This is not for the timid. Got this recipe while visiting San Antonio, TX. My DH and I love it but we love hot and spicy food

Steps:
- Place beans in a Dutch oven; add water 2 inches above beans.
- Bring to a boil; boil 1 minute; cover, remove from heat and let stand 1 hour; drain.
- Bring beans, 4 1/2 cups water, and next 4 ingredients to a boil in a Dutch oven.
- Cover, reduce heat, and simmer, stirring occasionally, 1 hour and 30 minutes or until tender.
- Add tomato and jalapeno pepper, and simmer mixture for 30 more minutes.

- Gather the ingredients.
- Wash beans and pour into a large saucepan or Dutch oven .
- Add all other ingredients, except the salt .
- Bring to a boil while stirring.
- Reduce heat and allow to simmer for 2 hours, covered.
- Stir occasionally, bringing up the beans from the bottom to prevent burning and so they will cook evenly.
- Add the salt after 1 hour.
- The beans are done when they're soft but still hold their shape.

- Put the beans in a large bowl, cover with cold water and let soak overnight.
- Drain and rinse the beans, then put them in a large pot. Cover the beans with water and add the chili powder, cumin, paprika, cayenne, bacon, garlic, bay leaves, onion, bell pepper and some salt and pepper. Bring to a boil, then reduce the heat to low and cook until the beans are tender, 2 to 3 1/2 hours.
TEXAS STYLE BEANS RECIPE WITH PINTO BEANS
Steps:
- Gather the ingredients.
- In a 2-quart bean pot or casserole, cover pinto beans with 6 cups of water; soak overnight.
- Drain the water from the beans. Cover the beans with 6 cups of fresh water; add salt pork, onion, and garlic to the beans.
- Bring the beans to a simmer and cover. Cook on medium-low heat, covered, for 2 hours.
- Stir in salt, pepper, tomatoes, green pepper, sugar, and hot pepper sauce.

- Place black beans, pinto beans, and kidney beans in a large container and cover with several inches of cool water; let stand for at least 12 hours. Bring beans and water to a boil in a large pot; cook until beans are tender and heated through, 30 minutes. Remove pot from heat to cool and drain beans.
- Cook and stir sausage, beef, onion, bell pepper, and garlic in a large skillet over medium-high heat until meat is browned, 5 to 10 minutes. Drain and discard fat.

SOUTHERN STYLE PINTO BEANS
A southern staple, this is one of those good ol' down home meals. Add a pan of cornbread and it's almost perfection! And if you're in the mood to splurge, fried potatoes are a must. I used to spend all day cooking a pot of beans and watching them carefully so they didn't burn. The crock pot solves that problem.

- Cover beans with water and soak overnight, or 6-8 hours.
- In the morning, drain and rinse the beans, discard soaking water, and put beans in slow cooker. Add remaining ingredients, including chicken broth.
- Cover. Cook on low 10 hours, or on High 5 hours.
- Transfer 2 cups of the bean soup to a food processor or blender and puree. Return puree to the slow-cooker. Heat on High an additional 30 minutes. (This is an easy way to thicken the soup.).
- Serve with cornbread and fried potatoes.
- TO PRE-PREP: Combine 2 teaspoons salt, 1 teaspoon black pepper, 1/2 teaspoon garlic powder, 1/2 teaspoon thyme, 1/2 teaspoon oregano, 1/4 teaspoon cumin, 1/4 teaspoon chili powder, and 1 bay leaf, and store in a plastic storage bag until ready to cook. Having these dry ingredients packaged ahead of time will make seasoning the beans as easy as pouring the seasonings into the slow-cooker along with the beans and chicken broth.
- TO STORE: Bean soups keep well in the refrigerator for up to 3 days or in the freezer for up to three months. The flavors are even better after standing. When reheating, thin with a little water if necessary.
THREADGILL'S PINTO BEANS
This recipe comes from the famous Threadgill's Bar and Grill in Austin. Back in the 50's it was in an old renovated gas station. Now it has moved, but the food is still Texas Country good. I must warn you that it is very spicy. Great with BBQ.

- Soak overnight in cold water to cover well.
- Drain beans and place all ingredients, except salt into a 4 quart pot and bring to a boil.
- Reduce heat to simmer.
- Cover and cook about 90 minutes, or until beans are tender.
- Add salt to taste and garnish with sliced onion.
