1/2 cup lightly packed dark brown sugar
One 20-ounce can sliced pineapple, drained and juice reserved
One 20-ounce can crushed pineapple, drained and juice reserved
1 1/3 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon fine salt
1/2 cup whole milk
2 teaspoons pure vanilla extract
1/4 cup reserved pineapple juice (from the cans)
3/4 cup granulated sugar
1/2 cup unrefined coconut oil
1 large egg

Steps:

  • Preheat the oven to 350 degrees F.
  • For the pineapple: In a 10-inch cast-iron skillet over medium heat, melt the butter and add the brown sugar. Cook, stirring constantly, until the sugar melts, about 2 minutes. Remove from the heat and arrange the pineapple slices in the skillet. Fill in the spaces with the crushed pineapple. Set aside.
  • For the cake: Meanwhile, combine the cake ingredients in this fashion: In one bowl, whisk together the flour, baking powder and salt. In bowl number 2, combine the milk, vanilla extract and 1/4 cup of the reserved pineapple juice.
  • In the bowl of a stand mixer fitted with a paddle attachment, combine the granulated sugar and coconut oil on medium speed until thick and creamy, about 3 minutes. Beat in the egg. Add half of the flour mixture and mix on low until just combined. Add the milk mixture and stir until just combined. Add the rest of the flour and mix until combined, about 1 minute.
  • Pour the batter over the pineapple slices in the skillet and spread evenly. Bake until the top is golden brown and a toothpick comes out clean when inserted, 25 to 35 minutes, checking after 20 minutes to make sure the top isn't getting too brown. If it is, cover loosely with aluminum foil.
  • Let cool for 15 minutes. Cover with a cutting board or large plate and invert the cake. Ta daaaaaaa, you are ready to eat!

2 1/2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
2 cups granulated sugar
1 stick unsalted butter, at room temperature
1/4 cup vegetable shortening
1 1/2 cups whole milk
2 large eggs
2 teaspoons vanilla extract
1 20-ounce can sliced pineapple,
2 tablespoons juice reserved (drink the rest!)
1 1/3 cups packed light brown sugar
Maraschino cherries, stemmed (optional)

Steps:

  • Preheat the oven to 350 degrees F. Make the cake batter: Combine the flour, baking powder, salt, granulated sugar, 1/2 stick butter, the shortening, milk, eggs, vanilla and 2 tablespoons pineapple juice in a large bowl. Beat with a mixer on medium speed until well combined. (There will still be a few small lumps in the batter.) Set aside.
  • Melt the remaining 1/2 stick butter in a 12-inch cast-iron skillet over medium heat; swirl to thoroughly coat the skillet. Sprinkle the brown sugar over the butter, making sure it's evenly distributed-you want the entire surface of the butter to be covered in brown sugar. Do not stir. As soon as the sugar dissolves, remove from the heat and layer the pineapple slices over the top. If desired, place maraschino cherries in the centers of the pineapple slices.
  • Pour the batter evenly over the pineapple slices and gently spread to even out the top. Bake the cake 30 to 40 minutes, or until a toothpick inserted into the center comes out clean.
  • Immediately run a knife around the edge of the cake, then put a plate upside down on top of the skillet. Carefully invert the skillet so the cake is turned onto the plate. It should come out pretty easily; if bits of cake stick to the skillet, use a small knife to patch it together. Let cool slightly before cutting into wedges. It's best served warm.

3/4 c packed brown sugar
1/4 c butter
1 can(s) drained pineapple rings - you will need at least 7 rings - reserve 1/4 cup juice
1/4 - 1/2 c chopped pecans
7 - 8 maraschino cherries - drained
1 3/4 c flour
1 1/2 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1/2 c butter, softened - unsalted
3/4 c sugar
2 large eggs
1 1/2 tsp vanilla extract
1/4 c each - buttermilk and pineapple juice

Steps:

  • 1. In a 9 - 10 inch cast iron skillet, melt 1/4 cup butter over medium heat. Stir in the brown sugar until it's all wet with butter. Place a pineapple ring in the center, then remaining rings evenly around center one. Place a cherry in the center of each ring. Fill in any bare spots with pecans.
  • 2. Preheat oven ton350 degree F. In a medium bowl, beat 1/2 cup butter with the sugar until fluffy. Add eggs one at a time, beating well after each. Beat in the vanilla.
  • 3. Sift together, flour, salt baking powder and cinnamon.
  • 4. In a glass measuring cup, add the milk and pineapple juice. Start beating in the flour mixture alternating with the milk/ pineapple mixture, until all is incorporated. Carefully, spread batter evenly over pineapples. Place in preheated oven and bake for 45 minutes or until puck comes out clean.
  • 5. Cool for 10 minutes, then with a thin, sharp knife, run around the inside edge of cake. Invert onto a plate and remove skillet.
  • 6. Cool, slice and enjoy!!

By substituting pecans (or other nuts) for the usual maraschino cherries, this twist on a classic upside-down cake is less sweet and crunchier than the usual recipe. Caramelizing the brown sugar in a skillet before adding the fruit gives you a particularly deep, complex flavor. Because of the moisture in the topping, you'll need to bake this cake a little longer than other, similar butter cakes. Underbaked cake will be soggy and apt to fall apart, but an ideal result will have a well-browned surface and dark, slightly crunchy edges.

1 1/2 to 2 1/2 teaspoons freshly squeezed lemon juice (see Tip)

1 pound peeled pineapple, cut into 1/2-inch slices (3 cups; see Tip)
1/2 cup coarsely chopped pecans
1/2 cup unsalted butter, melted and cooled, plus more for greasing
1 cup/200 grams granulated sugar
1 tablespoon vanilla extract
1 teaspoon finely grated lemon zest
2 large eggs, at room temperature
1/2 cup/118 milliliters sour cream or plain whole-milk yogurt
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
3/4 teaspoon fine sea salt
1 1/2 cups/195 grams all-purpose flour

Steps:

  • Heat oven to 350 degrees.
  • Make the topping: In an oven-safe 10-inch skillet, melt butter over medium heat. Add the brown sugar, lemon juice and salt, and whisk until the brown sugar melts, 1 to 2 minutes.
  • Let cook, whisking constantly, until the mixture starts to smell like caramel and darkens slightly, about 1 minute longer. (Don't walk away or the mixture may burn.) The mixture will clump and separate, but that's OK.

The mixture will be lumpy, but that's OK. Don't overmix. Scrape batter into the skillet over the fruit and spread evenly.
  • Bake until surface is deeply browned all over (with darker brown edges) and the fruit is lightly bubbling along the sides of the skillet, about 35 to 45 minutes, rotating halfway through. A toothpick inserted into cake will come out clean.
  • Once the cake is out of the oven, immediately run a butter knife or offset spatula along the edge of the skillet. Let sit for 10 to 15 minutes to cool slightly. Carefully invert cake into serving platter. If some fruit or nuts stick to bottom of the skillet, gently remove them using offset spatula or knife and place back onto cake. Let cake cool until the fruit topping sets, at least 30 minutes to 1 hour, before serving. Cake is best served on the day it is baked.

50g light soft brown sugar
7 pineapple rings in syrup, drained and syrup reserved
7 glacé cherries
100g softened butter
100g golden caster sugar
100g self-raising flour
1 tsp baking powder
1 tsp vanilla extract
2 eggs

Steps:

  • Heat oven to 180C/160C fan/gas 4.
  • For the topping, beat 50g softened butter and 50g light soft brown sugar together until creamy. Spread over the base and a quarter of the way up the sides of a 20cm round cake tin. Arrange 7 pineapple rings on top (reserving the syrup for later), then place 7 glacé cherries in the centres of the rings.
  • Place 100g softened butter, 100g golden caster sugar, 100g self-raising flour, 1 tsp baking powder, 1 tsp vanilla extract and 2 eggs in a bowl along with 2 tbsp of the reserved pineapple syrup. Using an electric whisk, beat to a soft consistency.
  • Spoon into the tin on top of the pineapple and smooth it out so it's level. Bake for 35 mins. Leave to stand for 5 mins, then turn out onto a plate. Serve warm with a scoop of ice cream.

1/2 cup brown sugar
3 tablespoons butter
1 fresh pineapple, Peeled, Cored & Sliced
1/4 teaspoon ground ginger
2 tablespoons pecans, Chopped
1 cup flour
1 teaspoon baking powder
4 eggs, Separated
1 cup sugar
1 teaspoon vanilla
2 teaspoons rum

Steps:

  • Preheat oven to 350°F.
  • Place brown sugar and 2 tablespoons of butter in the bottom of a 9- or 10-inch casserole dish. Place in the oven, allowing mixture to melt. Take out of the oven and stir to incorporate both ingredients.
  • Lie pineapple slices in one layer along the bottom, going up the sides of the dish as well. Sprinkle chopped pecans in the center holes and spaces left open by the pineapple slices. Sprinkle with ginger.
  • In a bowl, sift together flour and baking powder. Sift sugar into another bowl.
  • In a separate bowl, beat egg yolks, vanilla and 1 tablespoon melted butter. In yet another bowl, beat egg whites until stiff but not dry.
  • Gently fold sugar into the egg whites, one tablespoon at a time. Then fold in the yolk mixture, and then the flour mixture 1/4 cup at a time.
  • Pour the batter over the pineapple slices and bake for 30-45 minutes. Test center with a toothpic to be sure it is done.
  • Immediately after taking out of the oven, turn over onto a serving platter, and wait a moment to allow the brown sugar syrup to run over the entire cake.
  • Sprinkle the top of the cake with rum or brandy.
  • You can serve this with whipped cream or dessert sauce, but it is great by itself. Enjoy!

1 (18 ounce) box devil's food cake mix, with pudding in the mix
1 teaspoon almond extract
2 eggs
1/3 cup vegetable oil
1 (20 ounce) can cherry pie filling (I use the extra fruit kind)
1 (20 ounce) can pineapple slices, drained and dried
1 cup chopped pecans
6 maraschino cherries

Steps:

  • Grease and flour a bundt pan. Lay pineapple slices in bottom of pan (mine held six slices), then put a maraschino cherry in the middle of each slice.
  • Roughly chop the remaining pineapple slices.
  • Combine cake mix, extract, eggs and vegetable oil with mixer, until all cake mix is somewhat moist. Fold in, by hand, the pie filling, chopped pineapple and pecans.
  • Spoon batter evenly over the pineapple slices in bundt pan. Bake at 350F for 40-50 minutes or until toothpick inserted in middle comes out clean.
  • Let cool slightly in pan then invert cake onto a platter.

Add dry ingredients alternately with sour cream in 2 additions each, beating well after each addition. Pour cake batter over caramel and pineapple in pan.
  • Bake cake until tester inserted into the center comes out clean, about 1 hour to 1 hour 15 minutes. Cool cake in pan on a rack for 10 minutes. Turn cake out onto a platter. Serve warm or at room temperature.

I got this recipe from the Betty Crocker Cake Mix recipe book (the one's that are displayed at the check out counter at grocery store!) I'm not much for baking...but proud to say this was delicious!

1/4 cup butter
1 cup packed brown sugar
15 maraschino cherries
15 peaches, halves drained
1 (8 ounce) can crushed pineapple, drained, juice reserved
1 (18 ounce) box yellow cake mix
1/3 cup vegetable oil
3 eggs

Steps:

  • Heat oven to 325 degrees.
  • In a 13X9 inch pan, melt butter in oven.
  • Sprinkle brown sugar evenly over butter.
  • Place maraschino cherry in center of each peach half; place cut side down on the brown sugar (cherries will be on the bottom).
  • Spoon pineapple around peaches.
  • Add enough water to reserved pineapple juice to measure 1 1/4 cups (I used pineapple juice and fruit juice out of the peach cans!).
  • In a large bowl, beat cake mix, juice mixture, oil and eggs with electric mixer on low speed 30 seconds. Beat on med speed 2 minutes, scraping bowl occasionally. Pour batter over peaches and pineapple.
  • Bake 1 hour or until toothpick inserted in center of cake comes out clean and top is VERY DARK GOLDEN BROWN.
  • Immediately run knife around side of pan to loosen cake. Place heatproof serving plate upside down on pan; turn pan and plate over. Leave pan over cake 1 minute so topping can drizzle over cake.
  • Cool 30 minutes. Serve warm or cool.

1/4 cup butter
1/2 cup brown sugar
8 canned pineapple slices, drained well
5 maraschino cherries, halves
1 1/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/3 cup shortening or 1/3 cup butter
2/3 cup sugar
1 egg
1 teaspoon vanilla essence
1/2 cup orange juice

Steps:

  • Topping: Melt butter in a small skillet on direct heat.
  • Add brown sugar and stir until well blended and bubbly.
  • Pour into a 9" square baking dish, spreading to cover the bottom.
  • (Alternately, microwave butter and brown sugar in a 9" square glass baking dish till well blended and bubbly).
  • Arrange pineapple spears and maraschino cherry halves on top of the brown sugar in a sun-burst pattern.
  • Chill in refrigerator while preparing batter.
  • Batter: Sift together flour, salt and baking powder.
  • Cream shortening/butter and sugar in a mixing bowl until light and fluffy.
  • Add egg and vanilla and beat until smooth.
  • At low speed, and in alternate additions, add in the flour and orange juice, beginning and ending with the flour mixture.
  • Beat only until smooth.
  • Remove cake pan from the refrigerator and spread batter over topping.
  • Bake at 325 degrees for 40 minutes.
  • Remove from oven, let stand for 5-10 minutes.
  • Invert on a plate and serve warm.

  • Stir together over low heat until the butter is melted. Remove from heat and let stand until ready to use.
  • Place the four pineapple rings on a saucer and let drain for a few minutes. Reserve the pineapple juice in the can. Return any of the drained juice on the saucer to the can.
  • Grease only the side of a 9-inch round cake pan and dust the side of the pan with flour. Spread the brown sugar mixture evenly over the bottom of the cake pan. Cut the pineapple rings in half and arrange neatly over the brown sugar mixture. Add the cherries and pecan halves in an orderly pattern around the pineapple. Set aside while preparing the batter.
