PIZZA FISH RECIPE
This lightly breaded fish is topped with pizza sauce, Mozzarella cheese, and chopped basil.

Steps:
- Preheat oil in non-stick skillet over medium heat.
- Lightly dry fish with paper towels. Season with salt and pepper.
- Pour crumbs onto a plate or wax paper and coat the fish on both sides. Use your hands to pat crumbs onto the surface of the fish.
- Sauté fish until brown (2-3 minutes) and flip to brown the other side. (You could stop here and serve the fish with no sauce. It's delicious!)
- Spoon a light coating of pizza sauce over the fish. Then sprinkle about one tablespoon of cheese over the sauce. Place under a broiler for a minute or two to brown the cheese.
- Sprinkle chopped fresh basil on top of the cooked fish and serve immediately. Good served as a fish sandwich with your favorite buns.

- Heat a large straight-sided skillet over medium-high heat. Add the oil, garlic, fennel, onion, and pepper flakes to the skillet. Sprinkle with 1/2 teaspoon salt. Cook, stirring often, with a wooden spoon until the vegetables are soft and fragrant, about 5 minutes. Deglaze with the wine and stir, scraping up any bits form the bottom of the scraping. Add the tomatoes, water and capers. Bring to a simmer and reduce the heat to medium-low to maintain a gentle simmer for 10 minutes.
- Meanwhile, sprinkle the filets with the remaining 1/2 teaspoon salt. Slide the fish filets into the broth and cover with a tight fitting lid. Cook until the fish is firm and opaque all the way through, 12 to 15 minutes. Remove the lid and spoon some of the sauce over the fish. Sprinkle with parsley, drizzle with extra-virgin olive oil and serve with plenty of crusty bread to soak up the broth.
SEAFOOD PIZZA

- In large bowl, dissolve yeast in warm water. Stir in half of the flour, the oil, salt and sugar. Stir in enough remaining flour to make dough easy enough to handle.
- Turn dough onto lightly floured surface; knead about 10 minutes or until smooth and elastic. Place dough in large bowl greased with shortening, turning dough to grease all sides. Cover and let rise in warm place 20 minutes.
- Gently push fist into dough to deflate. Cover and refrigerate at least 2 hours but no longer than 48 hours, deflating dough occasionally.
- Move oven rack to lowest position. Heat oven to 500°F. On lightly floured surface, press or roll dough into 12-inch round. Place on ungreased pizza screen or in 12-inch perforated pizza pan. Press dough from center to edge so edge is thicker than center.
- Peel shrimp, leaving tails intact. Spread pizza sauce over dough to within 1/2 inch of edge. Sprinkle cheeses over sauce. Arrange shrimp, anchovies and scallops on cheeses. Sprinkle basil, pepper and garlic over seafood. Bake about 10 minutes or until shrimp are pink and firm, scallops are white and cheeses are melted.

PIZZA FISH
This is what you can make for those people "who hate fish". It's easy, quick, and will make fish eaters out of non fish eaters. Also, you can add or lessen the amount of seasonings, garlic, etc. to your taste. I like lots of seasonings, so that's why I include minced garlic, even though it isn't required. My husband, who used to have a rule of "I will not eat ANYTHING that naturally has less than two legs or more than four." now ASKS me to make this dish!

- Spray 8X8 glass baking dish with Pam or other cooking spray.
- Lay fillets on single layer in dish.

Steps:
- Mix together the yeast and sugar with 250ml warm water and leave to sit for 10 mins. Place half the flour in a table-top mixer with a dough hook, pour in the yeast mixture and beat at medium speed for 10 mins (or mix in a bowl, then knead with oiled hands in the bowl for 5-10 mins).
- Leave somewhere warm for 10 more mins, then add the remaining flour and oil. Beat or knead to a dough for a further 5 mins. Put in a well-oiled bowl, cover with a cloth and place somewhere warm to double in size - about 1½ hrs.
- For the sauce, heat the oil in a pan over a moderate heat. Add the onion and cook for 3 mins, stirring constantly. Add the garlic, 1 tsp sea salt and 1 tsp ground black pepper and cook for 2 mins more. Add the tomatoes and bring to the boil, then reduce the heat and simmer for a good 20 mins, stirring occasionally.
- Once your dough has doubled in size, slap it down on a lightly floured surface and knead for 4 mins until soft but not too elastic. Divide into 6 pieces, roll into balls and leave to rest for 10 mins. Heat oven to the highest temperature possible (270C fan in the Good Food test kitchen) and place a flat baking sheet in the oven.
- With a well-floured rolling pin, roll out each ball of dough as thinly as possible. Remove the baking sheet from the oven, oil or dust with flour, then carefully transfer the dough base onto it. Spread over some of the tomato sauce (I like to apply it in the quantity that you would spread Marmite on toast, or the base will be soft and fall to bits), then the cheese and any toppings you desire.
- Cook for between 5-10 mins depending on your oven temp, until the base is crisp and the cheese melted. Scatter with basil.

FISH TACO PIZZA
I had some leftover fish that I had made for fish tacos and didn't feel like tacos again. So after throwing it on some pizza dough, this is what I came up with. My husband just gave me funny looks until he tried it. It turned out really yummy. You could probably use any other cooked and well seasoned meat instead of the fish.

- Heat olive oil in a nonstick pan.
- Add fish and top with lemon juice, cajun and old bay seasoning, and salt. Cook until both sides are well cooked.
- Break up fish into bite size chunks.
- Preheat oven to 400 degrees.
- Stretch out pizza dough on a cookie sheet that has no long sides and has been lined with non stick foil.
- Top dough with salsa, cheese, and fish.
- Cook for 10 minute and then slide pizza onto the oven rack and cook for another 5 minute.

SEAFOOD PIZZA
I adapted this rich treat from a friend's seafood enchilada dish. The thick creamy cheese sauce is an ideal match for the scallops, shrimp and imitation crabmeat. Plus, it's special enough for guests and can be made in a hurry.

- Prepare pizza dough according to package directions. Press onto a lightly greased 12-in. pizza pan; build up edges slightly. Prick dough thoroughly with a fork. Bake at 400° for 5-6 minutes or until crust is firm and begins to brown., Meanwhile, in a large saucepan, melt 2 tablespoons butter over medium heat. Stir in flour until smooth. Gradually stir in milk and broth. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat. Stir in Monterey Jack and Swiss cheeses until melted. Remove from the heat., In a large skillet, melt the remaining butter over medium heat. Add scallops; cook and stir for 3-4 minutes or until firm and opaque. Stir in the shrimp, crab and 3 tablespoons cheese sauce. Remove from the heat., Spread remaining cheese sauce over the crust. Top with the seafood mixture; sprinkle with mozzarella cheese and paprika if desired. Bake for 13-16 minutes or until golden brown. Let stand for 5-10 minutes before cutting.

FISH AND CHIPS PIZZA
Another silly idea that worked out great. My daughter, who poo-pooed the idea, ate half the pie. It sounds weird, but think Fillet-o-fish, and give it a shot.

- Preheat oven to 425.
- Warm up the fish and potatoes per directions. I used the same skillet that I used to start the crust. I'm sure the microwave or oven would produce the same result. Place them off to the side.
- Prepare a large skillet (mine doesn't need oil or spray) to start your crust. Turn the stove on to med-high, place your pizza dough into the skillet and spread it out to the sides to form a little edge. I used a flat plate to press it down and shape it. Fry the crust until the bottom is slightly browned, about 5 minutes, and slide it onto a preheated pizza stone or baking sheet. Top with the tartar sauce, then the fish and potatoes, and finally the cheese.
- Bake 12-15 minutes until golden brown.
