CHEESY PIZZA FONDUE
While I was growing up, I would sit for hours reading cookbooks from cover to cover. I've carried that love of cooking with me through the years. I found this recipe when we lived in Wisconsin. - Julie Barwick, Mansfield, Ohio.

- In a large saucepan, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the pizza sauce, basil and garlic powder. Reduce heat to low. Add cheeses; stir until melted. , Transfer to a small fondue pot or 1-1/2-qt. slow cooker; keep warm. Serve with breadsticks, garlic toast and green peppers.

EASY PIZZA FONDUE
This is one of my kids' favorite meals, and it's incredibly simple and quick. You can add a little beef bouillon for a beefier taste. Serve with French bread or breadsticks. Dip bread directly into the pot or ladle into bowls to serve.

- Heat olive oil in a skillet over medium-high heat. Saute onion in hot oil until soft and translucent, 4 to 6 minutes.
- Heat a large pot over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.
- Stir beef, onion, and pizza sauce together in the same pot over medium-high heat. Add mozzarella cheese and Cheddar cheese one handful at a time, stirring until cheeses melt into the fondue before adding the next handfuls. Ladle fondue into bowls.

- In a large saucepan, cook beef and onion over medium heat until meat is no longer pink, 5-7 minutes; crumble meat; drain. Stir in 2 cans pizza sauce and seasonings. In a small bowl, combine cornstarch and remaining pizza sauce until blended; stir into beef mixture. Add cheddar cheese, 1/2 cup at a time, stirring after each addition until cheese is completely melted., Transfer to a fondue pot. Stir in mozzarella cheese until melted. Serve with bread cubes.

- Heat the milk and heavy cream in a medium saucepan over medium heat, being careful not to scorch the bottom. Beat the eggs in a medium bowl until homogenous, then set aside. When the milk mixture begins to simmer, add 1 ladleful to the eggs and whisk to combine. Repeat with 2 more ladlefuls, making sure to whisk thoroughly between each addition. Pour the egg mixture back into the simmering milk and reduce the heat to low. Cook, whisking, until the mixture thickens and coats the back of a spoon, 5 to 7 minutes. Remove from the heat and whisk in the mascarpone and fontina until melted. Transfer to a serving bowl and shave the truffle on top, if using. Serve with salami, garlic bread or your favorite crudites!
QUESO FUNDIDO WITH CHORIZO

- Preheat the oven to 425 degrees F. Oil a 3 or 4 cup ovenproof baking dish.
- In a dry medium skillet, saute the chorizo over medium-high heat until almost crisp. Remove the chorizo to a plate. Add the onions and garlic to the pan juices and cook until soft, about 5 minutes. Return the chorizo to the skillet with the onions and garlic and stir to combine.
- Put half of the cheese in the baking dish and sprinkle with half of the chorizo mixture. Repeat with the remaining cheese and chorizo mixture. Bake until the cheese is bubbling, about 20 minutes. Serve with flour tortillas for soft tacos.
PIZZA 'FONDUE' -- FUNDIDO--
So easy and yummy. Kid and hubby pleasing comfort food in minutes! Faster even than making pizza or waiting for delivery! Makes a great appetizer or even a very satisfying meal! Make as healthy- or unhealthy- as you like! Add anything to the sauce - meat, veggie, etc... Very versatile and quick! World Tour Italy and Mexico/Tex/Mex/SW This can obviously be adjusted to be Italian or Tex/Mex by the additions used. FUNDIDO (melted cheese) is a popular appetizer in Tx/Mx cooking. To keep this more 'traditional' Mexican use Mexican oregano instead of Italian seasoning and Mexican cheeses like pepper jack or queso quesadilla and bolillos- Mexican crusty rolls. You could even add some cooked chorizo. To make it Italian- use the Italian seasoning and add any 'pizza' type toppings you like.

- Cut bread into cubes or strips and broil until browned and toasty.
- Spray a casserole or pie pan with cooking spray.
- Pour pizza sauce into pan and add seasonings. Stir to combine.
- Add any 'pizza toppings' you like at this point. See *Note.
- Top with cheeses.
- Place dish on bottom rack to cook while bread is browning or microwave until hot and bubbly and cheese is melted.
- Place under broiler to brown cheese if desired.
- Dip toasted bread into pan just like fondue! Kids have a blast doing this! Or spoon sauce on plate and dip.

TEQUILA-SPIKED QUESO FUNDIDO

- Preheat the oven to 400 degrees F.
- Heat the olive oil in a large skillet over medium heat. Add the chorizo and cook, crumbling it as you go, until browned. Remove from the skillet and drain on a paper towel-lined plate. Pour off any excess fat from the skillet.
- Add the onion and bell peppers to the skillet and cook over medium-high heat until the veggies begin to soften, about 5 minutes. Turn off the heat and stir in 1/4 cup of the tequila. Turn the heat back on and cook until the vegetables are golden brown, 2 to 3 minutes more. Remove from the heat and set aside.
- Meanwhile, stir the tomatoes and remaining 1 tablespoon tequila together in a small bowl and set aside to marinate for a few minutes.
- To build, cover the bottom of a medium ovenproof skillet with a third of the Monterey Jack and Cheddar. Add half of the chorizo, then another third of the cheese. Next, add as much of the veggie mixture as you'd like (you may have a little left over). Add almost all of the remaining cheese, the rest of the chorizo and then whatever cheese you have left. Sprinkle the top very lightly with chili powder.
- Bake, starting to watch it 4 to 5 minutes in, until the cheese is totally melted, hot and slightly bubbling...but before the cheese starts to firm up/harden. (In other words, you still want the cheese to be extra gooey.)
- Drain the tomatoes.
- Remove the skillet from the oven and top with the spiked tomatoes and cilantro. Serve immediately with tortilla chips. It's best when piping hot! Wrap a cloth around the skillet handle so guests won't burn themselves.
POBLANO AND CORN QUESO FUNDIDO (FONDUE)

- In a medium pot, heat up the chicken stock until boiling.
- Meanwhile, in a medium saucepan over medium-high heat, melt the butter. Add the onions and saute until translucent, about 5 minutes. Season with a pinch of salt. Add the flour and saute briefly. Add the simmering stock to the onion mixture and whisk until there are no lumps and the stock is fully incorporated. Add the cheese and cook, whisking, until incorporated. Stir in the corn and poblanos.
- Pour the mixture into a fondue pot and serve immediately with warm tortillas heated directly over a gas burner. Add cilantro leaves as a garnish and enjoy!
PIZZA FONDUE DIP
Love pizza? This fondue dip is for you, with tomato, melted cheese and pepperoni. It's great sharing food for a party. Enjoy with garlic bread or breadsticks

- Tip the soft cheese into a bowl and beat with a whisk to loosen. Whisk in parmesan and half the mozzarella, then season. Oil a 15-18cm round baking dish. Spread the soft cheese mixture over the base, then pour over the pizza sauce or passata and spread out so it fully covers the soft cheese. Sprinkle over the rest of the mozzarella. Arrange the pepperoni on top, if using, and drizzle with a little olive oil. Can be made up to two days ahead, covered and chilled until ready to cook.
- Heat the oven to 200C/180C fan/ gas 6. Bake the dip for 25-30 mins, or until bubbling and golden. Meanwhile, cook the garlic bread following pack instructions, if using. Leave the dip to cool slightly, then serve with the garlic bread, crostini or breadsticks for dipping.
