2 cup Wholesome Yum Blanched Almond Flour
2 tsp Baking powder
1/2 tsp Sea salt
2 large Eggs ((whisked))
1/3 cup Unsalted butter ((measured solid, then melted; can use ghee or coconut oil for paleo or dairy-free))
1/4 cup Sour cream ((optional, can omit or use coconut cream for paleo or dairy-free))

Steps:

  • Preheat the oven to 350 degrees F (177 degrees C). Line a baking sheet with parchment paper.
  • Mix dry almond flour, baking powder, and sea salt together in a large bowl. Stir in whisked egg, melted butter, and sour cream, if using (optional).
  • Scoop tablespoonfuls of the dough onto the lined baking sheet (a cookie scoop is the fastest way). Form into rounded biscuit shapes (flatten slightly with your fingers).
  • Bake for about 15 minutes, until firm and golden. Cool on the baking sheet.

1½ cups almond flour (or finely ground almonds)
2 egg whites (lightly whisked)
¾ cup caster sugar / superfine sugar
1 tsp vanilla essence
1 tsp almond essence
¼ cup icing sugar / powdered sugar

Steps:

  • Preheat oven to 180˚C (350˚F) and line your baking tray with baking paper.
  • Place your almond flour, lightly whisked egg whites, caster sugar and vanilla essence and almond essence in a bowl and mix well with a fork.
  • Sprinkle your icing sugar on a chopping board or plate.
  • Spoon a small scoop of mixture onto the board and coat generously with icing sugar while gently rolling into a ball.
  • Bake for around 15 minutes, until the outsides are nicely crispy yet the cookies are still soft inside.

4 egg whites
140g caster sugar
2 tbsp plain flour
140g ground almond

Steps:

  • Heat oven to 160C/140C fan/gas 3. Line 2 baking trays with baking parchment. Place the egg whites in a clean bowl and whisk until they form soft peaks. Add the sugar and continue to whisk for a few mins more until the whites are glossy. Sift the flour onto the whites, spoon over the almonds, then fold everything together quickly, keeping the mixture light and airy.
  • Spoon tbsps of the almond mix, well spaced apart, onto the prepared trays. Bake for 20 mins until golden. Remove from the oven and cool on a wire rack. Serve with the gooseberry fool. These biscuits are best freshly baked but will keep in a sealed container for up to a week.

75 g sugar
150 g butter, room temperature
1 egg
1 teaspoon lemon zest
200 g flour
35 g almond flour (finely grounded almonds)

Steps:

  • Preheat oven to 170°C.
  • In a medium bowl cream together butter and sugar until light in color.(use paddle attachment, or hand held mixer).
  • Add egg and lemon zest, mix well add flour and almond flour.
  • Spoon the dough into pastry bag with a 1/2 inch open star tip.
  • Pipe any shape you like on a baking sheet, spacing about 2 inch apart.
  • Bake 10 minutes until lightly golden.
  • Store in air tight container. They also freeze well.

225g ground almonds
120g caster sugar
2 egg whites
20 blanched almonds (optional)
1 tbsp ground cinnamon
4 tbsp icing sugar

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Line a large baking sheet with baking parchment. Put the ground almonds and sugar in a large mixing bowl and mix to combine.
  • In a separate bowl, beat the egg whites until foamy, then add to the almond and sugar mixture. Stir well - it will form a slightly sticky mixture but should hold its shape.
  • Wet your hands lightly and roll a heaped teaspoon of the mixture into a ball between your palms - it should be about 4cm in diameter. Put on the tray and flatten slightly with wet fingers to a thick disc, leaving at least 3cm between each biscuit. Press a blanched almond into each one, if you like.
  • Bake for 18-20 mins until just starting to turn golden around the edges, then remove from the oven and leave to cool on a wire rack. You want them to have a chewy, soft centre and the darker they get the harder the middle will be.
  • To make cinnamon balls, add the cinnamon to the almonds and sugar before you add the egg white. When shaping, leave them as balls. Bake for 18-20 mins - you want them to stay soft in the centre. While they are still warm, put them gently in a bowl of icing sugar and turn to coat. Leave until completely cooled.
