Steps:
- Heat 1 to 1 1/2 cups milk in a saucepan over medium-low heat, whisking, until milk is steaming and slightly foamy.
- Divide milk between two cafe au lait bowls or large coffee cups. Divide 2 cups coffee betweenbowls, and stir.
CAFE AU LAIT LUZIANNA
The chicory coffee sets this apart from the usual cafe au lait/latte. You can buy it in larger supermarkets in cans (ground). Brew your favorite way. Prep time does not include brewing time. Add your favorite sweetener, if desired.

- Combine milk and cream in a small saucepan (use one with a pouring lip if possible); bring just to a boil (bubbles will form around edge of pan), then remove from heat.
- Pour small amount of hot, brewed coffee into each coffee cup.
- Pour in remaining coffee and hot milk mixture at same time until cups are full.

NEW ORLEANS STYLE CAFE AU LAIT
"Real, New Orleans-style coffee must be dark roast, brewed strong, and must include chicory. In fact, most of the coffee drunk in the Crescent City is a coffee-and-chicory blend". Some well-known local coffee-and-chicory brands are French Market (my personal favorite), Community Coffee, Cafe du Monde or Union. Steps:
- Bring the water almost to a boil, to a temperature of 204-208 degrees F.
- Using a drip-style coffeemaker with filter, pour a small amount of the water over the coffee grounds to dampen them, then wait 30 seconds.
- Pour more water over the grounds until the upper pot container is full.
- Allow to drain, then repeat until all the water is used.
- Scald, do NOT boil, the milk. This means to heat it until JUST below the boiling point.
- Pour coffee into warmed large mugs, then add the milk.
- Add sweetener if desired and serve.

Literally "coffee with milk", café au lait is a drink made of coffee and scalded milk. It is the staple coffee drink of French Louisiana and is often served in bowls (rather than in cups or mugs) in Acadiana. This enticing 'French Vanilla' version of the famous morning or dessert beverage is richly redolent with the wafting scent of real vanilla. Wonderful! Steps:
- Combine the half-and-half, milk, and sugar in a small heavy-bottomed saucepan.
- Scrape the seeds from the vanilla bean into the milk mixture and add the bean to the saucepan.
- Simmer over low heat for 20 minutes, stirring from time to time. Or, you can heat the milk and vanilla bean over medium heat until hot but not boiling. Remove from heat and let steep for 20 minutes to infuse the flavors. Reheat just before serving.
- Remove the vanilla bean from the milk mixture and whisk for 1 minute, until frothy.
- Fill each mug with 1/2 cup of hot coffee and 1/2 cup milk mixture.
- Serve immediately.
