- In a large serving bowl, combine the pineapple, oranges, strawberries and grapes. Combine wine or grape juice and club soda; pour over fruit. Cover and refrigerate for at least 2 hours, stirring occasionally. Serve with a slotted spoon.

Steps:
- Prepare topping with milk and vanilla according to package directions on box and chill.
- Cream together cream cheese and sugar.
- Add pineapple and nuts.
- Fold in whipped topping then fold in strawberries.
- Chill 3 hours.
- Garnish with whole strawberrys.
PAN-SEARED GROUPER WITH SPRING PINEAPPLE AND STRAWBERRY SALAD
Steps:
- Place fish, Cajun spice, lime juice and cilantro in mixing bowl and allow ingredients to marinate for 30 minutes in the refrigerator. Place flour on a cookie sheet, seasoning the flour with 1 teaspoon of Cajun spice and salt/pepper. Roll fish in flout creating a nice even coat. Shake off excess flour. Warm olive oil over medium heat in a non-stick pan. Once oil is hot, place fish side down for 3 minutes, flip fish and complete the same process. Remove fish from oil, placing on a rack to remove excess oil. Place fish on plate and garnish with salad.
- In a large mixing bowl mix all ingredients together. Place in refrigerator for 30 minutes. Toss with mixed greens. Serve alongside fish or any spring time poultry.
MOLDED STRAWBERRY SALAD

- In a large bowl, dissolve gelatin in water. Add strawberries and pineapple. Strain, reserving liquid and fruit. Set aside 1 cup of the liquid at room temperature. , Pour fruit and remaining liquid into a 5-cup ring mold or 9-in. square pan that has been coated with cooking spray. Cover and refrigerate until set, about 1 hour. , Whisk sour cream and reserved liquid; pour over top of gelatin. STRAWBERRY/PINEAPPLE PRETZEL SALAD (PAULA DEEN/FOOD NETWORK)
I used to make this salad all the time and so did my mom. However, I tried it using Paula's "extra special ingredient", crushed pineapples, and oh boy it was great. It's amazing that one little change can make a huge difference. ENJOY! If you crave things that have that salty/sweet combo, then this is for you!

- Preheat oven to 400°.
- For the crust, mix the pretzels, butter, and 3 tablespoons of sugar.
- Press this mixture into a 9 by 13-inch pan and bake for 7 minutes.
- Set aside and allow to cool.
- In a mixing bowl, beat together the cream cheese and 3/4 cup of sugar.
- Fold in the whipped topping, and spread over the cooled crust.
- Refrigerate until well chilled.
- In a small bowl, dissolve the gelatin in the boiling water, and allow to cool slightly.
- Add the strawberries and pineapple, and pour over the cream cheese mixture.
- Refrigerate until serving time.
- To serve, cut slices and serve with a dollop of whipped topping.

Poppyseed Dressing: 1/4 cup white sugar 1 teaspoon stevia sweetener (or two additional tablespoons sugar) 1/2 cup apple cider vinegar or white balsamic vinegar 1/8 cup orange juice 1 teaspoon salt 2 teaspoons Dijon mustard 1 teaspoon minced onion 1 cup vegetable oil or canola oil 1 tablespoon poppy seedsIn a blender or food processor, combine the sugar, stevia, vinegar, orange juice, salt, mustard, and onion, and process for 20 seconds. With the blender on high, gradually add the oil in a slow, steady stream. Remove from the blender and stir in the poppy seeds. Set aside or refrigerate until ready to use. - Chill until mixture is the consistency of unbeaten egg white.
- Fold strawberries, pineapple and banana into gelatin mixture.
