PISTACHIO ICE CREAM DESSERT

This is a refreshing, light dessert; a nice treat for St. Patrick's Day or any special occasion. My husband and son will eat a whole 9x13-inch dish in less than a week!

2 sleeves buttery round crackers, crushed
½ cup melted butter
½ gallon vanilla ice cream, softened
2 (3 ounce) packages instant pistachio pudding mix
1 ½ cups milk
1 (12 ounce) container frozen whipped topping (such as Cool Whip®), thawed
¼ cup chocolate-covered toffee bits (such as Heath®), or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine cracker crumbs and melted butter in a bowl. Mix until evenly moistened; press into the bottom and sides of a 9x13-inch baking dish.
  • Bake in preheated oven until crust is lightly browned and smells toasted, about 15 minutes. Remove from the oven and cool.
  • Mix ice cream, pudding mix, and milk together in a bowl until combined; spread evenly onto prepared crust. Spread whipped topping over ice cream mixture; top with toffee bits. Place in freezer until hardened, at least 1 hour.

1/2 cup shelled raw pistachio nut
1 pint vanilla ice cream, softened
2 drops green food coloring
1/2 teaspoon ground green cardamom seeds

Steps:

  • 1. In a food processor or a blender, process the pistachios until coarsely ground. Reserve 2 to 3 tablespoons for garnish, and leave the rest in the work bowl. Then add the ice cream, green food coloring, and cardamom seeds to the food processor and pulse a few times to mix. Transfer to an air-tight container and freeze, about 2 hours.2. To serve, place rounded scoops of ice cream in a serving platter and top with the reserved pistachios.Variation: Put scoops of vanilla ice cream on a platter. Mix 2 drops of green food color in 1 tablespoon milk and sprinkle it over the ice cream. Top with the chopped pistachios and ground cardamom seeds.From "1,000 Indian Recipes." This is from Taste of Home. I made it making several substitutions because I cannot buy all the listed ingredients in The Netherlands, so when you read 'or' that is what I used. Freezing time not included.

2 tablespoons butter
3/4 cup butter-flavored cracker crumbs (or grahm cracker crumbs)
1 cup cold milk
1 (3 1/2 ounce) package instant pistachio pudding mix
2 cups vanilla ice cream, softened
1 (8 ounce) carton frozen whipped topping, thawed (or whipped cream)
2 Heath candy bars, crushed (1.4 ounces each)

Steps:

  • In a microwave-safe 8-in. square dish, melt butter. Stir in cracker crumbs; press mixture onto bottom of dish.
  • In a bowl, whisk milk and pudding mix for 2 minutes. Whisk in the ice cream, pour over crust. Cover and freeze for 2 hours.
  • Spread with whipped topping; sprinkle with crushed candy bars.
  • Return to the freezer until firm, but remove from the freezer approx 10 minutes before serving.

  • Put the pistachios in a dry frying pan. Put the heat on medium. Roast them gentrly, shaking regularly to prevent any burning. Take off the heat and leave to cool.
  • Combine the milk, cream and cardamom pod in a saucepan. Heat gently. As soon as it is about to boil. Take it off the heat and leave for 15 minutes for the cardamom pod to infuse.
  • Beat the egg yolks with the sugar until pale. If there doesn't seem to be enough liquid, add a tbsp of cold water.
  • Remove the cardamom pod from the cream and milk. Slowly pour the cream mixture into the egg yolk and sugar, whisking all the time.
