PINTO BEANS
My family loves this recipe after trying many different ones. When I'm short on time I use canned beans and just add the rest of the ingredients, I cook the bacon up when using canned beans. ENJOY!

Steps:
- Clean beans and wash well with water.
- Put beans in large pot, add water.
- Bring beans to boil and let boil for 1 hour.
- Check closely, as beans cook, you will probably need to add more water.
- Run tap water until very hot before adding to beans.
- Add bacon pieces and cook another 45 minutes.
- Add spices and reduce heat to low and cook another 20 to 25 minutes.
PERFECT PINTO BEANS

- Put the beans in a large bowl, cover with cold water and let soak overnight.
- Drain and rinse the beans, then put them in a large pot. Cover the beans with water and add the chili powder, cumin, paprika, cayenne, bacon, garlic, bay leaves, onion, bell pepper and some salt and pepper. Bring to a boil, then reduce the heat to low and cook until the beans are tender, 2 to 3 1/2 hours.

- In a 5-qt. slow cooker, combine the first 10 ingredients. Stir in the beans and peas. Cover and cook on low for 5-7 hours or until onion and peppers are tender. Discard bay leaves.

PARTY BEANS
This is probably the best baked bean recipe that I have come across. Three kinds of beans are baked with ground round and bacon. I use a 5 quart casserole dish.

- Preheat the oven to 350 degrees F (175 degrees C).
- In a large skillet over medium heat, cook bacon until crisp. Drain, crumble, and set aside. In the same skillet, cook and crumble the ground round until evenly browned. Drain.
- In a large deep casserole dish or Dutch oven, combine the bacon, beef, baked beans, white beans, and butter beans. Stir in the brown sugar, barbeque sauce, and onion soup mix until well blended.
- Bake, uncovered, for 1 hour in the preheated oven.

AWESOME PINTO BEANS
These beans are awesome! Great flavor with lots of juice for dipping your tortilla's in! I like to serve them in a bowl with fresh diced onion on top! Great with BBQ Ribs!

Steps:
- Fill a 12 quart kettle half full with hot water.
- Add 1 tbsp of Kosher Salt and beans.
- Soak for 1-2 hours.
- Do not throw out soaking water.
- Brings beans to a boil, turn heat to low and add chicken stock, salt pork, bacon.
- Add more water if necessary.
- Cook on low for 1/2 hour covered.
- Add the rest of the ingredients, cover and cook till beans are tender.
- Approximately 2-3 hours.
- If you like your beans a little spicer, add more red pepper flakes and serrano pepper.
- Stir the beans occasionally to keep them from sticking.
PINTO BEANS
Steps:
- Drain the beans, discarding the water, and place them in a large pot.
- Pour the stock over the beans and bring to a boil. Add half the butter and boil about 5 to 7 minutes, covered. Add the water and shallot and return to a boil. Lower the heat and simmer for 60 minutes. Add the remaining butter and salt and pepper. Cook another hour until the beans are tender.
- Cover beans with cold water and soak overnight. Drain beans and place them in a saucepan, cover with cold water. Bring to a boil and reduce the heat to a simmer, and simmer until tender (about 45 minutes). Drain and cool.
- In a food processor, chop garlic and the jalapeno. Add beans and with the motor running, process while slowly adding the water and oil through a feed tube. Add remaining ingredients and process until smooth. Adjust seasoning if necessary.
- Serve with pita triangles or tortilla chips.
- TIP: REFRIED RED BEANS .
DRUNKEN PINTO BEANS
Lots of flavor here. This is a classic Mexican dish, kicked up a notch. Adapted from Cooking With Two Hot Tamales cookbook! You may vary this by using mixed beans, reducing the hot peppers, etc.

Steps:
- Combine beans and water in a large pot. Cover, bring to a simmer and cook over low heat 1 1/2-2 1/2 hours, until beans are tender. Add more warm water if needeed to prevent scorching.
- Remove from heat.
- Heat the olive oil in a large heavy saucepan or skillet over medium high heat.
- Saute the onions until lightly browned.
- Stir in tomatoes, chiles, celery, carrot (if using) and cilantro and cook for 1 minute.
- Add the cooked beans, salt and beer. Cook uncovered, over low heat, until the juices have thickened, about 30 minutes.
- Move the hot beans to a nice ceramic dish and serve. Enjoy!

THREADGILL'S PINTO BEANS
This recipe comes from the famous Threadgill's Bar and Grill in Austin. Back in the 50's it was in an old renovated gas station. Now it has moved, but the food is still Texas Country good. I must warn you that it is very spicy. Great with BBQ.

Steps:
- Clean and rinse beans, and pick through carefully.
- Soak overnight in cold water to cover well.
- Drain beans and place all ingredients, except salt into a 4 quart pot and bring to a boil.
- Reduce heat to simmer.
- Cover and cook about 90 minutes, or until beans are tender.
- Add salt to taste and garnish with sliced onion.
