because I'm not fond of poached chicken. Some leftover diced grilled or broiled chicken would be tasty in this. I would also hold off on adding the frozen peas until the end, and then just stir to heat them through. There's nothing worse than mushy peas!

Steps:
- Do not peel potatoes. Cut into 1/2 inch chunks. .
- In 3 quart saucepan, bring broth, potatoes, carrot, celery, and onion to boiling over high heat. Reduce heat to low, cover and simmer 5 minutes.
- Add remaining ingredients except salt, pepper, and thyme. Return to boiling over high heat. Reduce heat to low, cover and simmer 5 minutes, or until potatoes are tender and chicken is cooked through. Season with salt pepper, and thyme, as desired.

This soup is the perfect remedy for those fussy eaters who refuse to eat their vegetables, yet will eat all sorts of vegetables when served in soup. This recipe was created for the RSC #14 cooking contest.

Steps:
- In a 4-quart pot or dutch oven add peanut oil.
- Saute sliced sweet onions on medium low heat until tender, stirring frequently.
- Then toss in the mushrooms and saute them for about 5 minutes stirring frequently.
- Add garlic and green onions. Saute for an additional minute.
- Add vegetable stock, carrots, napa cabbage, wax beans, soy sauce, dill, sesame oil, Worcestershire sauce and rosemary.
- Bring to a boil and then drop the temperature down to simmer, cover and cook for 60 minutes.
- Salt & pepper to taste. Enjoy!

- Heat a large stockpot or dutch oven over medium heat on the stovetop. Add oil. Once warm, add onion, carrot, celery and garlic. Season with salt and pepper. Cook 10 minutes or until vegetables are tender and fragrant, stirring occasionally.
- Uncover and stir in curry powder, Italian seasoning and lay leaves. Cook 1 minute, stirring constantly. Add in tomatoes, broth, potatoes, zucchini, green beans and corn. No need to defrost the corn, just throw it in frozen.
