1 small green pepper, chopped
1 small sweet red pepper, chopped
2 cups shredded Italian cheese blend
2 ounces sliced pepperoni

Steps:

  • Preheat oven to 350°. Cook macaroni according to package directions for al dente. Drain; return to pan. Stir in contents of cheese packets and sour cream. Transfer to a greased 13x9-in. baking dish., In a small bowl, combine tomatoes and pizza sauce; drop by spoonfuls over macaroni. Top with peppers, cheese and pepperoni. Bake, uncovered, until bubbly, 25-30 minutes.

  • Set the cheese packet from dinner mix aside. In a saucepan, bring water to a boil. Add macaroni; cook for 8-10 minutes or until tender. , Meanwhile, in a large skillet, cook the beef, onion and green pepper over medium heat until meat is no longer pink; drain. Drain macaroni; stir in the contents of cheese packet. , Transfer to a greased 13x9-in. baking dish. Sprinkle with cheddar cheese. 1 ½ cups elbow macaroni
¼ cup butter
1 tablespoon all-purpose flour

¾ pound processed cheese (such as Velveeta®), cubed

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Spray a 10x15-inch baking sheet with cooking spray. Unroll pizza crust and place on the prepared baking pan.
  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes. Drain.
  • Melt butter in a large saucepan over medium heat; cook and stir flour with butter until it has a slightly toasted fragrance, about 2 minutes. Whisk in milk and simmer until thickened, whisking constantly, 2 more minutes. Stir in processed cheese cubes. Let the cheese cubes melt, stirring often, to make a smooth cheese sauce.
  • Spread about 3/4 cup of cheese sauce onto the pizza crust. Stir cooked macaroni into remaining cheese sauce in the saucepan and spoon the macaroni and cheese onto the crust in an even layer. Sprinkle top of pizza with mozzarella cheese.
  • Bake in the preheated oven until the crust is lightly browned and the mozzarella cheese is golden brown, about 15 minutes.

1/2 pound dried rotini pasta
Olive oil cooking spray
6 slices thick-cut good quality bacon
2 tablespoons unsalted butter
1 white onion, finely chopped
1 clove garlic, finely chopped
Pinch ground nutmeg
Salt and freshly ground black pepper
3 tablespoons all-purpose flour
2 cups whole milk
2 cups grated sharp Cheddar
1 cup grated mozzarella
1 cup panko breadcrumbs
1/2 cup Parmesan
3 tablespoons chopped fresh chives
1 tablespoon olive oil
1 store-bought pizza dough, rolled out and spread on a well-oiled baking sheet

Steps:

  • Preheat the oven to 450 degrees F.
  • Bring a large pot of water to a boil and cook the rotini al dente. Drain and spray with olive oil cooking spray, making sure the noodles are coated well. Set aside.
  • In a large saute pan over medium-high heat, cook the bacon until crispy. Remove to a paper towel-lined plate. Remove all but 1 tablespoon of the bacon drippings and add the butter. Add the onions, garlic and nutmeg. Season the vegetables with salt and pepper and saute until the onions wilt and become translucent, about 4 minutes. Reduce the heat to medium-low and sprinkle in the flour, stirring to coat the onions and garlic. Continue to cook until you have a blond roux, about 5 minutes. Whisk in the milk until you have a thick enough sauce that it coats the back of a spoon. Crumble the bacon and add half to the sauce. Mix in the Cheddar and mozzarella. Turn the heat to low. Add the pasta to the cheese sauce and stir to coat. Cover and keep warm.
  • In a small bowl, add the breadcrumbs, Parmesan, chives and olive oil. Add the rest of the crumbled bacon and add it to the bowl, stirring well to combine.
  • Spray the pizza dough with the olive oil spray and place into the oven for 7 minutes. Remove from the oven and set down. Spread the macaroni and cheese on the pizza, being careful to leave a 1-inch border. Sprinkle with the breadcrumb mixture on the macaroni and cheese and bake in the oven for 10 minutes. Remove from the oven and let stand for 10 minutes to set the macaroni and cheese.

  • Bring the milk, Italian seasoning and crushed red pepper flakes to a simmer in a large saucepan over medium heat. Continue cooking until the milk reduces to 1 1/2 cups, about 15 minutes. Add the cream cheese and stir until melted. Gradually whisk in both the Cheddar and Italian blend cheeses, a handful at a time, until all the cheese is melted and the sauce is smooth.
  • Add the cooked macaroni and reserved pasta water to the cheese sauce and stir to combine. Stir in the marinara sauce, sun-dried tomatoes and pepperoni and adjust the seasoning with salt.   • Set an oven rack 6 inches from the heat source and preheat the oven to 425 degrees F.

  • Heat the half-and-half, oregano and crushed red pepper in a large saucepan over medium heat until the mixture just comes to a simmer. This recipe is a long time family recipe......or so I thought... This is in a family cookbook that I got back in 1988 and we have been using this recipe even before the cookbook came out... It's easy, it's fun, and I have yet to see a kid, (or adult for that matter!), that hasn't like this recipe... We switch up on toppings, but pepperoni always seems to be the favorite. Also, adjust the amount of sauce and cheese to your liking. My father still makes this for himself by just cutting all the ingredient amounts in half and cooking in a 9 x 9 inch baking dish. I hope you enjoy it as much as our family has throughout the years!
